2 salmon fillets (6 ounces each)
2 tablespoons mayonnaise
1/2 cup finely chopped pecans
1/3 cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon minced fresh parsley
1 tablespoon butter, melted
CUCUMBER SAUCE:
1/2 cup chopped seeded peeled cucumber
1/2 cup vanilla yogurt
1/2 teaspoon snipped fresh dill or 1/8 teaspoon dill weed
1/8 teaspoon garlic powder

Steps:

  • Place salmon skin side down in a greased 11x7-in. baking dish. Spread 1 tablespoon mayonnaise over each fillet. , In a small bowl, combine the pecans, bread crumbs, Parmesan cheese, parsley and butter; spoon over salmon. Bake at 425° for 10-15 minutes or until fish flakes easily with a fork., Meanwhile, in a small bowl, combine the cucumber sauce ingredients. Serve with the salmon.

MAPLE PECAN CRUSTED SALMON

This robust dinner (or lunch!) salad is a little Southern, a little Southwestern and a lot delicious. Save time by using leftover cooked chicken from another meal or store-bought rotisserie chicken.

Number Of Ingredients 10

2 tablespoons butter
1/3 cup pure maples syrup
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground mustard
1/2 cup pecans
2 - 2 1/2 pounds salmons fillets
Salt for sprinkling
Fresh lemon wedges for serving

Steps:

  • In a medium saucepan, melt the butter. Stir in the maple syrup, Worcestershire sauce, salt, pepper, and ground mustard. Stir over medium heat until the mixture is warmed through, 3-4 minutes. Remove from the heat and let cool to room temperature.
  • While the marinade is cooling, pour the pecans into a dry skillet and heat over medium heat, tossing frequently, until golden and toasted. Remove from heat; let the pecans cool to room temperature and then chop finely.
  • Place the salmon fillets in a gallon-sized ziploc bag. Pour the maple marinade over the salmon, coating the salmon pieces evenly. Seal the bag and refrigerate for 30 minutes or up to 4 hours. Preheat the oven to 325 degrees. Line a baking sheet with foil and lightly spray with nonstick cooking spray.
  • Place the toasted, chopped pecans on a plate or shallow pie dish. Remove the salmon from the refrigerator. Dip the top side of each salmon fillet in the pecan crumbs pressing the salmon lightly into the pecans so they adhere to the top of the salmon. Place the fillets pecan-side up on the prepared baking sheet.
  • Sprinkle the salmon with a pinch of salt.
  • Bake the salmon for 20-22 minutes until cooked through but still tender inside (not overcooked). The salmon should flake easily with a fork but still be soft and not dry. Serve immediately with fresh lemon wedges.

Sauce
1/2 cup (packed) chopped fresh sorrel or spinach
2 tablespoons dry white wine
1 1/2 teaspoons minced shallots
1 cup whipping cream
1 1/2 teaspoons fresh lime juice
ground white pepper
Fish
1/2 cup pecans (about 2 ounces)
1 1/2 teaspoons chopped fresh tarragon or 1/2 teaspoon dried
1 1/2 teaspoons chopped fresh basil or 1/2 teaspoon dried
1 tablespoon butter, room temperature
4 6-ounce salmon fillets

Steps:

  • For Sauce:
  • Combine sorrel, wine and shallots in heavy small saucepan. Stir over medium heat until sorrel wilts, about 2 minutes. Add cream and lime juice. Boil until reduced to sauce consistency, about 12 minutes. Transfer sauce to blender. Purée until almost smooth. Return sauce to same saucepan. Season with ground white pepper and salt.
  • For Fish:
  • Finely grind pecans, tarragon and basil in processor. Blend in butter. Season with salt and pepper. Transfer to small bowl. (Sauce and nut mixture can be made 1 day ahead. Cover separately and chill. Let nut mixture stand at room temperature 30 minutes before using.)
  • Preheat oven to 350°F. Oil large baking sheet. Arrange salmon on prepared sheet. Sprinkle lightly with salt and pepper. Spoon equal amount of nut mixture over top of each fillet.
  • Bake salmon until cooked through, about 20 minutes.
  • Meanwhile, bring sauce to simmer.
  • Using spatula, transfer salmon to plates. Spoon sauce around fish.

1 tsp worcestershire sauce

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut salmon into smaller, equal-sized portions if needed. Pat dry. Season with salt and pepper.
  • Mix mayonnaise, garlic, dill, and lemon juice together in a bowl. Season with salt.
  • Place the pecans in a food processor. Pulse for 1 second and check the size of the pieces. You want it to be not quite powdery, but still with some larger chunks. Continue to pulse in 1-second bursts until desired consistency is achieved.

2 cups pecans
1 clove garlic, finely minced
1/2 teaspoon salt (optional)

  • Put the pecans in a food processor and chop until fine.
  • Add garlic, salt and cayenne pepper to food processor and process just till mixed well.

1 tsp mayonnaise
1 Tbsp finely chopped pecans
1 Tbsp panko bread crumbs
1 Tbsp grated parmesan cheese (the kind in the jar is fine).
1 tsp melted butter
IF YOU NEED MORE THAN ONE FILLET, SIMPLY ADJUST THE INGREDIENTS FOR THE AMOUNT OF FILLETS YOU WANT TO USE.

Simple Fall flavors. Fresh cranberries and apples in the wild rice topped with pecan crusted apple salmon. To make this easy and quick I use a box of wild rice, (such as Uncle Bens or any favorite brand).

2 lbs salmon fillets, 4 1/2 lb pieces
10 tablespoons apple jelly
4 tablespoons white wine
1 tablespoon thyme, fresh and chopped fine (if dried 1/2 tablespoon)
1 teaspoon rosemary, fresh and chopped fine (or if dried 1/2 teaspoon)
1/3 cup pecans, chopped fine (just buy a small pkg prechopped)
salt and pepper
5 1/2 ounces wild rice, quick cooking (1 box, Uncle Bens or similar will work fine)
1/2 cup dried cranberries, and diced
1/2 cup apple, granny smith diced fine
chicken stock

Steps:

  • Make the apple glaze. In a microwavable bowl add the apple jelly and white wine to combine. Takes about 1 minute on medium. Remove and stir in the rosemary and thyme. Let cool a few minutes.
  • Let the salmon come to room temperature Brush on the apple glaze, add salt and pepper, just a little to each fillet and then sprinkle the top with pecans. Save the extra glaze to drizzle over the salmon.
  • Place the salmon on a baking/cookie sheet lined with parchment or foil and cook at 400F for about 15-20. Cooking time will vary on the thickness and size of the fillets. Half way through, drizzle more glaze on the fillets.
  • Cook the rice according to directions. But rather than using water -- substitute chicken broth for a rich flavor. Half way through cooking the rice which depending on what brand you get will be between 10 and 25 minutes, add the diced apples and cranberries.
  • Serve with roasted green beans, broccoli, brussels sprouts or asparagus. Cook right along with the fish. Just toss with olive oil, salt and pepper and roast. Nothing more needed.

With a knife, chop the remaining half cup of pecans into small pieces. Mix into the ground pecan mixture. Add the Dijon, tarragon, maple, and black pepper. Stir well to make a thick, chunky paste. Dry the salmon fillet well. Sprinkle with a pinch of salt. Then spread the pecan mixture on the flesh side in an even layer, all the way to the edges. Place the salmon on a baking sheet on top of a piece of parchment paper. Bake in the oven for about eight minutes per half inch. I find with the thick layer of pecan topping that it takes about 12 - 15 minutes, but your results may vary. You want it to remain very orange and moist in the center. Few things are sadder than overcooked salmon.
