1/4 cup honey
2 teaspoons freshly ground black pepper
1 teaspoon salt
1/4 teaspoon ground allspice
8 oz pecan halves (2 cups)
2 tablespoons sugar

Steps:

  • Preheat oven to 350°F.
  • Stir together honey, pepper, salt, and allspice and add pecans, tossing to coat well. Spread pecans in 1 layer in a shallow (1-inch-deep) baking pan and sprinkle with sugar. Bake in middle of oven 15 minutes, then stir pecans and bake 5 minutes more. Transfer to a sheet of wax or parchment paper to cool and, working quickly, separate pecans with a fork while still warm. Serve at room temperature.

I like this roasted nut recipe because it doesn't use any added oil or butter - my husband likes this because it's nice and spicy! These have become a Thanksgiving tradition at our house, and make a tasty (albeit unusual) addition to salads, especially with the Maple Balsamic Vinaigrette from this site.

1 teaspoon finely ground black pepper
1 teaspoon ground white pepper
1 teaspoon ground cayenne pepper
½ teaspoon ground paprika
½ teaspoon ground dried thyme
2 egg whites
1 tablespoon Worcestershire sauce
1 teaspoon hot pepper sauce (such as Tabasco®)
⅛ teaspoon liquid smoke flavoring
1 pound pecan halves

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Spray a large heavy roasting pan with cooking spray.
  • Mix black pepper, white pepper, cayenne pepper, paprika, and dried thyme in a small bowl. Set aside.
  • Whisk egg whites in a large bowl until foamy. Add Worcestershire, hot sauce, and liquid smoke flavoring and whisk to mix. Drop in pecans and stir to coat well. Pour coated pecans into a colander to drain off extra egg white mixture; return to bowl and add the pepper mixture. Stir well to coat each pecan with spices.
  • Spread pecans in prepared roasting pan. Roast in preheated oven for 5 minutes and stir pecans; roast an additional 5 minutes and stir again. Turn off heat and roast pecans an additional 5 to 10 minutes until pecans are lightly browned and fragrant. Let cool and serve at room temperature.

Maple & Orange Chicken With Peppered Pecans image

This is lovely - sweet, sticky, juicy chicken, with the peppery bite of the pecans - and it smells heavenly when it's cooking. I like to serve this with soothing mashed potatoes and buttered greens. Prep time doesn't include marinading.

2 boneless chicken breasts
2 oranges, juice of, only
1 teaspoon English mustard
6 tablespoons maple syrup
1 garlic clove, crushed
1 teaspoon sunflower oil
1 teaspoon white wine vinegar
1/2 teaspoon Tabasco sauce
1/2 teaspoon hot pepper flakes
1 garlic clove
1 1/2 tablespoons butter
4 ounces pecan halves

Steps:

  • Mix orange juice, mustard, garlic, maple syrup, sunflower oil and vinegar in a bowl. Marinade chicken for at least 4 hours, but overnight is even better.
  • For the pecans, melt the butter, and stir in tabasco, pepper flakes and garlic. Stir in the pecans. Spread onto a flat baking sheet and bake on a really low temp - approx 120C for an hour. Be careful that the pecans don't burn though.
  • After marinading, remove the chicken and pour marinade into a small pan, bring to the boil, stirring until the marinade reduces to a sticky glaze. The oil will stop the Maple syrup from burning.
  • Grill or barbecue the chicken breasts, turning and brushing with the glaze regularly until the chicken is cooked but still juicy.
  • Serve the chicken with the remaining glaze as a sauce, along with the peppered pecans and whatever else takes your fancy.

3 c pecan halves
1/2 tsp garlic powder
1 1/2 tsp hot pepper sauce
1/2 tsp seasoned salt (Lawry's)

Steps:

  • Preheat oven to 250. Place butter in microwavable 2-cup glass container, and cover with paper towel. Microwave high 1 min to melt. Place pecans in single layer on 9 x 13 baking dish. Remove butter from microwave and stir in rest of ingredients. Drizzle over pecans and stir to coat. Bake uncovered, stirring every 20 min, for 1 hour, until pecans are crisp. Remove and cool. Store in airtight containers or zip-lock bags at room temperature for up to one month
