½ cup butter, softened
1 cup packed brown sugar
1 (18.25 ounce) package butter pecan cake mix
2 tablespoons water
2 cups chopped pecans
2 eggs
½ cup butter, softened
2 eggs
1 cup milk
1 cup white sugar
1 cup light corn syrup

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking dish.
  • Reserve 3/4 cup cake mix for second layer. Set aside.
  • For the first layer: In a large bowl, combine 1/2 cup margarine or butter, brown sugar, cake mix (minus 3/4 cup), water, pecans and 2 eggs. Mix well.
  • Spread batter into pan. Bake at 325 degrees F (165 degrees C) for 20 minutes.
  • For the second layer: In a large bowl, combine 1/2 cup butter or margarine, 2 eggs, milk, sugar, corn syrup and reserved 3/4 cup cake mix. Mix well and pour over first layer.
  • Bake at 325 degrees F (165 degrees C), for 25 to 30 minutes.

We love upside-down cakes, and this unbeatable combination of pecan pie and upside-down cake is no exception. Brown sugar, melted butter and pecan halves are mixed together and spread in a cake pan, which then gets topped with a sweet Bisquick™ batter, baked, and drizzled with a powdered sugar-milk glaze. The end result is a gooey pecan pie layer that sits atop a fluffy-yet dense-cake, instead of a pie crust. 1 tablespoon water
1 cup pecan halves

Steps:

  • Heat oven to 350°F. Spray 9-inch round cake pan with cooking spray; line with cooking parchment paper.
  • In medium bowl, stir melted butter, brown sugar and water until well blended. Stir in pecans to coat evenly. Pour into pan, and spread pecans in an even layer; set aside.
  • In large bowl, beat Cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter evenly over pecan mixture in pan.
  • Bake 29 to 34 minutes or until toothpick inserted in center comes out clean. Run knife around side of pan to loosen cake. Cool pan on cooling rack 5 minutes. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Replace any pecans that may still be in pan on top of cake. Cool 15 minutes.
  • In small bowl, mix powdered sugar and 2 teaspoons of the milk until well blended. If too thick to drizzle, add additional milk, 1/4 teaspoon at a time. Drizzle with fork over top. For 8 servings, cut into 8 wedges. Store loosely covered in refrigerator.

½ cup butter, softened
½ cup shortening
2 cups white sugar
5 egg yolks

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously butter 3 (9 inch) pans. Divide 2 cups chopped pecans evenly between the pans. Shake to coat bottoms and sides of pans.
  • In a large bowl, cream together 1/2 cup butter, shortening and 2 cups sugar until light and fluffy. Beat in the yolks one at a time, then stir in 1 teaspoon vanilla. Combine the flour and baking soda and beat into creamed mixture alternately with the buttermilk. Stir in 1 cup chopped pecans.

  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pans on wire racks 10 minutes. Invert layers onto wire racks lined with wax paper. Brush tops and sides of cake layers with 2/3 cup corn syrup, and cool completely.
  • Make the Filling: In a large saucepan, combine 1/2 cup brown sugar and cornstarch. Stir in 4 egg yolks, half-and-half, 3/4 cup corn syrup and salt. Bring mixture to a boil over medium heat. Continue boiling, whisking constantly for 1 minute, or until thickened. Remove from heat. Whisk in butter and vanilla. Chill.
  • Assemble the cake: Place first layer on serving plate, pecan side up. Spread with half of the filling. Place second layer, pecan side up, on filling. Spread with remaining filling. Top with remaining cake layer, pecan side up.

I WOULD HIGHLY RECOMMEND THAT BEFORE YOU BEGIN TO MAKE THIS RECIPE, THAT YOU READ IT AND STUDY IT. MAKE A LIST OF EVERY THING YOU NEED AND MAKE SURE YOU HAVE ALL INGREDIENTS ON HAND.
CAKE INGREDIENTS:
1/2 c unsweetened cocoa powder
3/4 c strong brewed coffee, cooled to room temperature
1/2 c cold water
2 tsp vanilla extract
2 1/2 c all-purpose flour
1 1/2 tsp baking soda
1/2 tsp sea salt
3/4 c (1 1/2 sticks) unsalted butter plus more for greasing pan, room temperature
1 1/2 c sugar
3 eggs, at room temperature
6 oz unsweetened chocolate, melted and cooled
1 8 or 9-inch pecan pie, fully baked and cooled to room temperature
FROSTING & GARNISH INGREDIENTS:
8 oz bittersweet or semisweet chocolate, chopped into small pieces
3/4 c heavy cream
1 pinch sea salt
1/2 c pecans, toasted and chopped
SPECIAL EQUIPMENT
1 10 x 3-inch cake pan

Steps:

  • 1. INGREDIENTS YOU WILL NEED.
  • 2. Fully bake a pecan pie (or buy one already bake) preferably in a disposable pie tin (so you can take it out easily later). Let it cool to room temperature. NOTE: if you bake your own pecan pie, I would recommend that you put parchment paper on the bottom of the pan. The first time I made this cake, my pie stuck and I had to cut in to 4 pieces. That did not change the taste of the cake, it was still delish!!
  • 3. Preheat your oven to 350F degrees. Grease your cake pan and line the bottom with a piece of parchment paper. NOTE: The first time I baked this cake, I used an aluminum mold and it worked fine. I have since purchased a 10 X 3-inch springform pan and I must say I prefer it over the aluminum mold.
  • 4. In a small bowl, whisk together the cocoa, coffee and water. Add in the vanilla. Set aside.
  • 5. In a medium bowl, sift together the flour, baking soda, and salt; set aside.
  • 6. In a standing mixer with a paddle attachment, cream together the butter and sugar until fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Add the melted chocolate and mix until incorporated. Add the dry ingredients in thirds, alternating with the wet ingredients, beating well after each addition.
  • 7. Spoon 1/3 of the batter evenly into the bottom of the cake pan. Take the pecan pie out of the tin (you may need to cut it out, so it might make sense to bake your pie in a disposable pie tin) and place it right side up on top of the batter. I thought that the pie might sink to the bottom either now or during baking, but like a ship, it sailed on top.
  • 8. Cover the top and sides of the pie with the remaining batter. You may want to thwack the cake on the counter a couple of times to make sure there are no air pockets hiding between the pie and the side of the cake pan. Don't skip doing this to get the air bubbles out! Smooth the top.
  • 9. Bake in a 350 F degree oven for 30-35 minutes or until a toothpick inserted at THE EDGE of the pan comes out with just a few crumbs. NOTE: You are testing the sides because the pie is in the center and that will alter your results. NOTE 2: Ovens vary and I baked my 1st cake an addtional 10 minutes. I've since made my 2nd cake and found additional minutes were required. Don't start testing until you've baked at least 30 minutes. NOTE 3: Don't let the photo turn you away, this will be the bottom of the cake.
  • 10. Let the cake cool in the pan for 15 minutes the turn it out upside down onto a cooling rack to cool completely. When the cake is cool, it's time to make the ganache frosting.
  • 11. MAKING THE GANACHE FROSTING: Place the chopped chocolate in a bowl.
  • 12. Heat the cream to a simmer then pour over the chocolate.
  • 13. Let it sit for 1 minute then gently stir until the all the chocolate is melted and the ganache is smooth. Let it sit at room temperature for 25-35 minutes stirring occasionally until it is frosting consistency. NOTE: It took about 45 to 55 minutes for this to come to a good frosting consistency.
  • 14. Frost the top and sides of the upside-down cake and sprinkle with the chopped toasted pecans. NOTE: I placed waxed paper strips around cake before frosting for easy clean up.
  • 15. NOTE: Make sure the cake and pie in center is completely cooled before frosting and cutting.

1 1/2 cups (187 grams) tapioca flour
3/4 cup (123 grams) potato starch

Steps:

  • For the gluten-free flour blend: In a large bowl, whisk together the rice flour, tapioca flour, potato starch, xanthan gum and salt.
  • For the pecan crumble: In a small bowl, stir together the pecans, brown sugar and cinnamon with 2 teaspoons gluten-free flour blend.
  • For the cake: Preheat the oven to 350 degrees F and grease a 12-cup bundt cake pan with butter or gluten-free cooking spray. In a medium bowl, whisk together the baking powder, baking soda and salt with 1 1/2 cups gluten-free flour blend.
  • Using an electric mixer, in a large bowl, cream together the butter and brown sugar on medium-high speed until fluffy. Beat in the eggs one at a time. Add the flour mixture and buttermilk to the egg mixture, alternating and beginning and ending with the flour mixture. Transfer half of the batter to the prepared pan and sprinkle half of the pecan crumble mixture on top. Repeat with the remaining batter and pecan crumble mixture. Using a butter knife, swirl the crumble mixture into the batter in a crisscross motion. Bake until a toothpick inserted in the center comes out clean, 45 to 50 minutes. Let cool completely on a wire rack and invert onto a cake plate.
  • For the frosting: In a small saucepan, bring the brown sugar, butter and milk to a boil over medium heat. Let boil 1 minute, whisking constantly. Remove from the heat and stir in the vanilla. Gradually whisk in the confectioners' sugar until combined. Whisk for about 3 minutes to cool slightly; pour the frosting over the cooled cake and top immediately with the pecans to decorate.

1/2 cup pecans
One 9-inch white or spice cake recipe (homemade or boxed), baked and cooled
1/4 cup heavy cream, plus more as needed
2 tablespoons white chocolate chips
3 tablespoons dark rum, plus more as needed
4 ounces green candy melts
4 to 5 tablespoons coconut oil
8 ounces orange candy melts

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the pecans on a baking sheet and bake until toasted, 8 to 10 minutes. Remove from the oven, cool and then chop.
  • Crumble the cake into a large bowl.
  • Put the heavy cream and chocolate chips in a medium heatproof bowl and microwave in 30 second intervals, stirring after each time, until the chips have melted and the mixture is smooth.
  • Line a baking sheet with parchment paper. Sprinkle the rum over the cake crumbs. Then pour the melted white chocolate over the cake crumbs. Add the pecans and stir with a fork to combine and moisten the cake. Squeeze about 2 tablespoons of the cake crumbs in your hand and roll into a ball. (A small cookie scoop helps to portion the cake; just press it firmly into the scoop, remove and roll in your hands to form a ball.) If you have trouble with the cake sticking together, add cream and/or rum, about 1 tablespoon at a time, until it does. Repeat with the remaining cake crumbs. Place the balls on the prepared baking sheet and refrigerate for 2 hours or freeze for 30 minutes. Remove 5 minutes before using.
  • Put the green candy melts and 1 tablespoon of the coconut oil in a medium heatproof bowl. Microwave in 30 second intervals, stirring in between, until smooth. (Alternatively, you can melt it over a double boiler.) If the chocolate is still thick and not smooth, add more coconut oil 1 teaspoon at a time until smooth. Let the chocolate cool 1 minute before dipping.
  • Dip 2 inches of a lollipop stick into the green chocolate, rolling to coat and removing any excess. Insert the green end into the center of the cake ball, so about 1 inch of the green is exposed. Repeat with the remaining lollipop sticks.
  • Put the orange candy melts and 3 tablespoons of the coconut oil in a medium heatproof bowl. Microwave in 30 second intervals, stirring in between, until smooth. (Alternatively, you can melt it over a double boiler.) If the chocolate is still thick and not smooth, add more coconut oil 1 teaspoon at a time until smooth. Let the chocolate cool 1 minute before dipping.
  • Dip each cake pop into the orange chocolate, taking care not to get any on the green stem. Let the excess chocolate to drip off and then put back onto the parchment-lined baking sheet. Then dip the pops one more time in the orange chocolate. Refrigerate for 5 minutes.
  • Put the remaining green chocolate (about 1/4 cup) into a disposable pastry bag or zip-top bag. Pipe vines and leaves on top of the cake pop where the stem is.

  • Add the cream of tartar to the egg whites and beat with a mixer on medium speed until thickened and starting to turn white, 1 to 2 minutes. Gradually beat in 1/2 cup granulated sugar, then increase the speed to medium high and beat until the egg whites are glossy, thick and hold stiff peaks but are not dry, about 5 more minutes. Set aside while making the rest of the batter (don't do this ahead of time or the egg whites will deflate).
  • Add the remaining 1/2 cup granulated sugar to the egg yolks along with the brown sugar. Beat with the mixer (no need to wash the beaters) until smooth and lightened in color, about 2 minutes. Beat in the vegetable oil and vanilla until smooth and thick, then beat in the milk (the batter will be thin). Add the flour, ground pecans, baking powder and salt and beat on low speed until thoroughly combined.
  • Add about one-third of the beaten egg whites to the batter and fold in with a rubber spatula until combined. Add the remaining egg whites and continue to fold until no white streaks remain. Pour into an ungreased 10-inch tube pan or angel food cake pan and run the spatula around the center of the batter to create a line where excess air can escape as the cake rises.
  • Bake the cake until the top is golden and springs back when touched and a long skewer inserted into the center comes out clean, about 1 hour. Remove from the oven and immediately turn the cake upside down over the slim neck of a bottle (if your pan has feet, use those instead). Let cool completely. Use a thin spatula to loosen the cake around the sides and middle of the pan. Turn out onto a platter.
  • Make the glaze: Melt the butter in a medium saucepan over medium heat. Add the pecans and cook, stirring, until lightly toasted, 2 to 3 minutes. Add the brown sugar, heavy cream, corn syrup and salt and carefully stir to combine. Continue to cook, stirring, until the sauce thickens slightly and starts to pull away from the sides of the pan when stirring, about 5 minutes. Set aside to cool and thicken, stirring occasionally, about 20 minutes.
  • When the glaze has thickened but is still pourable, spoon it over the cake, letting it drip down the sides. As the glaze cools, use the spoon or spatula to spread some of the pecans that fell down onto the top and sides. Let stand, at least 30 minutes.

Steps:

  • 1. Preheat oven to 375°F.
  • 2. Line a greased jelly roll pan with parchment paper.
  • 3. In a large bowl, beat eggs for 3 minutes.
  • 4. Gradually add sugar; beat eggs in a mixer on high for 2 minutes or until mixture becomes thick.
  • 5. Stir in water and butter nut flavoring.
  • 6. Combine dry ingredients and gently fold the mixture into the eggs. Don't over mix, you don't want to.
  • deflate the eggs.
  • 7. Pour the batter into the pan and spread it evenly. You want to make sure it is even so the edges don't cook more than the center and crumble when you go to roll the cake.
  • 8. Bake 13 ­ 15 minutes or until cake springs back when lightly touched. Halfway through baking sprinkle chopped pecans over cake and press down very lightly.
  • Remove from oven and cool cake in pan for 5 minutes.
  • 9. Invert cake onto a kitchen towel dusted with confectioners' sugar and peel off parchment paper.
  • 3. Use a spoon to stir filling up every 10 minutes.
  • 10. Starting with a short side roll the cake up in the towel. Let the cake cool completely like that.
  • 12. Roll the cake back up.
  • 11. Unroll the cake and spread filling evenly over cake leaving a little space around the edges.
  • 13. Store in the refrigerator.
  • Filling.
  • 1. Preheat oven to 350°F.
  • 2. Mix all ingredients together in a bowl then pour into a 9 inch pie dish and bake 45 minutes or until only the center jiggles when moved.

I found this cake in an old Southern Living Cookbook and have thoroughly enjoyed it. I love pecan pie so I knew I would love this. It is a very moist cake. It's not hard to make, but has lots of ingredients. Hope you enjoy. This beautiful picture is also from Southern Living.

2 c chopped pecans
1/2 c butter, softened
1/2 c shortening, like crisco
2 c sugar
5 large egg yolks
1 Tbsp vanilla extract
1 c buttermilk
2 c all purpose flour
1 tsp baking soda
1 c pecans
2 large egg whites
3/4 c dark corn syrup
PIE FILLING
1/2 c brown sugar, packed
1/3 c corn starch
4 large egg yolks
1 1/2 c half and half
3/4 c dark corn syrup
1/8 tsp salt
3 Tbsp butter
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees F (175 degrees C). Generously butter 3 (9 inch) pans. Divide 2 cups chopped pecans evenly between the pans. Shake to coat bottoms and sides of pans. In a large bowl, cream together 1/2 cup butter, shortening and 2 cups sugar until light and fluffy. Beat in the yolks one at a time, then stir in 1 teaspoon vanilla. Combine the flour and baking soda and beat into creamed mixture alternately with the buttermilk. Stir in 1 cup chopped pecans. In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain. Divide batter equally into prepared pans. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pans on wire racks 10 minutes. Invert layers onto wire racks lined with wax paper. Brush tops and sides of cake layers with 2/3 cup corn syrup, and cool completely. Make the Filling: In a large saucepan, combine 1/2 cup brown sugar and cornstarch. Stir in 4 egg yolks, half-and-half, 3/4 cup corn syrup and salt. Bring mixture to a boil over medium heat. Continue boiling, whisking constantly for 1 minute, or until thickened. Remove from heat. Whisk in butter and vanilla. Chill. Assemble the cake: Place first layer on serving plate, pecan side up. Spread with half of the filling. Place second layer, pecan side up, on filling. Spread with remaining filling. Top with remaining cake layer, pecan side up.
  • 2. If you notice on the picture, the leaves were made using Pillsbury pie crust and cut out with a cookie cutter. I used Voortmans Maple Leaf Cookies. I just took the filling out and laid them on top of the cake. It turned out pretty. One Thanksgiving, I put a rattan horn of plenty on topped filled with candy corn. It was a big hit.

  • In a saucepan, heat corn syrup, 1 1/4 cups sugar and 1/4 cup margarine until melted and hot. Remove from heat and beat in reserved 2/3 cup of cake batter. Stir in 3 eggs and add pecans. Pour on top of cake. Return to oven and bake an additional 40 minutes.

1 box butter flavored cake mix (reserve 3/4 c. for filling)
1 stick butter, softened
1 egg
FILLING
1/2 c brown sugar, firmly packed
1/2 c corn syrup, dark

3/4 c cake mix
2 c pecans, in pieces

Steps:

  • 1. Mix butter, cake mix, and egg with a fork or pastry cutter.

1 - 16 oz yellow cake mix
1/2 c melted butter
4 eggs
2 c chopped, toasted pecans
1 1/2 c light corn syrup
1/2 c packed, dark brown sugar
1 tsp vanilla

Steps:

  • 1. Preheat oven to 325 degree F. Place cake mix, melted butter and 1 egg in large bowl. Beat on low speed until well combined, about 30 seconds.
  • 2. Measure out 2/3 cup batter; set aside. Spread remaining batter in bottom of ungreased 13x9 baking dish. Bake for 15 minutes or until top lightly browns and puffs up. Remove dish to wire rack and cool for 10 minutes. Leave oven on.
  • 3. Place reserved 2/3 cup batter, corn syrup, sugar, remaining 3 eggs and vanilla in large bowl. Beat on low speed for 1 minute. Scrape down sides. Beat on medium until well combined, about 1 minute. Fold in pecan.
  • 4. Pour pecan mixture on top of warm cake in baking dish, gently smooth out evenly over cake. Bake for 40-45 minutes or until edges are browned but middle is still soft.
  • 5. Remove to wire rack, and cool 30 minutes. Wonderful served warm with a scoop of ice cream..yummo!

I found this just browsing on the web a few months ago, but haven't made it yet...but the time to do so is coming:) The recipe sounds like it will produce "chiffony", light layers, with a thick, sticky, and sweet filling; I guess that means small servings and a full week of brutal exercise to afford the calories:) *The recipe states that the filling needs to chill for 4 hours, so I've included that in the prep time; but maybe you could shave off some of that time by making the filling the night before, especially if you plan to try this during the hectic holiday season!*

  • Brush the tops and sides of the layers with the corn syrup; cool completely.
  • MAKE THE FILLING: Whisk together the brown sugar, corn syrup, cornstarch, egg yolks, half-and-half, and salt in a heavy 3-quart saucepan until smooth.
  • Bring to a boil over medium heat, whisking constantly; boil for 1 minute, or until the mixture thickens.
  • Remove pan from heat; whisk in the butter and vanilla.
  • Place a sheet of waxed paper on the surface of the mixture; chill for 4 hours.
  • ASSEMBLE THE CAKE: Place 1 cake layer, pecan side up, on a serving dish; spread with 1/2 the filling.
  • Place the second cake layer, pecan side up, over the filling; spread with the remaining filling.
  • Place the third cake layer, pecan side up, on top of the filling.
  • Serve with whipped cream; store covered in the refrigerator.
  • Bring to room temperature before serving.
