I finally had my first taste of black bean brownies and was hooked. This recipe was given to my by my doctor and she said they got it from the Farmer's Almanac 2016. So, I don't know if they tweaked anything or not but here it is. Now, these are more cake like brownies but incredibly yummy considering that they are made of beans. Since then, I've tried another recipe that I really enjoy as well.

Number Of Ingredients 9

1 can(s) black beans, canned, drained & rinsed off
3 large eggs
1/4 cup(s) cocoa, unsweetened
3/4 cup(s) sugar
3 tablespoon(s) vegetable oil
1/2 teaspoon(s) baking powder
- pinch of salt
1/2 cup(s) dark chocolate chips
1/2 cup(s) chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees and grease and 8 by 8 inch pan. Put the first 7 ingredients into a blender or food processor and blend till smooth.
  • Transfer to a bowl and stir in the chocolate chips & walnuts.
  • Pour into your pan & bake 35 to 40 minutes or till a tooth pick inserted comes out clean.
  • Let cool in the pan and then slice. Add a little powdered sugar on top if desired. These are a really gooey brownies.

1 (15.5 ounce) can black beans, rinsed and drained
3 eggs
3 tablespoons vegetable oil
¼ cup cocoa powder
1 pinch salt
1 teaspoon vanilla extract
¾ cup white sugar
1 teaspoon instant coffee
½ cup milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
  • Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
  • Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

1 can (15 ounces) black beans, rinsed and drained
1/2 cup semisweet chocolate chips, divided
3 tablespoons canola oil
3 large eggs, room temperature
2/3 cup packed brown sugar
1/2 cup baking cocoa
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/8 teaspoon salt

Steps:

  • Place the beans, 1/4 cup chocolate chips and oil in a food processor; cover and process until blended. Add eggs, brown sugar, cocoa, vanilla, baking powder and salt; cover and process until smooth., Transfer to a parchment-lined 8-in. square baking pan. Sprinkle with remaining chocolate chips. Bake at 350° for 20-25 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack. Cut into bars.

1/2 cup (1 stick) unsalted butter, plus more for pan
1 cup all-purpose flour, (spooned and leveled)
1/4 teaspoon baking powder
1/8 teaspoon salt
2 ounces unsweetened chocolate, coarsely chopped
1 ounce semisweet chocolate, coarsely chopped
1 cup packed dark-brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup pecans, coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch-square baking pan. Line bottom with parchment paper, leaving an overhang on two sides. Butter paper; set pan aside. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  • Place butter and chocolates in a large heatproof bowl set over (not in) a saucepan of simmering water. Heat until smooth, 2 to 3 minutes, stirring occasionally. Remove from heat, and stir in sugars, eggs, vanilla, flour mixture, and half of pecans. Transfer batter to prepared pan; smooth top. Sprinkle with remaining pecans.
  • Bake until a toothpick inserted in center comes out clean, 30 to 35 minutes. Set pan on a wire rack; let cool completely. Using paper overhang, lift brownie onto a cutting board; cut into 16 squares.
