CHOCOLATE PEANUT BUTTER SHORTBREAD SQUARES



Chocolate Peanut Butter Shortbread Squares image

The milk-chocolate topping of these cookies looks like the result of masterful piping, but it's actually a cinch to make using a mold. Beneath the chocolate hides a layer of peanut butter on top of brown-sugar shortbread, all of them adding up to a treat that's creamy and crumbly and rich throughout.

Vegetable oil, cooking spray
2 cups all-purpose flour
1 1/4 teaspoons coarse salt
8 ounces (2 sticks) unsalted butter, softened
3/4 cup packed light-brown sugar
12 ounces milk chocolate, melted
1 cup creamy peanut butter

Steps:

  • Coat a 9 1/2-inch square baking pan with cooking spray. Line with parchment, leaving a 2-inch overhang on 2 sides, and coat parchment with spray.
  • Sift flour and salt into a medium bowl. Beat butter with a mixer on medium-high speed until fluffy, 3 to 5 minutes. With the mixer running, add sugar, and beat until pale and fluffy, about 2 minutes. Reduce speed to low. Add flour mixture, beating until just incorporated. Press dough evenly into pan. Cover, and refrigerate until firm, about 20 minutes.
  • Preheat oven to 300 degrees. Bake shortbread until golden brown and firm in center, 45 to 50 minutes. Let shortbread cool in pan on a wire rack.
  • Place a basket-weave mat, trimmed to fit pan, on a rimmed baking sheet, and spread melted chocolate evenly on mat. Refrigerate until firm, about 45 minutes.
  • Use parchment to unmold shortbread from pan, and trim edges to create a square. Spread peanut butter evenly on shortbread. Carefully center chocolate, mat side up, on top of peanut butter, and gently peel off mat. Cut shortbread into 1 1/2-inch squares. Shortbread will keep, covered, for up to 3 days.

⅔ cup white sugar
½ teaspoon vanilla extract
2 cups all-purpose flour
½ cup grape jelly

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C); line a baking sheet with parchment paper.
  • Beat the butter and sugar with an electric mixer in a large bowl until smooth; add the vanilla and continue to beat. Mix in the flour mixture until just incorporated. Roll dough into 1 1/2-inch balls and arrange on prepared baking sheets. Make a small hole in the center of each ball, using your thumb and finger; fill the holes with grape jam.
  • Bake in the preheated oven until lightly browned, about 14 minutes; allow to cool on baking sheet for 1 minute.
  • Put the peanut butter in a microwave-safe bowl, and cook in a microwave oven until soft for 10 - 30 seconds, checking every 10 seconds. Be careful not to overheat the peanut butter; do not let it bubble. Stir the vegetable oil through the heated peanut butter; drizzle over the warm cookies.

2/3 cup creamy peanut butter
2/3 cup light brown sugar, packed
1 1/2 teaspoons vanilla

3/4 cup peanuts, very finely chopped (use roasted or honey-roasted peanuts for better flavor)

Steps:

  • Heat oven to 350°F Combine the butter, peanut butter, and brown sugar in a large mixing bowl; beat with electric mixer until smooth and creamy. Beat in vanilla.
  • Slowly beat or stir in the flour and cornstarch until mixture holds together. Blend in the very finely chopped peanuts.
  • Roll out on a lightly floured board to about 1/4-inch thickness and cut with cookie cutters and place on an ungreased baking sheet or baking sheet lined with parchment paper.

1 1/4 cup all purpose flour
1/4 cup confectioner's sugar

3/4 cup milk chocolate chips

Steps:

  • Set oven to 325F Cream the butter and the peanut butter together in a stand mixer, with a hand mixer, or a wooden spoon. Beat in the vanilla. Whisk the dry ingredients together and add to the butter mixture. Mix until the dough comes together. Stir in the chips, and turn the dough out onto a piece of waxed paper. Gently pull the dough together and form it into a log. If it is still crumbly, work it with your hands until it holds together smoothly. Roll it up in the paper, smoothing the shape as you go. Twist the ends securely and refrigerate for at least a couple of hours. Slice the log into slices with a sharp knife. Not too thick, not too thin, about 1/3 inch. If a slice crumbles a bit, just smoosh the dough back together. These don't have to be perfect disks. Bake on a parchment or silpat lined baking sheet at 325 for about 12-14 minutes. The cookies will not be browned, and they may look undone, but don't over bake. One of the joys of shortbread cookies is that they fall apart and melt in your mouth. 1 1/2 c granulated sugar
1 1/2 c peanut butter - recommend creamy as it slices smoothly
1 tsp vanilla
2 eggs
1 1/2 c sifted flour

  • 1. Cream butter and sugar thoroughly. Add peanut butter mixing well. Add vanilla and eggs: beat well. Sift flour, soda and salt together. Stir into mixture. Shape dough into rectangular roll, wrap in plastic wrap or waxed paper, chill until firm (or freeze), slice and bake in preheated 350 degrees oven for 8-10 minutes, ungreased cookie sheet: Until lightly golden brown.
  • 2. This dough freezes well, may be sliced and baked frozen - may require slightly more baking time. (Keep frozen rolls of this dough on hand for fresh baked peanut butter cookies when wanted.)
  • 3. Can be made large (rounded tablespoons of stiff chilled dough) do not grease the pan. Do the classic criss-cross with a fork that has been dipped in sugar. Bake them for only 8 minutes and they come out well and make 4 dozen cookies.
  • 4. Allow cookies to cool on cookie sheets before removing to a wire rack. Over baked they become sandy dry crisps. Cooked to perfection they have a slight chewiness melt in your mouth treat.

1/2 c butter, room temperature
1/3 c peanut butter, creamy
1/2 Tbsp pure vanilla
1 1/4 c all purpose flour
1/4 c confectioners' sugar
1/2 tsp sea salt
3/4 c semi-sweet mini chocloate chips

Steps:

  • 1. In a mixing bowl, cream butter and peanut butter together until well combined and creamy. Add vanilla, mix well.
  • 2. Whisk together flour, confectioner's sugar and salt; add to peanut butter mixture; mix well. Add chocolate chip and stir until will combined. I used my hand to combine the chips. Dough is a little crumbly.
  • 3. Roll into a log, about 10-inches long; wrap in wax paper and refrigerate for 1 1/2 to 2 hours until good and firm or longer if you don't want to bake right away.
  • 4. Once firm, remove from refrigerator and slice (with sharp knife) about 1/3-inch slices. Place on cookie sheet lined with parchment paper. Bake 12 to 15 minutes in oven preheated to 325 degrees. NOTE: cookies my crumble some while slicing, simply press it back together with your fingers.
  • 5. Once cookies have baked, remove from oven and allow 5 minutes cooling time on cookie sheet before transfered to rack to complete cooling.
  • 6. NOTE: Made another batch and was short 1/4 cup of mini chips so I used 1/4 cup finely chopped walnuts. Turned out really good!

7 ounces unsalted butter, melted and cooled to just warm
1/2 cup granulated sugar
1/2 teaspoon table salt
2 cups unbleached all-purpose flour
2 tablespoons unbleached all-purpose flour
1/2 cup unsalted peanuts, finely chopped
1 cup creamy peanut butter (not natural but an emulsified variety such as Jif)
3 ounces unsalted butter, at room temperature
6 ounces confectioners sugar
1 teaspoon pure vanilla extract
5 ounces good-quality bittersweet chocolate, such as Lindt Excellence, chopped (about 1 cup)
1/2 cup plus 2 tbs. heavy cream

Steps:

  • Line a straight-sided 13x9-inch metal baking pan with foil, letting the ends create an overhanging edge for easy removal.
  • In a medium bowl, stir together the butter, sugar, and salt. Stir in the flour and peanuts to make a stiff dough. Press the mixture evenly into the bottom of the prepared pan. Prick the dough all over with a fork. Refrigerate the pan for 30 minutes (or freeze for 5 to 7 minutes), until the dough is firm.
  • Meanwhile, position a rack near the center of the oven and heat the oven to 325°F.
  • Bake the dough for 20 minutes, then decrease the oven temperature to 300°F and bake until the crust is golden-brown all over and completely set, 20 to 25 more minutes. Let the crust cool completely before topping.
  • Put the peanut butter and butter in the bowl of a stand mixer fitted with the paddle attachment and beat on medium speed until smooth, about 1 minute. Add about half of the confectioners' sugar to the mixer along with the vanilla extract and 1 Tbs. hot water. Beat on low speed until combined, then on medium speed until smooth and fluffy, about 1 more minute. Beat in the remaining sugar and mix, about 1 more minute, until the mixture is smooth and thick, like frosting. If the filling seems too stiff, add another 1 Tbs. hot water and beat for another minute.
  • With a knife or metal offset spatula, spread the filling over the fully cooled crust. The filling may not spread smoothly and evenly, but don't worry; the ganache will cover it.
  • Put the chocolate in a small heat proof bowl. In a small saucepan, bring the heavy cream to a boil. Remove from the heat and pour over the chocolate. Let sit for 3 minutes. Stir gently with a rubber spatula until combined and smooth.
  • Spread the ganache over the peanut-butter filling with a metal offset spatula to coat evenly. Let the bars sit at least 3 hours to allow the ganache to set before cutting (or refrigerate for 1 hour).
  • Carefully lift the bars from the pan using the foil sides and transfer them to a cutting board. Separate the foil from the bars by sliding a spatula between them. Cut the bars into 1-1/2-inch squares.

1/4 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
8 tablespoons (1 stick) cold, unsalted butter, diced into 1/2-inch cubes
1/4 cup good-quality, cold, lightly salted, smooth peanut butter
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees.
  • In a food processor, mix flour, sugars, cornstarch and salt. Add butter, peanut butter and vanilla and pulse 15 to 18 times, until dough just comes together when pressed. (Dough will be crumbly; do not overprocess.)

18 ounces sugar
3/4 ounce powdered agar
15 ounces cold water
2 cups glucose syrup
15 ounces raspberry juice
2 ounces dry roasted peanuts
1/2 ounce canola oil
2 tablespoons agave nectar
6 tablespoons unsalted butter
2 ounces sugar
1 large egg
1 tablespoon applesauce
2 ounces heavy cream
5 ounces pastry flour or all-purpose flour
1 tablespoon vanilla extract
1/8 teaspoon salt
2 ounces dark chocolate, chopped

Steps:

  • For the raspberry jelly: Combine the sugar and agar in a medium saucepan fitted with a candy thermometer. Whisk in the cold water and add the glucose syrup. Cook at a gentle boil while stirring until the mixture reaches 223 degrees F, about 8 minutes.
  • Remove the agar mixture from the heat and allow to cool to 194 degrees F. Add the raspberry juice, stir to incorporate and pour into 2-inch round silicone candy molds. Allow to set for 45 minutes in the refrigerator.
  • For the handcrafted peanut butter: Process the dry roasted peanuts in a spice grinder until smooth. Add the canola oil and process again, then add the agave nectar and process until smooth, about 1 minute. Transfer the peanut butter to a piping bag and set aside.
  • For the applesauce shortbread: Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  • Cream the butter and sugar together with an electric mixer until light, about 3 minutes. Add the egg, applesauce and cream and mix to incorporate, about 1 minute. Add the flour, vanilla and salt and mix until the dough holds together, about 1 minute.
  • Transfer the dough to a pastry bag and cut a 1/4-inch opening at the end. Pipe out 2-inch circles of the dough onto the prepared baking sheet and bake until golden brown, about 10 minutes. Let cool.
  • Transfer the peanut butter to a pastry bag, pipe the peanut butter onto the cooled shortbread cookies and spread it out to the edges. Top each with the cooled and set raspberry jelly.
  • To decorate: Put the chocolate in a heatproof medium bowl. Fill a medium saucepan with a couple inches of water and bring to a simmer over medium heat. Remove from the heat and set the bowl of chocolate over the water to melt. Stir until smooth and transfer to a piping bag.
  • Cut a small opening at the end of the pastry bag and decorate the tops of each cookie with spider legs.

1/2 teaspoon salt
2 cups plus 2 tablespoons (9 1/2 oz) all-purpose flour

Peanut Butter Filling
1 cup creamy peanut butter (not natural)
6 tablespoons unsalted butter, at room temperature
1 1/2 cups (6 oz) confectioners' sugar
1 teaspoon vanilla extract
Ganache Topping
5 oz. (about 1 heaping cup) good-quality bittersweet chocolate, finely chopped
1/2 cup plus 2 tablespoons heavy cream

Steps:

  • To make the crust: Line a metal 13x9 baking pan with foil, leaving an overhang on opposite sides to lift the bars out. Stir the butter, sugar and salt together in a medium bowl. Add the flour and peanuts, mixing until a stiff dough comes together. Press the dough evenly over the bottom of the prepared pan. Use a fork to prick the dough all over, then refrigerate for about 30 minutes, or until the dough is firm. Meanwhile, preheat oven to 325 F. Bake the crust for 20 minutes, then decrease oven temperature to 300 F and continue baking for another 20-25 minutes, or until the crust is golden brown and set. Transfer pan to a wire rack and let the crust cool completely. To make the filling: In the bowl of a stand mixer fitted with the paddle attachment, beat the peanut butter and butter on medium until smooth. Add half of the confectioners' sugar, the vanilla extract and 1 tablespoon of hot water to the bowl. Starting on low speed, then increasing to medium, beat until smooth and fluffy. Mix in the remaining confectioners' sugar until smooth. The mixture should be thick but not too stiff - if it is, add another tablespoon of hot water. Using an offset spatula, spread the peanut butter filling over the cooled crust. To make the ganache: Add the chocolate to a heatproof bowl. Bring the heavy cream to a boil in a small saucepan then pour over the chocolate. Let stand for about 3 minutes, then stir gently until smooth. Spread the ganache over the peanut butter filling in an even layer. Let sit until the ganache sets (at least 3 hours at room temperature, or 1 hour in the fridge). Lift the bars out using the foil handles, then cut into squares before serving.

1/3 cup blackberry jam

  • Spray bottom of 9-inch-diameter springform pan with nonstick spray. Beat butter and peanut butter in large bowl until smooth, about 2 minutes. Add sugar and salt and beat until fluffy, about 2 minutes. Beat in vanilla. Add flour; beat on low speed just until blended.
  • Transfer 1/3 cup dough to work surface. Shape into 1/2-inch-thick disk, place on plate, and freeze until hard, about 1 hour. Press remaining dough evenly over bottom of prepared pan. Spread jam over dough in pan, leaving 1/3-inch plain border. Refrigerate while dough disk freezes.

1 1/4 cup all purpose flour
1/4 cup confectioner's sugar
scant 1/2 tsp sea salt
3/4 cup milk chocolate chips

Steps:

  • Cream the butter and the peanut butter together in a stand mixer, with a hand mixer, or a wooden spoon. Beat in the vanilla. Whisk the dry ingredients together and add to the butter mixture. Mix until the dough comes together. Stir in the chips, and turn the dough out onto a piece of waxed paper. Gently pull the dough together and form it into a log. If it is still crumbly, work it with your hands until it holds together smoothly. Roll it up in the paper, smoothing the shape as you go. Twist the ends securely and refrigerate for at least a couple of hours. Slice the log into slices with a sharp knife. Not too thick, not too thin, about 1/3 inch. If a slice crumbles a bit, just smoosh the dough back together. These don't have to be perfect disks. Bake on a parchment or silpat lined baking sheet at 325 for about 12-14 minutes. The cookies will not be browned, and they may look undone, but don't over bake. One of the joys of shortbread cookies is that they fall apart and melt in your mouth. Let the cookies cool on the pan for 5 minutes before transferring to a rack.

Having searched for the best peanut butter cookie this recipe was my creation. You can use vegetable shortening but the texture and taste is very different from my shortbread version. The dough freezes well and you can have fresh baked cookies at anytime. Who can resist a buttery peanut butter cookie that melts in your mouth? Melt some chocolate chips and drizzle on top, sprinkle with chopped peanuts or coconut for a Holiday Cookie variety.

1 c butter
1 1/2 c granulated sugar
1 1/2 c peanut butter - recommend creamy as it slices smoothly
1 tsp vanilla
2 eggs
1 1/2 c sifted flour
1/4 tsp salt
1 tsp baking soda

Steps:

  • Cream butter and sugar thoroughly. Add peanut butter mixing well. Add vanilla and eggs: beat well. Sift flour, soda and salt together. Stir into mixture. Shape dough into rectangular roll, wrap in plastic wrap or waxed paper, chill until firm (or freeze), slice and bake in preheated 400 degrees oven for 10 minutes, ungreased cookie sheet.
  • This dough freezes well, may be sliced and baked frozen but may require slightly more baking time.
  • Can be made large (rounded tablespoons of dough) do not grease the pan. Do the classic criss-cross with a fork that has been dipped in sugar. Bake them for only 9 minutes and they come out well and make 4 dozen cookies.

150g golden icing sugar
225g butter , at room temperature
300g plain flour , sifted, plus extra for dusting
55g cocoa powder , sifted
300g golden icing sugar
50g butter , at room temperature
100g smooth peanut butter
2-3 tbsp milk

Steps:

  • Put everything for the shortbread in a food processor with a pinch of salt and pulse until the mixture comes together to form a dough. If it won't come together, take it out of the processor and bring it together with your hands. Tip onto a lightly floured work surface and shape into a log about 5cm in diameter. Wrap in cling film and chill for 1 hr.
  • Heat oven to 140C/120C fan/gas 2. Line two large baking sheets with baking parchment. Cut the log into about 32 rounds 6mm thick and line them up on the sheets. Bake for 22-25 mins. Leave to cool a little, then carefully remove and put on a wire rack to cool completely.
  • To make the buttercream, blitz all the ingredients in a food mixer or beat with an electric whisk, adding enough of the milk to make a soft mixture. Sandwich the shortbread together with the buttercream.

1 cup unsalted butter, softened
1 cup granulated sugar
1 egg yolk
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup smooth peanut butter
1/2 cup picing sugar
2 tablespoons unsalted butter
3/4 cup blueberry jam

Steps:

  • In a large bowl, beat butter with sugar and egg yolk using an electric mixer for 2 minutes until light and fluffy.
  • In a separate bowl, blend together flour, baking powder and salt until well combined.
  • Divide dough into two equal portions and wrap tightly in plastic wrap. Freeze dough for 1-4 hours.
  • Preheat oven to 350F.Line a 9x13-inch baking dish with parchment paper; set aside.
  • Remove dough from freezer. Shred dough using a coarse grater of food processor fitted with a metal shredding blade; return one portion of shredded dough to the freeer.
  • Arrange remaining dough in an even layer in the prepared baking dish; lightly pat dough down. Bake for 20 minutes or until lightly golden around edges; let cool for 20 minutes.
  • Meanwhile, blend peanut butter with icing sugar and butter until smooth and well combined.
  • Spread peanut butter mixture over shortbread base in an even layer.
  • Drop teaspoonfuls of jam over peanut butter and gently spread in an even layer.
  • Remove remaining dough from freezer and scatter over jam layer.
  • Bake for 20-25 minutes or until the top is set and lightly golden brown.
  • Transfer pan to a wire rack and cool completely. Cut into bars.
  • TIP: Try grape jelly or strawberry jam in place of the blueberry jam for a different flavour.

1 3/4 c sugar
2 sticks butter-room temp
1/3 c creamy peanut butter
1/2 tsp sea salt
2 lg eggs
2 c flour

Steps:

  • 350* Spread oats on baking sheet. Bake until lightlly toasted, about 10 min's. Cool. Grind in food processor. Comb sugar, butter, peanut butter and salt in bowl. Beat until well blended. Beat in eggs. Add flour and ground oats and beat just till blended. Chill dough until firm enough to roll out, about 2 hours. 325* Roll out dough between parchment paper to 1/8" thick. Dip 2" round cutter into flour and cut out rounds. Place rounds on ungreased sheets, 1" apart. Bake until gpolden, about 25 minutes. Cool completely.
