{BAKED} PEPPER JACK CHEESE DIP
{Baked} Pepper Jack Cheese Dip is an easy and yummy appetizer that goes great with soft pretzels, or is good as a fish taco topping!

Steps:
- Preheat oven to 375 degrees
- Melt the butter in a heavy sauce pan
- Add the flour, and whisk to combine
- Let the flour cook for 1 minute
- Slowly whisk in the milk and continue whisking until milk thickens
- Add cheeses and continue to whisk until cheeses are melted and sauce is smooth
- Place into a baking dish and bake for about 15 minutes, or until the top beings to brown
- Enjoy with soft pretzels, chips, or fish tacos

- Toss the shredded cheese with the cornstarch; set aside.
- Place the butter in a medium saucepan over medium heat; add the onion, pepper, cumin, and salt, and cook, stirring occasionally, until the onions start to soften and become translucent, about 4 minutes.
- Add the garlic and cook for 1 minute more. Add the milk and bring to a simmer.
- A handful at a time, add the cheese to the saucepan, stirring after each addition until melted. Let the queso simmer for 2 to 3 minutes. Taste the dip (caution-it's hot!) and adjust for seasoning (be careful with salt because tortilla chips are usually already pretty salty).
- Transfer the queso to a bowl. Top with some cilantro and serve with tortilla chips for dipping.

- In a medium saucepan, melt butter on medium heat. Be sure not to let it get brown! Shred your Pepperjack cheese while you're waiting for it to melt (if applicable).
- Once butter is mostly melted, add the package of cream cheese. It's easiest to cut it into 4 pieces so that it melts quicker.
- Once butter and cream cheese are mixed well together, add the cup of milk, Pepperjack cheese, garlic powder, and then shake pepper, Italian seasoning, and basil on top. Stir all together until well mixed.
- Put it on low heat and stir regularly. If you're going to be serving this dish with chicken, put the chicken in the sauce and stir it inches.
