PEANUT BUTTER AND JELLY CRACKER COOKIES
A little bit salty and a little bit sweet, these chocolate covered cracker cookies make the perfect afternoon snack.

Steps:
- Spread 1 teaspoon of peanut butter on one side of 24 of the crackers.
- Spread 1 teaspoon of jelly on one side of the remaining 24 crackers.
- Sandwich the crackers together, with the peanut butter and jelly together.
- Melt the candy coating in a heavy saucepan over low heat. Alternately, heat in the microwave in a microwave safe bowl on 50% power until melted.
- Dip each cracker sandwich in to the chocolate, completely covering with chocolate. Let as chocolate drip off, then transfer to wax paper to cool completely before serving.
PEANUT BUTTER AND JELLY BARS
Steps:
- Preheat the oven to 350 degrees F.
- Grease a 9 by 13 by 2-inch cake pan. Line it with parchment paper, then grease and flour the pan.
- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light yellow, about 2 minutes. With the mixer on low speed, add the vanilla, eggs, and peanut butter and mix until all ingredients are combined.
- In a small bowl, sift together the flour, baking powder, and salt. With the mixer on low speed, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.
- Spread 2/3 of the dough into the prepared cake pan and spread over the bottom with a knife or offset spatula. Spread the jam evenly over the dough. Drop small globs of the remaining dough evenly over the jam. Don't worry if all the jam isn't covered; it will spread in the oven. Sprinkle with chopped peanuts and bake for 45 minutes, until golden brown. Cool and cut into squares.

- In a microwave-safe bowl, heat cream cheese on high for 15 seconds or until very soft. Add peanut butter and honey; stir until smooth. Spread over half of the crackers; top with remaining crackers., In a microwave, melt chocolate chips and shortening; stir until smooth. Heat milk; stir into chocolate mixture. , Dip each cracker sandwich in chocolate mixture, allowing excess to drip off. Place on waxed paper-lined baking sheets; decorate as desired. Refrigerate for 45 minutes or until set.
