SCHMEAR (CREAM CHEESE WITH LOX SPREAD)



Schmear (Cream Cheese With Lox Spread) image

Try serving this "schmear" with some fresh bagels at your next brunch. You could add a tablespoon or so of fresh chopped dill or parsley or even a couples of tablespoons of drained capers, but I like it kept simple. For appetizers, serve the schmear along with cocktail-sized rye bread slices.

Number Of Ingredients 4

1 (8 ounce) package cream cheese, at room temperature
3 scallions, trimmed and coarsely chopped
4 -5 slices lox or 4 -5 slices smoked salmon
salt and pepper, to taste

Steps:

  • In a food processor, work the cream cheese until it is smooth, turning off the motor and scraping down the sides of the work bowl several times.
  • Add the scallions, lox, salt and pepper. Continue working the cream cheese mixture until it is blended (by the way, it is okay if there are some chunks of salmon in the mixture).
  • Remove cream cheese mixture to a pretty container or small bowl and refrigerate until ready to serve. Schmear on bagels, matzoh, or toasted pumpernickel or rye bread, or whatever you like.

I don't really like plain cream cheese on my bagels, so I made some of this! I use reduced fat cream cheese because the consistency is naturally softer, even when cold. Plus, it tastes just as good as the regular stuff. I have used regular, softened cream cheese, and added a tablespoon or two of milk to adjust the consistency.

8 ounces cream cheese or 8 ounces reduced-fat cream cheese
1/4 cup pecans, chopped
3 tablespoons maple syrup
milk (optional)

Steps:

  • Combine all ingredients in a medium bowl; beat until thoroughly mixed.
  • Feel free to add more syrup for a stronger flavor.
  • To thin out regular cream cheese, add in milk, 1 tbsp at a time until desired consistency is reached.

4 ounces fat-free cream cheese
4 ounces fresh goat cheese
1/2 teaspoon grated lime zest
1 tablespoon lime juice
2/3 cup finely chopped cucumber
1/4 cup finely chopped celery
3 tablespoons finely chopped carrot
1 radish, finely chopped
2 tablespoons finely chopped red onion
2 tablespoons thinly sliced fresh basil
4 whole wheat bagels, split and toasted
8 slices tomato
Coarsely ground pepper, optional

Steps:

  • In a bowl, beat cheeses, lime zest and lime juice until blended. Fold in chopped vegetables and basil. Serve on bagels with tomato slices. If desired, sprinkle with pepper.
