PEANUT BUTTER RICE KRISPIE TREATS
Peanut Butter Rice Krispie Treats are so easy to make, and the perfect recipe for your chocolate peanut butter cravings. Like a crispy, crunchy, chewy peanut butter cup!

Steps:
- Lightly grease a 9x13 inch pan with butter or non-stick cooking spray.
- In a large saucepan melt the butter, mini marshmallows and peanut butter together over low heat while stirring gently.
- Once melted, remove from the heat and stir in the Rice Krispies.
- Press the mixture into the pan (lightly spray your hands with non-stick cooking spray to avoid the mixture sticking to your hands).
- Add the chocolate chips (or chopped chocolate) to a medium-sized heatproof bowl. Microwave for 45-second intervals on medium power (not high or standard), stirring in between each burst.
- Once almost melted, stir until smooth and stir in the vegetable oil.
- Pour the chocolate over the top of the bars and let harden at room temperature (about 2 hours).
- Cut into squares and store in an airtight container at room temperature.

RICE KRISPIES ICE CREAM SANDWICHES
A favorite for children and grown ups alike. A combination of corn syrup, peanut butter, and Rice Krispies with your choice of ice cream or yogurt sandwiched in between.Place a piece of plastic wrap on top of the cereal mixture and then press down with your hands if you wish to keep your hands clean. I keep a plastic quilt ruler with my baking supplies for measuring squares and pastry. From a magazine clipping. No baking required!

Steps:
- In a medium bowl, stir together corn syrup and peanut butter.
- Add cereal and stir until well coated.
- Press mixture firmly and evenly into a buttered 9"x13" pan.
- Place in freezer until firm, about 15 minutes.
- Cut cereal mixture in half crosswise.
- Spread one half with softened ice cream or frozen yogurt.
- Top with second half of Rice Krispie mixture to make one very large sandwich.
- Freeze until firm, about 2 hours.
- Cut large sandwich into 2" portions (using ruler again).
- Wrap individually in foil paper or freezer wrap and store in freezer until needed.

PEANUT BUTTER RICE KRISPY TREAT ICE CREAM SANDWICHES
Steps:
- Line bottom and sides of a 13x9x2 pan with foil, allowing foil to overlap sides of pan. Stir together corn syrup and peanut butter in a large bowl until thoroughly combined. Add cereal and stir until cereal is coated with peanut butter mixture. Spread half of mixture evenly in baking pan. Spread ice cream over cereal mixture. Freeze until firm. Spread remaining cereal over top, cover with plastic wrap, and freeze again. Once firm, remove plastic wrap and use ends of foil to remove sheet from pan. Place sheet (of uncut sandwiches) on a level surface, and cut into sandwiches of desired size.
CHOCOLATE PEANUT BUTTER RICE KRISPIE TREATS RECIPE

- Cook the sugar and Karo syrup together until it boils.
- Then remove from heat. Add the peanut butter and stir til well blended. Then add your rice Krispies. (You'll want to use a BIG bowl). Stir in and press into a greased 9 x 13 pan.
- Melt and spread on top- 1 cup milk chocolate chips and 1 cup butterscotch chips. I just melt them in my glass measuring cup in the microwave. Don't over melt them or it will seize.

- Preheat oven to 350°. In a large bowl, cream shortening, peanut butter, 1/2 cup sugar and brown sugar until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well., Roll into 1-in. balls; roll in remaining sugar. Place 1 in. apart on ungreased baking sheets. Flatten with a fork, forming a crisscross pattern. , Bake 9-11 minutes or until set (do not overbake). Remove to wire racks to cool completely., In a microwave, melt candy coating; stir until smooth. Spread a heaping teaspoonful on the bottom of each cookie; place chocolate side up on waxed paper until set., To make ice cream sandwiches, place 1/4 cup ice cream on the bottom of half of the cookies; top with remaining cookies. Wrap in plastic; freeze on a baking sheet overnight.
