Steps:
- Combine the lemon slices, sugar and vanilla in a resealable container; cover and shake vigorously until the lemon slices are coated. Set aside, shaking occasionally, until the sugar dissolves, about 30 minutes. Smash the lemon slices with a fork to release the juices. Let sit 30 minutes, then refrigerate until ready to use.
- Fill 2 martini glasses with ice and set aside. Shake the lemons again, then strain the juice into a liquid measuring cup. Combine the vodka, vermouth, pear nectar and 1 1/2 ounces of the lemon syrup in a cocktail shaker. Fill with ice and stir until cold. Discard the ice in the martini glasses and strain the drink into the chilled glasses. Garnish with pear slices and lemon twists.
ROSEMARY MARTINIS
Steps:
- At least 1 day before serving, combine the olives and chopped rosemary in a small dish and pour over some of the brine from the olive jar to cover. Cover and refrigerate.
- About 1 hour before serving, rub the sprig of rosemary between the palms of your hands for 10 to 15 seconds and put it in a cocktail pitcher. Pour the gin and vermouth over, stir to mix, and refrigerate.
- Just before serving, add a generous handful of ice cubes to the pitcher and stir gently for a minute to give it an extra dose of chill. Pour the martini into stemless martini glasses, leaving the ice behind in the pitcher. Very briefly rinse the olives to remove any clinging rosemary and spear 2 each onto cocktail picks or small rosemary sprigs (with lower leaves removed), adding a pick to each glass.

- Chop the half pear, then place it in the bottom of a cocktail shaker. Muddle until it's fully mashed.
- To the cocktail shaker, add the pear vodka, lemon juice, simple syrup, and orange bitters. Add 1 handful ice, then shake until cold. Strain into a martini glass and garnish with a pear slice.

- Using lemon slice, moisten the rim of a chilled cocktail glass; set lemon aside. Sprinkle sugar on a plate; hold glass upside down and dip rim into sugar. Discard remaining sugar on plate. Fill a shaker three-fourths full with ice. Add vodka, limoncello and lemon juice; cover and shake until condensation forms on outside of shaker, 10-15 seconds. Strain into prepared glass. - For rosemary syrup:
- Bring sugar and water to boil in small saucepan, stirring to dissolve sugar. Add rosemary sprigs. Reduce heat and simmer 2 minutes. Cool mixture completely. Discard rosemary.
- For martini:
- Mix rosemary syrup, vodka, lemon juice, and brandy in large pitcher. Cover pitcher with plastic wrap and place in freezer until mixture is cold, about 3 hours. Remove pitcher from freezer; add ice cubes. Stir briskly to melt ice partially. Strain mixture into chilled Martini glasses. Garnish each glass with rosemary sprig.
