2 large bananas (mashed)
1 cup peanut butter (can sub for another nut butter or nut free alternative)
1/4 cup coconut oil
1 tablespoon Cinnamon (optional)

Steps:

  • Line a 12 count muffin tray with muffin liners and set aside.
  • In a large mixing bowl, add your mashed bananas and set aside.
  • In a microwave safe bowl or stovetop, melt your coconut oil with your nut butter. Pour into the mixing bowl and stir through the mashed banana until fully incorporated.
  • Divide mixture amongst muffin tins and refrigerate or freeze until firm.v

3 tablespoons unsweetened cocoa powder
2 cups white sugar
1/2 cup milk
1/2 cup butter
3 cups quick cooking oats
1/2 cup crunchy peanut butter
1 teaspoon vanilla extract

Steps:

  • In a medium saucepan, bring the cocoa, sugar, milk and butter to a boil over medium heat. It's important to bring these to a boil verrrrry slowly. Once they reach a rolling boil, boil for 60 seconds. Use a timer!
  • Pull the saucepan off the heat after boiling. Add in the oats, peanut butter and vanilla. Mix well.
  • Allow the mixture to cool for 1 minute and then drop by teaspoonfuls onto wax paper. Once cookies are placed on wax paper, allow them to cool until hardened.

1/2 banana, mashed
3/4 cupbaking stevia or 1 1/2 cup sweetener of choice that measures like sugar
1/2 cup low-fat milk
4 tablespoons cocoa powder
3 cups quick-cooking oats
1/8 teaspoon salt

Steps:

  • Put mashed banana and peanut butter together in a large skillet and cook over medium-low heat, stirring until peanut butter and banana are combined. Once the peanut butter is melted, take the skillet off the heat and add the rest of the ingredients, stirring until everything is well combined. Drop cookie dough (about 1/8th cup per cookie) on a baking sheet lined with wax or parchment paper (or foil sprayed with cooking spray), patting cookies into desired shape. 1 large ripe banana
2/3 cup butter or 2/3 cup margarine
2 teaspoons vanilla extract
2 1/2 cups rolled oats
1/2 cup packed brown sugar
1 cup semi-sweet chocolate chips
1/2 cup peanut butter

Steps:

  • Finely chopped banana (1-1/4 cups).
  • Melt butter in large skillet over medium heat; stir in vanilla.
  • Add oats and brown sugar.
  • Heat and stir 5 minutes.
  • Set aside 3/4 cup oat mixture.
  • Press remaining oat mixture into greased 9-inch square baking pan.
  • Sprinkle banana over crust.
  • Melt chocolate chips and peanut butter together over low heat.
  • Pour and spread over banana.
  • Sprinkle with reserved oat mixture; press down lightly.
  • Chill 2 hours before cutting.
  • Store in refrigerator.
