Pear Walnut Blue Cheese Salad is a fresh and delicious mixed green salad with candied walnuts, freshly sliced pear, a homemade salad dressing, and topped with a crumble of blue cheese.

Candied Walnuts
1 tablespoon butter
1/4 cup sugar
1 tablespoon water
1 cup walnuts
Salad Dressing
Juice of a lemon
1/4 teaspoon lemon zest
1 garlic clove, minced
1/2 teaspoon Dijon mustard
1/2 cup olive oil
1/4 teaspoon salt
Salad
5 ounces mixed salad greens package
2 fresh pears, sliced
1 cup candied walnuts
1/3 cup dried cranberries
1/3 cup blue cheese crumbles (optional)

Steps:

  • Using a medium skillet over medium-high heat, add in the 1 tablespoon butter and once it begins to melt add in the 1/4 cup granulated sugar, 1 tablespoon water, and 1 cups walnuts.
  • Stir continuously for about 5 minutes and transfer the candied walnuts to a parchment lined baking sheet in a single even layer and allow them to cool and harden, about 15 minutes.
  • In a blender or food processor, add in the lemon juice, 1/4 teaspoon lemon zest, 1 clove of garlic, 1/2 teaspoon Dijon mustard, 1/2 cup olive oil, 1/4 teaspoon salt, and blend or pulse until the salad dressing is completely smooth.
  • Clean and dry the 5 ounce package of mixed salad greens. Place into a large bowl to assemble the salad. Clean and slice the 2 pears and add on top of the salad greens. Add in the 1 cup of candied walnuts and 1/3 cup dried cranberries.
  • Drizzle on as much of the salad dressing as you would like and toss the salad until everything comes together. Top with the 1/3 cup blue cheese and serve immediately.
  • Store any leftovers in an airtight container in the refrigerator up to 3 days.

I used mixed greens, pears, honey and bleu cheese-all from Oregon sources in this salad. For alternate versions, try two different varieties of pears. For example, I tested Forelle and Anjou pears. Rogue Creamery artisan cheesemaker supplied the bleu cheese (in particular their Smokey Blue), too. A light dressing tops it off. From a local source. Makes 6 small dinner salads. 6 cups assorted greens
2 medium pears, thinly sliced (any variety, read intro)
1/4 cup chopped walnuts, toasted
1/2 cup artisan blue cheese
2 tablespoons honey (soften the honey if necessary to make it easier to whisk) or 2 tablespoons agave nectar (soften the honey if necessary to make it easier to whisk)
2 teaspoons fresh lemon juice
salt, to taste
cracked black pepper, to taste

Steps:

  • In a salad bowl, lightly toss the greens with the pears.
  • In a small non-reactive bowl, combine the honey and lemon juice. Whisk with the salt and pepper, to taste.
  • Pour the dressing over the the greens and pears and toss .
  • Arrange the salad on six individual salad plates.
  • Garnish with the walnuts and bleu cheese.
  • Easy!

½ cup sliced red onion
1 Bosc pear, cored and sliced
½ cup chopped candied pecans
½ cup crumbled blue cheese
¼ cup maple syrup
⅓ cup apple cider vinegar
½ cup mayonnaise
2 tablespoons packed brown sugar
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup walnut oil

Steps:

  • Place the salad greens in a large bowl. Add the red onion, pear, pecans, and blue cheese, and toss to mix evenly.
  • To make the dressing, place the maple syrup, vinegar, mayonnaise, brown sugar, salt, and pepper in a blender, and blend thoroughly. With the motor running, slowly pour in the walnut oil. Blend until mixture becomes creamy, about 1 minute. Pour over salad mixture, and toss to coat greens evenly. Serve immediately.

The creaminess of the dressing, the sweetness of the pears, the crunch from the glazed walnuts and a little zip from the dried cranberries make this a very unique and tasty salad. I started making it this way a few years ago, and everyone loved it, so it is a staple in our house now. The combination of the flavors is awesome. I hope you enjoy it as much as we do!

1 cup sour cream
1 tablespoon lemon juice
4 ounces blue cheese (crumbled)
1/4 teaspoon kosher salt

1/2 cup glazed walnuts (I use Emerald brand, this is an approximate measurement, adjust to your tastes)

Steps:

  • In a medium bowl, whisk together the mayo, sour cream and lemon juice until smooth.
  • Fold in the bleu cheese crumbles and add salt and pepper.

1/4 cup extra-virgin olive oil
1 1/2 tablespoons white wine vinegar
1 teaspoon honey or maple syrup
1 teaspoon Dijon mustard
Pinch of salt
Several twists of freshly ground black pepper
1/3 cup chopped raw walnuts
5 to 6 ounces red leaf lettuce, torn into small pieces (about 5 to 6 cups), or spring mix
7 Medjool dates, pitted and sliced thin
2 Bosc* or Bartlett pears, unpeeled and sliced into 1/4-inch thick pieces
1/3 cup crumbled blue cheese (Jennifer used Roquefort; I used a more generic blue cheese option from Whole Foods but I think Gorgonzola would work well, too)

Steps:

  • To make the dressing: In a small bowl, combine all of the dressing ingredients and whisk to combine. Taste, and adjust if necessary-I added some more mustard and another pinch of salt.
  • To make the salad: First, toast the walnuts in a medium skillet over medium heat until fragrant, stirring often, about 4 to 5 minutes. Set aside.
  • In a medium serving bowl, combine the greens, dates, pears and toasted walnuts. When you're ready to serve, drizzle in some dressing (you won't need all of it) and toss until the greens are lightly coated, adding more if necessary. Serve in individual bowls with blue cheese sprinkled on top.

2/3 cup nuts (walnuts, pecans, almonds, or cashews)
1 bunch watercress
1 bunch arugula
1 tablespoon cider vinegar
2 teaspoons whole-grain mustard
1/4 teaspoon kosher salt, plus more to taste
Freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 Belgian endive
2 ripe pears, such as Anjou, Bartlett, or Comice
2 ounces mild blue cheese (about 1/2 cup loosely packed crumbles)

Steps:

  • Preheat oven to 350 degrees F. Spread the nuts on a sheet pan in a single layer. Bake, shaking the pan occasionally, until the nuts are toasted and fragrant, about 7 to 10 minutes. Let the nuts cool, and then coarsely chop.
  • Trim the stems of the watercress and arugula. Wash and dry the leaves.
  • Meanwhile, whisk the vinegar and mustard together in a large salad bowl. Season with the 1/4 teaspoon salt and some pepper. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth, slightly thick dressing.
  • Halve the endive lengthwise, cut out core, then thinly slice crosswise and add all the lettuces to the bowl. Quarter and core the unpeeled pears and thinly slice; add to the salad. Scatter the cheese and nuts over the salad, and season with salt and pepper, to taste. Toss the salad gently to evenly dress all the greens. Divide among 4 plates and serve immediately.

This is a recipe I clipped from a cooking magazine over 20 years ago. I suppose the salad is similar to others posted but the dressing is slightly different. Pear nectar can be found amongst the canned juices at your grocer. Buy a good crumbled blue cheese and feel free to cheat and buy pre-sweetened nuts. Enjoy this refreshing salad. Cook time is sugar coating the nuts.

3 medium pears, semi-firm but ripe, peels on
2 tablespoons lemon juice
salad greens, enough for 8 servings
1/2 cup blue cheese, crumbled
1 cup walnuts, candied (see recipe below)
1/2 cup sugar
2 tablespoons butter
vinaigrette dressing (recipe below)
1/3 cup white wine vinegar
1/3 cup salad oil
1/3 cup pear nectar
1 teaspoon dijon-style mustard, sub. grainy brown
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Halve and core the pears. Slice thin, brush with lemon juice to prevent browning. This may be done up to 60 minutes ahead.
  • To arrange the salads: line plates with salad greens.
  • Fan pear slices atop each serving.
  • Sprinkle with some blue cheese and candied nuts.
  • Drizzle with dressing. Serve extra on the side.
  • CANDIED WALNUTS / PECANS.
  • Line a baking sheet with foil. Butter or spray with a nonstick oil.
  • In a heavy skillet, over medium heat, combine: 1 C walnuts, 1/2 C sugar and 2 T butter.
  • Cook until sugar starts to melt, DO NOT stir. Reduce heat to low and cook 'til sugar is golden brown. Stirring occasionally.
  • Remove from heat and pour onto prepared baking sheet. Cool completely. Break into clusters.
  • PEAR NECTAR VINAIGRETTE.
  • In a screw top jar, combine:
  • white wine vinegar, oil, pear nectar, Dijon mustard, salt, pepper.
  • Cover and shake well.
  • Store in refrigerator for up to one week.
  • Shake before serving.
  • Makes about 1°C.

For Maple Dijon Vinaigrette:
3/4 cup olive oil

Steps:

  • To Make Candied Walnuts: Melt the butter in a pan Mix in the maple syrup and pepper Add the pecans and toss to coat Cook on medium low heat about 15 minutes. Stir every 5 minutes. Watch carefully so they don't burn. Turn out on aluminum foil and let cool for 5 minutes; break apart if necessary. To Make either Dressing: Mix all ingredients in bowl using wire whisk. Place greens on individual plates. Sprinkle chopped pears, nuts and gorgonzola on top of salad greens. Drizzle dressing over salad or serve on the side to suit individual tastes. Beautiful and delicious.

  • Put the pears in a bowl and drizzle with 1 tsp of the oil. Heat a griddle pan, then cook the pears, in batches, for 1 min on each side. Set aside to cool.
  • Mix the remaining oil, vinegar and honey. Toss the pears, leaves and cheese, divide between 4 plates and drizzle with the dressing. Serve with bread, if you like.
