1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
  • Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

½ cup unsalted butter, melted
⅔ cup brown sugar
1 egg
1 teaspoon vanilla
⅓ cup peanut butter
1 cup all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 cup mini peanut butter cup

Steps:

  • In a bowl, add the butter and brown sugar, and stir to combine.
  • Add the egg and mix until fully incorporated.
  • Stir in the peanut butter and vanilla.
  • Add the flour, salt, and baking soda.
  • Gently fold in the peanut butter cups.
  • Chill dough for at least 1 hour.
  • Preheat oven to 350˚F (180˚C).
  • Once dough is chilled, scoop out a ball about 2 inches (5 cm) wide. Place on a parchment paper-lined baking sheet, leaving about 2-inches (5 cm) in between each ball of dough.
  • Bake for 8 to 10 minutes, until bottom edges of cookies are golden.
  • Let cookies cool. Can be stored in an airtight container up to 5 days.

These cookies were the treat we would enjoy when we traveled on family shopping trips to Ft. Worth many years ago. My sister, Carrie, always made them and put them in a foil-covered shoe box. By the time we got to Ft. Worth, they were all gone! Now my daughter makes these cookies for me, and at the age of 90, I still think they are the greatest treat.

1/2 cup butter, softened
1 cup packed dark brown sugar
1 large egg
1 tablespoon water
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 325°. In a small bowl, cream butter and brown sugar until light and fluffy. Beat in egg, water and vanilla. 1 cup packed light-brown sugar
1/2 cup (1 stick) softened unsalted butter
1 large egg
1 1/2 cups all-purpose flour, (spooned and leveled)

  • Preheat oven to 350 degrees. In a medium bowl, whisk together flour and baking powder; set aside.
  • In a large bowl, beat peanut butter, sugar, and butter until smooth. Beat in egg. Gradually add flour mixture, beating to combine.
