¾ cup butter
3 cups packed light brown sugar
3 eggs, beaten
1 ½ teaspoons vanilla extract
3 cups chopped pecans
3 cups self-rising flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan, or for thinner bars, use a 10x15 inch jellyroll pan.
  • Melt butter in a saucepan over medium heat. Stir in brown sugar until smooth. Remove from heat and let cool slightly.
  • Stir the eggs and vanilla into the brown sugar and butter. Mix in the chopped pecans, and then the flour. Spread evenly in the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until golden brown. Allow to cool before cutting into bars.

These delicious chewy dessert bars are a favorite of Flossie Johnson's family. They're from the Betty Crocker Racing Family Collection.

1/2 cup butter or margarine, softened
1 package (16 ounces) packed brown sugar
1 teaspoon vanilla
3 eggs
1 1/2 cups Gold Medal™ self-rising flour
1 cup chopped pecans

Steps:

  • Heat oven to 350°F. Grease rectangular pan, 13x9x2 inches.
  • Beat butter, brown sugar and vanilla in large bowl on medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in flour and pecans. Pour into pan.
  • Bake 30 to 35 minutes or until golden brown. Cool completely. For 48 bars, cut into 8 rows by 6 rows.

Disclaimer: I have always used recipes as a guide and use my instincts and experience to alter or omit ingredients as I cook. Therefore, it has always been a challenge when sharing recipes with others. I doubt I make dishes the same way...

2 stick butter, melted
1 c sugar
1 c light brown sugar, packed
2 eggs, beaten
2 c self rising flour
1 c pecan pieces
2 tsp vanilla *i use mexican vanilla

Steps:

  • 1. Preheat the oven to 300 degrees. Melt butter, add sugars, and blend well by hand. Add beaten eggs, stir well. Add flour and stir until all lumps are gone. Add pecans and vanilla. Pour into a greased and floured 9 x 13 baking dish. Bake approximately 40 to 50 minutes watch closely so they don't over cook. You want them to remain their chewiness.

1 1/2 cups confectioners' sugar
2 1/2 tablespoons cocoa
2 2/3 cups pecans, chopped
3 egg whites, at room temperature
1 pinch salt
1/4 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350°F
  • Line two cookie sheets with parchment paper or silicone liners.
  • Sift confectioners' sugar and cocoa together in a large bowl.
  • Add pecans to sugar and cocoa mixture; stir to combine well.
  • In a mixing bowl, using a mixer fitted with a whisk attachment, whip egg whites until foamy, add salt and vanilla, and beat to soft peaks; do not allow mixture to get stiff or dry.
  • Gently fold egg whites into the confectioners' sugar mixture, using a rubber spatula, until thoroughly combined.
  • Using a spoon, drop batter onto a cookie sheet (12 to a sheet).
  • Bake for approximately 10 minutes.

2 cups self-rising flour

  • Melt butter, add sugars, and blend well by hand (no mixer). Add beaten eggs, stir well. Add flour and stir until all lumps are gone. Add pecans and vanilla.
