Had it at my daughter's and this is the recipe she gave me. I haven't made it yet so there's no tweaking going on here. Ten minutes to make if you have cooked rice on hand.

3 cups cooked rice
3/4 lb monterey jack cheese
3 cups sour cream
2 (4 ounce) cans peeled green chilies, chopped
1/2 cup cheddar cheese, grated
butter
salt & pepper

Steps:

  • Cut Monterey Jack into strips. Mix sour cream and chilies. Butter 1 1/2 quart casserole well. Season rice with salt and pepper.
  • Layer 1/2 the rice, sour cream mixture, and monterey cheese strips in that order. Finish off with the other half of rice on top. Bake at 350 degrees for 30 minutes. During last minute, sprinkle with Cheddar cheese and allow it to melt.

1 lb ground beef
1 onion, chopped fine
1 garlic clove, minced
1/4 teaspoon oregano
2 tablespoons chili powder
1 (10 ounce) bag corn chips
2 ounces cheddar cheese (grated)
1 (15 ounce) can tomato sauce
15 ounces kidney beans or 15 ounces chili beans, with liquid

Steps:

  • Brown ground beef, onion and garlic.
  • Stir in tomato sauce, oregano and chili powder.
  • Grease a 1 ½ qt casserole.
  • Alternate layers of beans, meat mixture and corn chips; end with corn chips.
  • Bake covered at 350°F for 45 minutes. Uncover and bake 15 minutes.
  • Before serving garnish with shredded lettuce, chopped tomatoes and grated cheese.
