This recipe for pecan tassies was handed down to me by a great friend of mine.

1 cup all-purpose flour
½ cup butter, softened
3 ounces cream cheese, softened
¾ cup brown sugar
½ cup chopped pecans
1 egg
1 tablespoon butter, softened
1 teaspoon vanilla extract
1 dash salt

Steps:

  • Combine flour, butter, and cream cheese in a bowl. Cover and chill in the refrigerator for 1 hour.
  • Roll chilled dough into 24 balls and press into the cups of a mini muffin tin to make pastry shells.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Mix brown sugar, pecans, egg, butter, vanilla extract, and salt together in a bowl. Spoon 1/2 to 3/4 teaspoon filling into each pastry shell.
  • Bake in the preheated oven until golden brown, about 25 minutes.

I learned this recipe from a childhood friend whose mother made these for family parties and get-togethers. They are a great Christmas or special occasion cookie. My Mother makes hers with walnuts, I prefer pecans for a mini pecan pie taste.

1 cup butter, softened
2 (3 ounce) packages cream cheese
½ cup white sugar
2 cups all-purpose flour
2 teaspoons butter, melted
2 eggs
½ teaspoon vanilla extract
2 cups chopped pecans
1 ½ cups brown sugar
½ cup honey

Steps:

  • In a medium bowl, mix together the butter, cream cheese and sugar until smooth. Stir in the flour and mix thoroughly. The dough should be somewhat firm. Roll into 36 small balls, place them on a plate and refrigerate for one hour.
  • Make the filling in a medium bowl. Beat the eggs, melted butter, vanilla and brown sugar until smooth and well blended. Stir in the nuts. Preheat oven to 375 degrees F (190 degrees C). Press the chilled dough balls into the bottom and up the sides of tart pans or mini muffin cups. Fill each shell with filling almost to the top. Use a squeeze top honey container if you have one, to drip about 1/2 teaspoon of honey onto the top of each cup.
  • Bake for 15 to 20 minutes in the preheated oven, until crust is lightly browned. Allow to cool in the tins completely before removing.

1 sheet frozen puff pastry, thawed
6 ounces cream cheese, softened
2 tablespoons honey
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup (1 ounce) crumbled fresh goat cheese
3 tablespoons crumbled crisp pancetta or crumbled cooked bacon
3 tablespoons finely chopped peeled ripe pear
2 tablespoons finely chopped pecans, toasted

Steps:

  • Preheat oven to 400°. On a lightly floured surface, unfold pastry dough. Using a 1-3/4-in. round cookie cutter, cut dough into 24 circles. Transfer to parchment-lined baking sheets. Bake until golden brown, 10-12 minutes. Cool completely on a wire rack. , Meanwhile, beat cream cheese, honey, salt and pepper until well blended. Fold in goat cheese, pancetta, pear and pecans., Halve each cooled pastry. Spoon cream cheese mixture over bottom pastry halves; cover with top halves. Serve at room temperature.

1/2 cup butter, softened
3 ounces cream cheese, softened
1 cup all-purpose flour
FILLING:
1 large egg, room temperature
3/4 cup packed brown sugar
1 tablespoon butter, softened
1 teaspoon vanilla extract
Dash salt
2/3 cup finely chopped pecans, divided

Steps:

  • In a small bowl, beat butter and cream cheese until smooth; gradually beat in flour. Refrigerate, covered, 1 hour or until firm enough to roll., Preheat oven to 375°. Shape dough into 1-in. balls; press evenly onto bottoms and up sides of greased mini muffin cups., For filling, in a small bowl, mix egg, brown sugar, butter, vanilla and salt until blended. Stir in 1/3 cup pecans; spoon into pastries. Sprinkle with remaining pecans., Bake 15-20 minutes or until edges are golden and filling is puffed. Cool in pans 2 minutes. Remove to wire racks to cool. Freeze option: Freeze cooled cookies, layered between waxed paper, in freezer containers. To use, thaw in covered containers.

If you love Pecan Pie but hesitate to indulge in a full slice, you will love these bite-size pecan squares. UPDATED 12/12/07 to provide more specific baking times for 9x13 pans and 10x15 pans. Now you can be sure your filling will set properly!

12 tablespoons butter, room temperature (1 1/2 sticks)
1/2 cup white sugar
3 cups flour
1 teaspoon salt
3 tablespoons butter, melted
1 1/2 cups white sugar
1 1/2 cups light corn syrup
2 teaspoons vanilla extract
4 eggs, slightly beaten
2 1/2 cups pecans, chopped (about 12 ounces)

Steps:

  • Preheat the oven to 350°F
  • Prepare pan (9x13 or 10x15) by lining it with parchment paper (or grease pan heavily because the filling gets quite sticky after baking).
  • Crust: Place all crust ingredients in a mixer. Mix until it looks like coarse grain, then pour this crumbly mixture into prepared pan. Use floured fingers to pat dough firmly into place. Bake crust at 350°F until light golden brown, 22-24 minutes (9x13) or 20-22 minutes (10x15).
  • Filling: While crust is baking, place pecans in food processor and pulse to chop coarsely; set pecans aside.
  • In a saucepan, melt butter; then add white sugar and stir until dissolved. REMOVE FROM HEAT NOW and add corn syrup, vanilla and eggs. Add pecans. (It's important that this mixture is warm, but not HOT which would cook the eggs).
  • Remove crust from oven; pour warm pecan mixture over hot crust and return to oven. Bake at 350°F for 32-34 minutes (9x13) or 25-27 minutes (10x15 jellyroll). When it is done, only the very center will appear wobbly and most of the filling will have puffed up slightly to indicate that the eggs are cooking and setting up.
  • **Tip for cutting: freeze pecan squares a couple hours, then use a serrated knife which will score through the pecans for perfect small squares.
  • Chocolate Pecan Squares: Add 1/2 cup semi-sweet chocolate chips to the filling before baking.

1/2 cup chopped pecans
1/4 cup butter
1/4 cup firmly packed light brown sugar
2 tablespoons corn syrup
1 teaspoon ground cinnamon, divided
1 (8 ounce) can refrigerated crescent dinner rolls
1 1/2 teaspoons granulated sugar

Steps:

  • Preheat oven to 375°. Bake pecans and butter in a lightly greased 8-inch round cake pan 2 minutes. Swirl pan to combine, and bake 2 more minutes. Remove from oven, and stir in brown sugar, corn syrup, and 1/2 teaspoons cinnamon; spread mixture over bottom of pan.
  • Unroll crescent roll dough, and separate into 4 rectangles, pressing perforations to seal. Stir together granulated sugar and remaining 1/2 teaspoons cinnamon; sprinkle over rectangles. Roll up each rectangle tightly, starting at 1 long side; press edges to seal. Cut each log into 5 slices; place slices, cut sides down, in prepared pan. (Space slices equally in pan; slices will not touch.).
  • Bake at 375° for 14 to 16 minutes or until center rolls are golden brown and done. Remove from oven, and immediately invert pan onto a serving plate. Spoon any topping in pan over rolls.
