This is a tasty snack that even your kids can prepare. I am guessing on measurements. Basically, slice off bite sized pieces of pepper jack cheese and melt on Triscuit crackers.

20 Nabisco Triscuits
3 -4 ounces monterey jack pepper cheese

Steps:

  • Slice pepper jack cheese into 20 bite-sized pieces that will fit on top of each Triscuit.
  • Place Triscuits on microwaveable plate. Place slice of cheese on top of each Triscuit. Place plate in microwave and heat for 20 seconds or until cheese melts.
  • Enjoy.

This recipe is an old family favorite that I got from my aunt (who got it from the Houston Chronicle. It is another quick and easy one that is always popular at holiday gatherings, these little rolls look great laid out on a platter and disappear quickly. Just spicy enough to be flavorful, mild enough that the kids enjoy them.

8 ounces cream cheese
1/2 cup cheddar cheese, shredded
2 tablespoons green chilies, chopped
2 tablespoons black olives, chopped
1 teaspoon onion, minced
5 drops Tabasco sauce
8 ounces refrigerated crescent dinner rolls

Steps:

  • In a large bowl, mix all ingredients except for the crescent rolls.
  • Pull crescent rolls apart into 4 rectangles (instead of the usual 8 triangles, just press the seam together to seal it so that it won't come apart when you bake it).
  • Spread 1/4 of the mixture onto each rectangle.
  • Roll up each rectangle (must be rolled the long way) and slice it into 10 slices.
  • Spray a cookie sheet with Pam (or other spray) and lay out the slices like cookies.
  • Bake at 400 degrees for 10-12 minutes.

A quick snack or appetizer with items I always have on hand. Sometimes I top these with a sprinkle of paprika for some color.

15 Triscuit crackers (I use reduced-fat)
1/2 tablespoon olive oil
1/2 tablespoon garlic powder
15 slices parmesan cheese

Steps:

  • Preheat broiler to 400°.
  • Place Triscuit crackers on a baking sheet. Whisk olive oil and garlic powder together*; brush onto each Triscuit.
  • Top each with a slice of parmesan.
  • Broil for 5 minutes, until cheese bubbles.
  • *I have an olive oil mister, so I sometimes quickly spray the Triscuits with olive oil and then sprinkle with garlic. Other spices would be great too :).
