Number Of Ingredients 10

4 cups miniature marshmallows
1 cup 2% milk
1 tablespoon butter
2 teaspoons vanilla extract
1 cup cold heavy whipping cream
1/2 cup lightly salted dry roasted peanuts, coarsely chopped
1/2 cup salted cashews, coarsely chopped
1 chocolate crumb crust (9 inches)
1/4 cup hot caramel ice cream topping
2 tablespoons chocolate syrup, optional

Steps:

  • In a large saucepan, combine marshmallows and milk over medium heat, stirring often, until marshmallows are melted and mixture is smooth. Remove from heat. Transfer mixture to a bowl; stir in butter and vanilla. Place bowl in a pan of ice water. Gently stir until mixture is cool and begins to thicken, about 5 minutes. , In a large bowl, whip heavy cream at high speed of electric mixture until soft peaks form. Gently fold whipped cream into marshmallow mixture. In a small bowl mix together peanuts and cashews; reserve 1/4 cup for topping. Fold remaining nut mixture into marshmallow mixture. Spoon marshmallow mixture into prepared crumb crust. Sprinkle reserved 1/4 cup nuts over top of pie. Refrigerate, covered, at least 6 hours or overnight. Drizzle with caramel and if desired, chocolate topping before serving.

Graham Cracker Pie Shell
1 3/4 cups graham cracker crumbs
6 tablespoons (3/4 stick) unsalted butter, melted
Filling
1 (8-ounce) package cream cheese, at room temperature
1 cup creamy peanut butter (not all-natural)
1 cup confectioners' sugar
1 1/2 cups heavy cream, chilled
1 teaspoon pure vanilla extract
Marshmallow Whipped Cream
1 cup heavy cream, chilled
2 tablespoons confectioners' sugar
1 cup marshmallow cream
4 Mini MoonPies, halved crosswise, for garnish
1 tablespoon grated bittersweet or semisweet chocolate, for garnish

Steps:

  • For the pie shell: Preheat the oven to 350°F. Toss together the crumbs and butter in a medium bowl to moisten. Press the mixture onto the bottom and up the sides of a 9½-inch deep-dish pie pan. Refrigerate for at least 15 minutes to firm up the butter. Bake in the center of the oven for about 10 minutes, or until just set and fragrant. Place on a wire rack to cool to room temperature., For the filling: In a medium bowl using a handheld mixer, beat the cream cheese, peanut butter, and confectioners' sugar on medium speed until well-blended and smooth., In another medium bowl, beat the cream and vanilla on high speed until it holds firm peaks. Beat the whipped cream into the cream cheese mixture on low speed. Pour the filling into the crust and smooth the top. Refrigerate for at least 3 hours, or until set., For the topping: In a large bowl using the handheld mixer, beat the cream and confectioners' sugar on high speed until it holds soft peaks. Add the marshmallow cream and beat to firm peaks. Scoop the topping into a pastry bag fitted with a fluted tip and pipe it decoratively over the filling., Nestle the halved MoonPies into the whipped cream and sprinkle with the grated chocolate.

2 cups graham cracker crumbs
1/2 cup butter, melted
1/2 cup chopped peanuts
1/2 cup peanut butter
8 ounces cream cheese
1 cup powdered sugar
8 ounces frozen non-dairy topping, partially thawed (such as Cool Whip)
1 (3 1/2 ounce) package instant chocolate pudding mix
1 (3 1/2 ounce) package instant vanilla pudding
2 3/4 cups cold milk (2% or whole)
12 ounces frozen non-dairy topping, partially thawed
2/3 cup marshmallow cream
3 tablespoons chopped peanuts, if desired AND (to garnish) or 3 tablespoons mini chocolate chips, if desired (to garnish)

Steps:

  • For crust: Mix graham crumbs, melted butter and chopped peanuts together in bowl. Press into bottom of 13" x 9" baking pan. Bake at 350 for 15 minutes. Remove from oven and allow to cool---about 30 minutes.
  • 1ST LAYER: Cream PB and cream cheese. Beat in sugar. Blend in 8 oz whipped topping. Spoon scattered dallops on to cooled crust and gently spread evenly over the crust.
  • 2ND LAYER: Beat pudding mixes and milk until thick. Spoon scattered dallops on top of first layer and gently spread evenly.
  • 3RD LAYER: Beat 12 oz. whipped topping with marshmallow fluff and spoon scattered dallops over 2nd layer---gently spread evenly over 2nd layer. Sprinkle with chopped peanuts and/or chocolate chips; if desired.

graham cracker crust
1 cup marshmallow cream
1/2 cup peanut butter (crunnchy or smooth)
1 (8 ounce) package cream cheese
4 teaspoons sugar or 4 teaspoons artificial sweetener
1/2 pint whipping cream
1/2 cup milk

Steps:

  • Blend peanut butter, marshmallow cream and cream cheese in bowl.
  • Blend well.
  • Add sugar and whipping cream slowly as blending.
  • Stir in milk.
  • Blend well.
  • Pour mixture into pie crust.
  • Freeze until pie is thickened.
  • After pie has set for about 5-10 minutes, serve and enjoy!
