PECAN-CRUSTED SALMON

This nutty coating and cool sauce turn ordinary salmon into something special. "My husband was thrilled the first time I served this," says Cheryl Bydowdki of Punta Gorda, Florida.

Number Of Ingredients 12

2 salmon fillets (6 ounces each)
2 tablespoons mayonnaise
1/2 cup finely chopped pecans
1/3 cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon minced fresh parsley
1 tablespoon butter, melted
CUCUMBER SAUCE:
1/2 cup chopped seeded peeled cucumber
1/2 cup vanilla yogurt
1/2 teaspoon snipped fresh dill or 1/8 teaspoon dill weed
1/8 teaspoon garlic powder

Steps:

  • Place salmon skin side down in a greased 11x7-in. baking dish. Spread 1 tablespoon mayonnaise over each fillet. , In a small bowl, combine the pecans, bread crumbs, Parmesan cheese, parsley and butter; spoon over salmon. Bake at 425° for 10-15 minutes or until fish flakes easily with a fork., Meanwhile, in a small bowl, combine the cucumber sauce ingredients. Serve with the salmon.

I got this recipe from my mother and have taken it to a number of potlucks. It always receives raves. Even non-salmon lovers like this appetizer.

Number Of Ingredients 10

1 (7 ounce) can salmon, drained and flaked
1 (8 ounce) package cream cheese, softened
1 tablespoon lemon juice
3 tablespoons finely chopped green onions
2 teaspoons prepared horseradish
¼ teaspoon salt
¼ teaspoon hot pepper sauce
¼ teaspoon Worcestershire sauce
½ cup chopped walnuts
¼ cup chopped fresh parsley

Steps:

  • In a medium bowl, mix salmon, cream cheese, lemon juice, green onions, horseradish, salt, hot pepper sauce and Worcestershire sauce. Form the mixture into a ball and wrap in plastic. Chill in the refrigerator 3 hours, or until firm.
  • On a large piece of wax paper, mix walnuts and fresh parsley. Roll the ball in the walnuts and parsley until thoroughly coated. Chill in the refrigerator until serving.

8 - oz. cream cheese(room temp)
2 tablespoon(s) lemon juice
2 tablespoon(s) minced onions
1 large of good salmon ( drained)
2 teaspoon(s) horseradish
1/4 cup(s) almonds, chopped
- pinch of salt

Steps:

  • MIX well refrigerate and roll in the pecans,roll in the nut.
  • Serve it nice tray. Center the cheese ball in the center of the the tray,add fresh fruit and nice crackers.

Quick & easy appetizer (the cook time is actually the time to allow the mixture to firm in the frig, longer is better).

Number Of Ingredients 7

8 ounces cream cheese, softened
1 tablespoon lemon juice
2 teaspoons horseradish (prepared, not cream)
1 small onion, minced
1 (15 ounce) can salmon, drained
1/4 cup chopped parsley (I have also done this with finely chopped green onions)
1 cup chopped pecans

Steps:

  • Mix salmon with cream cheese, lemon juice, horseradish, and onion.
  • Refrigerate until firm.
  • Mix parsley and pecans together.
  • Form salmon mixture into a ball.
  • Roll in pecan-parsley mixture.
  • Serve on a plate with your favorite crackers around it.
  • If you are not fond of horseradish, I would cut it down to 1 teaspoons.
  • (I love the taste of horseradish so I usually add more).
