¾ cup butter, softened
¾ cup peanut butter
¾ cup white sugar
¾ cup brown sugar
1 ½ cups all-purpose flour
1 ½ cups rolled oats
1 ½ teaspoons vanilla extract
2 eggs
2 teaspoons salt
½ cup peanut butter, or as needed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a jelly-roll pan.
  • Beat butter, 3/4 cup peanut butter, white sugar, and brown sugar together in a large bowl until creamy. Add flour, oats, vanilla extract, eggs, and salt; stir until just mixed. Spread batter into the prepared jelly-roll pan.
  • Bake in the preheated oven until lightly browned, about 20 minutes. Cool brownies in the pan for 10 to 15 minutes. Spread 1/2 cup peanut butter on top of brownies.

These brownies have been a favorite in my family since I was a small child. Because they're so popular, I usually double the recipe. Great with chocolate frosting!

½ cup peanut butter
⅓ cup margarine, softened
⅔ cup white sugar
½ cup packed brown sugar
2 egg
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C ). Grease a 9x9 inch baking pan.
  • In a medium bowl, cream together peanut butter and margarine. Gradually blend in the brown sugar, white sugar, eggs, and vanilla; mix until fluffy. Combine flour, baking powder, and salt; stir into the peanut butter mixture until well blended.
  • Bake for 30 to 35 minutes in preheated oven, or until the top springs back when touched. Cool, and cut into 16 squares.

Peanut Butter-Oatmeal Brownies With Peanut Butter Frosting image

The trick with these is not to overbake, throw in some chocolate or peanut butter baking chips if desired :) You could mix this by hand, but there is a lot of dough and it is quite thick so I recommend using a stand mixer to mix the batter, if you prefer a really sweet bar then increase the brown sugar to 1-1/4 cups.

1 cup butter or 1 cup margarine, softened
1 1/4 cups white sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons maple extract (or use 2-3 teaspoons vanilla)
1 1/4 cups peanut butter
2 cups large-flake oats
2 cups flour
1/2 teaspoon cinnamon
1 teaspoon baking soda
1/2 cup chopped peanuts (optional)
1/2 cup butter or 1/2 cup margarine, softened
1 cup creamy peanut butter
3 tablespoons milk (more as needed, or use whipping cream)
2 cups confectioners' sugar

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch baking pan.
  • In a large bowl using an electric mixer cream the butter or margarine with white and brown sugar until well creamed.
  • Mix in the peanut butter.
  • Add in eggs and maple or vanilla extract; mix until well blended (about 3 minutes).
  • In a bowl combine the flour with oats, baking soda and cinnamon; add to the creamed mixture and mix until well combined.
  • Mix in chopped peanuts.
  • Transfer to baking dish, then spread out evenly (the mixture will be quite thick so use you hands to spread in the dish).
  • Bake for about 20-22 minutes.
  • Cool completely before frosting.
  • For the frosting; in a bowl beat butter or margarine and peanut butter until fluffy using an electric mixer.
  • Gradually mix in confectioners sugar, when the mixture stars to get thick add in the milk or cream a tablespoon at a time until a desired spreadable consistency is achieved.
  • Spread over the cooled brownies.
  • Cut into bars.

¾ cup oat flour ((same as ¾ cup oats blended into flour))
¾ cup unsweetened cocoa powder
¾ cup granulated sugar
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, melted ((or coconut oil for dairy-free))
½ cup creamy peanut butter
2 large eggs
2 tablespoons water
1 teaspoon vanilla extract
1 cup semisweet chocolate chips, (divided)

Steps:

  • Preheat the oven to 350ºF. Grease a 8X8" baking pan using non-stick cooking spray. Set aside.
  • Make the oat flour by placing ¾ cups rolled or quick oats in a high-powered blender or a food processor. Blend the oats until it turns into a fine, powdery flour, about 30 seconds - 1 minute.
  • To the oat flour add the cocoa powder, sugar, baking soda, and salt. Process to combine.
  • Add the melted and cooled butter or oil, peanut butter, eggs, water, and vanilla. Mix to combine well. Stir in ¾ cup chocolate chips. The batter will be very thick.
  • Spread into the prepared pan. Sprinkle the remaining ¼ cup chocolate chips on top. Bake for 18-20 minutes, or until a toothpick inserted in the middle does not come out with wet batter. Cool for 30 minutes before slicing.

225g crunchy peanut butter
200g bar dark chocolate, broken into pieces
280g soft light brown sugar
3 medium eggs
100g self-raising flour

Steps:

  • Set aside 50g each of the peanut butter and chocolate. Heat oven to 180C/160C fan/gas 4 and line a 20cm square baking tin with baking parchment. Gently melt remaining peanut butter, chocolate and all the sugar in a pan, stirring occasionally, until the sugar has just about melted. Transfer mix into a bowl to cool down slightly. Turn off heat and use a wooden spoon to beat in the eggs one by one. Stir in the flour and scrape into the tin.
  • Melt reserved peanut butter in the microwave on High for 45 secs, or in a pan, until runny, then drizzle over the brownie. Bake for 20-25 mins until it has a crust, but the middle still seems slightly uncooked.
  • Melt reserved chocolate, drizzle over the brownie, then cool in the tin before cutting into squares.

1 box (1 lb 2.3 oz) Betty Crocker™ fudge brownie mix
1/4 cup water
1/2 cup vegetable oil
2 eggs
3/4 cup creamy or crunchy peanut butter

  • Heat oven to 350°F. Grease bottom of 13x9-inch pan with shortening or cooking spray. In medium bowl, stir brownie mix, water, oil and eggs until well blended. Spread in pan.
