This never-fails pear recipe turns out moist, firm and fruity every time. Some members of our family request these rich squares instead of cake for their birthdays.

2-1/4 cups all-purpose flour
5 tablespoons sugar, divided
3/4 teaspoon salt
3/4 cup cold butter, cubed
3 egg yolks
4-1/2 teaspoons lemon juice
FILLING:
1/2 cup sugar
4 tablespoons cornstarch, divided
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup water
2 tablespoons plus 1-1/2 teaspoons lemon juice
2 tablespoons butter
1 teaspoon vanilla extract
5 cups chopped peeled ripe pears

Steps:

  • In a large bowl, combine the flour, 3 tablespoons sugar and salt; cut in butter until crumbly. In a small bowl, whisk egg yolks and lemon juice; stir into dry ingredients with a fork. Remove 1 cup to another bowl; stir in the remaining sugar and set aside for the topping. , Press remaining crumb mixture onto the bottom and up the sides of a greased 8-in. square baking dish. Bake at 375° for 10-12 minutes or until edges are lightly browned., Meanwhile, for filling, combine the sugar, 2 tablespoons cornstarch, salt and cinnamon in a small saucepan; slowly stir in water and lemon juice until smooth. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Remove from the heat; stir in butter and vanilla., Toss pears with remaining cornstarch; spoon over crust. Top with filling. Sprinkle with reserved topping. Bake for 35-40 minutes or until filling is bubbly and topping is lightly browned. Cool on a wire rack.

ANISE AND PEAR BUBBLY

Number Of Ingredients 5

2 cups pear nectar
1 cup pear liqueur (recommended: Poire William)
2 star anise
4 bottles Prosecco
16 cranberries

Steps:

  • In a small saucepan over moderate heat, add the nectar, pear liqueur and star anise. Bring up to a boil and turn heat off. Allow to steep for 5 minutes, then discard the star anise. Cool to room temperature and chill until ready to use.
  • To serve, drop 1 cranberry to the bottom of each champagne coupe or flute. Add 2 tablespoons of the spiced pear mixture for coupe glasses and 3 tablespoons for the flute glasses. Top with Prosecco and enjoy!

PEAR & BLACKBERRY CRUMBLES

Use pear instead of apple in these individual versions of the classic pud with a crunchy pistachio topping

700g (or 4 large) ripe English pear, peeled and cubed
100g golden granulated sugar
250g blackberry
200g plain flour
100g unsalted butter, cold, cut into small pieces
85g shelled pistachio, roughly chopped
100g demerara sugar
ice cream, to serve (optional)

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Place the pears in a medium-size pan, add the granulated sugar and cook on a medium heat until the fruit starts to soften and releases its juices, about 10 mins. Add the blackberries and bring back to the boil, then remove from the heat. Spoon the fruity mixture into 4 individual ovenproof ramekins, or 1 large baking dish.
  • Place the flour, butter and a pinch of salt in a large bowl and rub together with your fingers until the mixture resembles coarse breadcrumbs. Add the pistachios and demerara sugar, then stir to combine.
  • Sprinkle crumble evenly over the cooked fruit. This can be done up to 1 day ahead, or frozen for up to 1 month. Bake for 20-25 mins if small, 40 mins if large, until golden. If baking from frozen, add 15 mins cooking time. Remove from the oven, cool slightly, then serve with ice cream, if you like.

RHUBARB & PEAR CRUMBLE

This has a lovely crunchy topping that tastes like flapjack, perfect comfort food

3 ripe pears
600g rhubarb
100g golden caster sugar
finely grated zest and juice of 1 orange
200g wholemeal flour
200g cold butter , diced
140g soft, light brown sugar
50g muesli or porridge oats
25g Grape-Nuts or Clusters breakfast cereal

Steps:

  • Heat oven to 200C/fan 180C/gas 6. For the topping, tip all the ingredients together and rub with your fingers until you have a rough pastry, then set aside in the fridge.
  • Peel the pears and chop into large chunks, then chop the rhubarb into finger-length batons. Tip into a large ovenproof dish and toss with the sugar and orange zest and juice. Crumble over the topping and bake for 40 mins until golden and bubbling at the sides. Leave to cool for 5 mins before spooning into bowls and serving with custard or ice cream.
