Pineapple Fluff is a no-bake dessert recipe with Cool Whip, pineapple, marshmallows, instant pudding, pecans and coconut.

3.4 ounce box instant vanilla pudding mix, ((or coconut cream instant pudding))
20 ounce can crushed pineapple, (do not drain)
8 ounce tub Cool Whip (whipped topping), (thawed)
2 cups mini marshmallows
1 cup shredded sweetened coconut, (optional)
½ cup chopped pecans

Steps:

  • In a large bowl, stir together pudding mix and the entire can of crushed pineapple.
  • Gently stir in COOL WHIP, marshmallows, coconut and nuts.
  • Cover bowl with plastic wrap.
  • Chill for a couple of hours before serving.

These are similar to Russian Tea Cakes but use cake flour instead of regular. They literally melt in you mouth!!!

½ cup butter, softened
2 tablespoons white sugar
1 teaspoon vanilla extract
1 cup sifted cake flour
1 cup pecan halves
½ cup confectioners' sugar for rolling

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together butter and sugar until smooth. Beat in the vanilla. Grind pecans in a food processor or blender; toss with cake flour. Stir the pecan mixture into the creamed mixture until well blended. Roll the dough into tablespoon balls, then place them 1 inch apart onto the prepared cookie sheets.
  • Bake for 25 to 20 minutes in the preheated oven, or until lightly browned. Roll warm cookies in confectioners' sugar. When they are cooled, roll them again.

A local radio station sponsored a contest that required recipes with three different products from the dairy case. I entered this recipe and won a prize!

Number Of Ingredients 10

1 package (8 ounces) cream cheese, softened
1 cup sugar, divided
1/2 teaspoon salt
2 large eggs
1/2 cup milk
1/2 teaspoon vanilla extract
1 tablespoon cornstarch
1 can (8 ounces) crushed pineapple, undrained
1 unbaked pastry shell (9 inches)
1/4 cup chopped pecans

Steps:

  • In a large bowl, beat the cream cheese, 1/2 cup sugar and salt until smooth. Add eggs, one at a time, beating well after each addition. Beat in milk and vanilla; set aside. , In a small saucepan, combine cornstarch and remaining sugar. Stir in pineapple; bring to a boil, stirring constantly. Boil for 2 minutes. Pour into pastry shell; spoon cream cheese mixture over top. Sprinkle with pecans. , Bake at 400° for 10 minutes. Reduce heat to 325°; bake 45-50 minutes more or until center is set. Cool completely; chill before serving.
