Steps:
- Bring a large pot of water to boil.
- Add 1 T. salt and penne.
- Cook until barely tender to the bite.
- Drain; set aside.
- In the same pot, heat olive oil over high heat.
- Add mushrooms and remaining teaspoons salt and cook, stirring constantly, until mushrooms stop giving off liquid and start to brown, about 10 minutes.
- Turn heat to medium-high and add garlic.
- Cook, stirring, until fragrant, about 2 minutes.
- Stir in chicken broth and penne and cook until broth is absorbed.
- Stir in cheese until melted and coating the pasta.
- Take off heat and stir in mint.
- Serve immediately, topped with prosciutto and pepper.

This recipe comes from a little book called ABC Jiffy Cookery. I've had it for over 50 years. I haven't tried any of the recipes yet. I'm putting them on here so I can find them easier.

Steps:
- Slice mushrooms and saute in 2 Tblsp. butter 2 minutes. Line bottom of a greased casserole with 1/3 of crumbs, add a layer of sliced mushrooms and dot with 1 Tblsp. butter; add another layer of crumbs, then oysters, remaining sliced mushrooms and a final layer of crumbs.
- Pour milk, cream and remaining 5 Tblsp. melted butter over top. Bake in 350* oven 25 minutes.
