These cookies are great for kids of all ages. I usually double the recipe when I make them. Using a cookie scoop and soda bottle cap to make the indentations results in uniform cookies, which makes a nice presentation. But you can improvise with other lids; just aim for something about the size of a quarter. Use any variety of jelly, but I do not recommend jelly with chunks of fruit, like strawberry. Attempting to move the cookies prior to cooling completely will cause them to break.

1 ⅔ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter
⅔ cup creamy peanut butter
½ cup white sugar
½ cup brown sugar
½ teaspoon vanilla extract
1 egg
¾ cup seedless raspberry jam

Steps:

  • Sift flour, baking soda, and salt together in a bowl.
  • Beat butter, peanut butter, white sugar, brown sugar, and vanilla together in a separate bowl with an electric mixer until light and fluffy, 1 to 2 minutes. Scrape sides of bowl with a rubber spatula. Add egg to butter mixture and beat on medium speed until blended. Scrape side of bowl down again.
  • Beat flour mixture into butter mixture on low speed until just blended. Scrape bowl and mix a few more seconds.
  • Scoop dough into 2 tablespoon-sized balls and arrange on a baking sheet. Cover baking sheet and refrigerate at least 4 hours (overnight is ideal).
  • Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper and arrange cookie balls atop paper.
  • Bake cookies in the preheated oven until partially cooked, 11 minutes.
  • Place raspberry jam in a bowl and stir until syrup consistency.
  • Press a soda bottle cap into the center of each cookie until edges of cookies bulge and begin to crack, making an indentation. Fill each indentation with about 1 teaspoon jam.
  • Bake cookies until edges are lightly browned, 7 minutes longer. Cool cookies completely on the baking sheet before transferring to a wire rack.

½ cup grape jelly

  • Preheat an oven to 350 degrees F (175 degrees C); line a baking sheet with parchment paper.
  • Beat the butter and sugar with an electric mixer in a large bowl until smooth; add the vanilla and continue to beat. Mix in the flour mixture until just incorporated. Nonstick cooking spray
1 cup unsalted roasted peanuts
1 cup old-fashioned rolled oats
1 cup all-purpose flour
1/4 teaspoon fine salt
1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup of your favorite jelly (I like grape)

Steps:

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and spray with nonstick cooking spray.
  • Pulse the peanuts in a food processor until they are a fine meal. Add the oats, flour and salt and process until blended. Transfer to a bowl. In the food processor, combine the butter and sugar and process until light and fluffy. With the motor running, add the egg and vanilla. Process until smooth. Add half of the dry ingredients back into the processor and pulse to combine. Add the remaining half and pulse again until combined.
  • Drop the cookie dough by the tablespoonful (I use an ice cream scoop) onto the prepared baking sheets, leaving about 1 1/2 inches between the cookies. Use your thumb to make a thumb print in each cookie.
  • Bake until the bottoms of the cookies are lightly golden brown, 12 to 15 minutes. Cool on a wire rack.
  • Stir the jelly in a small bowl to loosen it up and fill each thumbprint with about 1 teaspoon.

Steps:

  • Grease a 9-by-13-inch pan with butter, and line the bottom with parchment paper. Grease the parchment, and coat inside of pan with flour; set aside. Place butter and sugar in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium-high speed until fluffy, about 2 minutes. On medium speed, add eggs and peanut butter; beat until combined, about 2 minutes.
  • Whisk together salt, baking powder, and flour. Add to bowl of mixer on low speed; combine. Add vanilla. Transfer two-thirds of mixture to prepared pan; spread evenly with offset spatula. Using offset spatula, spread jam on top of peanut-butter mixture. Dollop remaining third of peanut-butter mixture on top of jam. Sprinkle with peanuts.

1/2 cup (6 ounces) jam of choice
1 1/2 cups (6 ounces) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups (12 ounces) unsalted butter, at room temperature
1 cup (7 ounces) light brown sugar, firmly packed
1 cup (8 ounces) smooth peanut butter
2 large eggs, at room temperature
1 teaspoon pure vanilla extract

Steps:

  • Prepare the Peanut Butter Base Dough. While the dough is still streaky, remove the bowl from the mixer and scrape the paddle clean.
  • Lightly flour a clean, flat work surface.
  • Scrape the dough onto the lightly floured surface. Lightly flour your hands and finish mixing the dough by using a light kneading motion, working until the dough is just blended. Do not overwork the dough, you just want to be certain that all of the ingredients are just blended together.
  • Cover the dough tightly in plastic wrap. Refrigerate for at least 1 hour or until firm.

  • If you wish to create the traditional crisscross pattern on top of the cookies, press the surface using the tines of a fork.

  • Using a tablespoon or small ice-cream scoop, make mounds of dough. Roll the dough into balls about 1 1/2 inches in diameter. Place the balls, about 2 inches apart, on the prepared baking sheets. Using your palm, gently flatten the top slightly. If you wish to create the traditional crisscross pattern on top of the cookies, press the surface using the tines of a fork.
  • When all of the cookies are formed, place in the oven and bake for about 8 minutes, or until golden brown around the edges.
  • Remove from the oven and transfer the cookies to wire racks to cool.
  • Store, airtight, at room temperature.

Peanut Butter and Jelly Cookie Sandwiches are two chewy peanut butter cookies with strawberry jam filling. They're quick, simple, and sweet!

2 1/4 cups (275g) all purpose flour, properly measured
¼ teaspoon baking soda
¼ teaspoon salt
½ cup (110g) unsalted butter, room temperature
1 cup (240g) light brown sugar, packed
1/3 cup (70g) cup granulated sugar + 1/4 cup (53g) for rolling
2 large eggs (100g), room temperature
2 teaspoons (8g) pure vanilla extract
2/3 cup (192g) creamy peanut butter
1/2 cup (110g) unsalted butter, room temperature
1 1/4 cup (150g) powdered sugar
1/4 cup (80g) strawberry preserves, room temperature
1 tablespoons (15g) milk
1/3 cup (107g) strawberry preserves, room temperature

Steps:

  • Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper to ensure the cookies come off cleanly and in one pieces after baking.
  • In a medium bowl, whisk all purpose flour, baking soda, and salt together.
  • In a large bowl with a hand mixer or in the bowl of your stand mixer fitted with a paddle attachment, beat room temperature butter, light brown sugar, and 1/3 cup granulated sugar together on medium-high speed until smooth, creamy, and fluffy. This should be 2-3 minutes of consistent mixing.
  • Add room temperature eggs to the dough and beat on medium speed until incorporated.
  • Mix vanilla extract and creamy peanut butter into the dough on medium speed until smooth. Scrape down the sides and bottom of the bowl with a rubber spatula before mixing again to make sure the ingredients are properly incorporated.
  • Carefully, add the dry ingredients to your wet batter on low speed and in several additions to avoid making a mess. Mix only until you see the dry ingredients disappear into the batter, as mixing past this point can create dense cookies.
  • Roll the balls into 1 tablespoon-sized (35g) dough balls. Roll each ball in the extra 1/4 cup of sugar before placing them on the baking sheet.
  • Bake the cookies for 8-12 minutes or until the tops are cracked, the centers look domed and slightly soft, and the edges are light golden brown.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack or plate to finish cooling.
  • In a large bowl with a hand mixer or in the bowl of a stand mixer fitted with a paddle attachment, beat room temperature butter on medium-high speed until smooth.
  • Slowly, add powdered sugar to the mixture, beating on low speed to avoid the powdered sugar spilling out of the bowl. Once the powdered sugar is fully incorporated, beat for another minute to ensure the mixture is smooth.
  • Add the room temperature strawberry preserves to the frosting. Beat until combined. Scrape down the sides and the bottom of the bowl with a rubber spatula to ensure the ingredients are properly incorporated throughout.
  • If desired, transfer the frosting to a piping bag or a zippable plastic bag with the corner snipped off for better control.
  • Top half of your cooled peanut butter cookies with the strawberry jam frosting.
  • Heat 1/3 cup (107g) of strawberry preserves in the microwave for about 10 seconds before stirring aggressively with a spoon to smooth it out. If desired, transfer the jam to a piping bag or zippable plastic bag with part of the corner snipped off for more control.
  • Top each frosted cookie with a dollop of strawberry jam as desired. For cleaner cookies, keep the jam towards the center of the cookie.
  • Add an unfrosted cookie to the top of each frosted and topped cookie to create a cookie sandwich.
  • For best results, allow the sandwiches to rest to firm up before storing at room temperature tightly covered or in an airtight container for up to 4 days.

These blue ribbon winning cookies have the peanut butter and jelly mixed right into the cookie dough. They won a blue ribbon at my local 2017 fair. Decorated with flowers made with Skippy P. B. Bites and peanut halves. Perfect with a cold glass of milk!

1/4 cup shortening
1/4 cup butter, softened
1 cup light brown sugar
3/4 cup smucker's goober grape peanut butter and grape jelly stripes
1 egg
1 tsp. vanilla extract
1-1/2 cups unbleached all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 cup powdered sugar
1/4 cup creamy peanut butter
2-4 tsps. milk or heavy cream
5.3 oz. skippy p. b. bites
6 oz. peanuts, halved

Steps:

  • 1. Preheat oven to 350 degrees F. Line baking sets with parchment paper; set aside.
  • 2. In a medium bowl, cream shortening, butter and brown sugar until smooth. Stir in egg, milk and vanilla.
  • 3. In a seperate bowl, combine flour, baking soda and salt. Stir into the peanut butter mixture until well blended.
  • 4. Using a medium cookie scoop, place cookie dough two inches apart on cookie sheets. Eight cookies per sheet. Bake at 350 degrees for 8 - 10 minutes. Remove from oven and allow to cool on cookie sheets for 4 minutes before removing to cooling racks to cool completely.
  • 5. Meanwhile, prepare the peanut butter drizzle. Combine powdered sugar, creamy peanut butter, vanilla and small amounts of milk or heavy cream until desired consistency is reached. Put peanut butter drizzle in a piping bag, squeeze filling to bag tip, tie bag, snip off tip end and drizzle glaze over each cookie. Place a P.B bite in the center of each cookie and add peanut halves for flower petals on each cookie if desired.
