¾ cup butter
½ cup white sugar
½ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon peppermint extract
1 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
¼ teaspoon salt
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together butter, white sugar, and brown sugar until light and fluffy. Beat in egg, then stir in vanilla and peppermint extracts. Combine flour, cocoa powder, baking soda, and salt; gradually stir into the creamed mixture. Mix in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on cookie sheets for 5 minutes before transferring to a wire rack to cool completely.

1 cup white sugar

2 teaspoons vanilla extract

½ teaspoon cream of tartar
2 cups semisweet chocolate chips
10 drops green food coloring, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine butter, white sugar, and brown sugar in a large bowl; beat with an electric mixer until creamy. Beat in eggs. Stir in vanilla extract and peppermint extract. Dissolve baking soda in hot water and mix into the batter.

1/2 cup shortening, at room temp
3/4 cup white sugar
3/4 cup light brown sugar
2 large eggs
1/2 teaspoon vanilla
1 teaspoon almond extract
1 teaspoon baking soda
3/4 teaspoon salt
2 1/2 cups flour
1 1/2 cups semi-sweet chocolate chips
1 cup crushed candy cane, measure after crushing

Steps:

  • Preheat oven to 350.
  • Beat together the butter, shortening, white sugar, and brown sugar.
  • Beat in the eggs, vanilla and almond extract.
  • Combine the baking soda, salt and flour in a small bowl. Gradually beat this mixture into the creamed mixture.
  • Beat well.

10 drops green food coloring
1 teaspoon peppermint extract

½ teaspoon kosher salt
1 (12 ounce) bag dark chocolate chips

Steps:

  • Beat sugar and butter in a large bowl with an electric mixer until light and fluffy. Beat in eggs, egg yolk, green food coloring, and peppermint extract until smooth.

1/2 cup butter, softened
1/2 cup sugar
1/4 cup light brown sugar
1/2 teaspoon vanilla
1 egg

1 cup white chocolate chips (about 1/2 a 12 oz. Bag)
1/2 cup candy cane, crushed (about 50 of the little ones)

Steps:

  • Cream butter until light. Gradually add sugars, creaming well until blended. Beat in vanilla and egg.

  • Stir in chips and crushed candy canes.

This is a large batch of cookies, I typically bake off half of them, form the rest of the dough into cookie-sized balls, and place them in freezer bag for later use. Purchase good peppermint bark - it's worth it. In the past I admit I've attempted to cut corners (be forewarned)

3 1/2 cups unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon aluminum-free baking powder
3/4 teaspoon fine-grain sea salt
1 cup unsalted butter, at room temperature
2 cups sugar
3 large eggs
1 tablespoon vanilla extract
2 cups peppermint bark, roughly chopped
1/2 cup chocolate chips or 1/2 cup chocolate shavings

Steps:

  • Preheat the oven to 375F degrees. Position the racks in the middle of the oven, and line baking sheets with parchment paper or Silpats.
  • Whisk together the flour, baking soda, baking powder, and salt in a bowl. Set aside.
  • In a large bowl or stand mixer, beat the butter until light and fluffy, then beat in the sugar until it is the consistency of a thick frosting. beat in the eggs one at a time, incorporating each fully before adding the next and scraping down the sides of the bowl a few times. Stir in the vanilla until evenly incorporated. Add the dry ingredients in 3 increments, stirring between each addition. At this point you should have a moist uniform dough. Stir in the peppermint bark and chocolate chips by hand, mixing only until evenly distributed. Reserve a bit of the bark to sprinkle on top of the cookies after you have dropped them onto the baking sheets.
  • Drop a heaping tablespoon of dough for each cookie onto the prepared baking sheets 2 inches apart and bake for about 10 - 14 minutes, until golden on bottom and top. Cool on wire racks.

Wow, chocolate chip cookies get a holiday makeover in this recipe. Sweet and crunchy, these chocolate chip cookies have everything you want in a cookie. Using Andes creme de menthe chips and peppermint oil amps up the minty flavor. They taste like the holidays! Try to eat these while they're still warm ... so good!

1/2 c butter, room temperature
1/2 c cane sugar
1/2 c brown sugar
1 egg, room temperature
1 tsp vanilla
1 1/4 c all-purpose flour
1 Tbsp cornstarch
1/2 tsp baking soda
1/2 tsp salt
3/4 c chocolate chips
3/4 c Andes creme de menthe chips
4 to 5 peppermint oil drops (or to taste)
1 c mixed toasted pecans, sliced almonds and chopped walnuts

Steps:

  • 1. Cream together butter and sugar.
  • 2. Add egg, vanilla, and peppermint oil and blend.
  • 3. In a separate bowl combine flour, cornstarch, soda, and salt.
  • 4. Sift and add to creamed mixture.
  • 5. Stir until blended.
  • 6. Stir in chips and nuts.
  • 7. Make balls of dough using 2 Tbsp size cookie scoop. Roll each in hand to ball shape and place all on one cookie sheet.
  • 8. Cover with plastic wrap and chill for at least one hour.
  • 9. (At this point chilled cookies can be placed in plastic freezer bag and freeze. Thaw 20 minutes before baking.)
  • 10. Placed chilled dough balls 2 inches apart on baking sheet.
  • 11. Bake 15 to 18 minutes at 325 degrees or until browned and a bit crispy around the edges
  • 12. Sometimes I add crushed up hard peppermint candies instead of adding the oil. Just crush and measure with the nuts.

1 pinch salt
2 cups flour

Steps:

  • Heat the oven to 375°F.
  • Add butter, oil, and sugar into 1 large bowl. Use electric mixer and mix untill fairly blended.
  • Add eggs 1 at a time, mixing after adding each egg.
  • Next add peppermint extract, and blend (for this you don't need electric mixer) untill smooth.
  • Dump in the cocoa powder, baking soda, salt and 1 1/2 cup of the flour (do not mix in one at a time). Mix together, once well combined, add the chocolate chips.
  • If the mixture is too goey add the other 1/2 cup of flour.
  • Spoon small spoon-fulls onto greased cookie sheet.

  • Freeze mints, then crush into small chunks. place back into freezer.
