PEANUT BUTTER AND JAM (PBJ) OATMEAL PROTEIN BARS
I was created this bar because I was looking for something really yummy yet healthy to eat before I go running early in the morning. I needed something with a bit less sugar and carbs and a bit more protein than usual. This bar is also high in fiber, lignans, and omega 3 fats. I used thick rolled oats, not quick oats because they digest slower (lower GI) and ultimately keep your blood sugar nice and steady and hunger at bay. I also use a reduced sugar jam, you could also try a sugar free jam. I really love PBJ so I used a PBJ bar recipe and totally mixed it up and made it healthy and higher in protein. Not too sweet and so filling! Enjoy!

Steps:
- Grease a 13x 9 x 2-inch pan.
- Combine flour or low carb baking mix, oats, salt and baking soda. Beat oil together with sugars and beat till fluffy.
- Add egg substitute or 2 eggs, peanut butter, milk and vanilla. Beat well.
- Add dry ingredients to beaten mixture, beating until smooth.
- Spread mixture in pan. Dot with jam or jelly and swirl.
- Bake at 350°F for 25 to 30 minutes. Watch closely!
- Let cool. Cut into bars.

Steps:
- Line bottom and sides of a 13 x 9 inch pan with aluminum foil, allowing 2 to 3 inches to extend over sides; lightly grease foil.
- Stir together cake mix and oats in large bowl.
- Stir in butter with a fork until mixture is crumbly and dry ingredients are moistened.
- Press half of oat mixture evenly onto bottom of pan.
- Stir together peanut butter and preserves in a medium bowl.
- Gently spread peanut butter mixture evenly over oat mixture in pan.
- Sprinkle peanuts and remaining half of oat mixture evenly over peanut butter mixture.
- Bake at 375F for 30 minutes or until top is golden brown.
- Let cool in pan on a wire rack 1 hour or until completely cool.
- Lift baked bars from pan, using foil sides as handles.
- Place on cutting board and cut into 24 bars.

- 1. Preheat the oven to 350 degrees. Grease and dust a 9 x 13 baking pan with the 2 tablespoons of butter and 2 tablespoons flour. Shake out the excess flour.
- 2. In a large bowl with an electric mixer, cream the butter and sugar on medium speed until light yellow, about 2 minutes, and nice and smooth.
- 3. With a clean hand, rub the oil on the inside of a 2-cup measuring cup before measuring the peanut butter. It won't stick that way.
- 4. With the mixer on low, add the vanilla, eggs, and peanut butter and mix until well combined.
- 5. In a small bowl, sift together the flour, baking powder, and salt. With the mixer on low, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.
- 6. Spread two thirds of the dough in the prepared pan, using a knife to spread it evenly. Spread the jam evenly over the dough. Add the remaining dough by the tablespoonful and spread gently over the jam. The remaining batter will not completely cover the jam which is a good thing since the beautiful cherry jam will shine through. Sprinkle with the chopped peanuts.
- 7. Bake for 45 minutes, until golden brown. Cool and cut into 20 bars.

- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray (without flour).
- In medium bowl, mix oats, flours, baking powder, baking soda and 3/4 cup of the peanuts with whisk; set aside. In large bowl, beat butter, sugar and peanut butter with electric mixer on medium speed until blended. Beat in eggs. Gradually add oat mixture, beating on low just until combined.
- Press two-thirds (about 3 1/2 cups) of the dough in pan. Spread jam over crust. Drop heaping spoonfuls of remaining dough over jam. Sprinkle with remaining 1/4 cup peanuts.
- Bake 25 to 30 minutes or until set and golden brown. Cool in pan on cooling rack 1 hour. Refrigerate 30 minutes. Cut into 6 rows by 4 rows. Store in refrigerator.

- Combine margarine, peanut butter, sugars and egg.
- Then add flour and beat until crumbly.
- Reserve one cup of the crumbs.
- Press remaining crumbs into an 8" square glass dish.
- Place on inverted plate in microwave.
- Cook at medium 6 1/2 minutes or until base looks dry.
- Spread jam to base within 1/2" of edge.
- Sprinkle with reserved crumbs.

GRAHAM PEANUT BUTTER AND JAM BARS
If you are a peanut butter lover then you will love this! Your favorite jam between layers of delicious peanut butter and chocolate cookie-like dough, use you favorite flavor of jam or jelly for this, I made this once with apricot preserves and once with strawberry both were great! - Set oven to 350 degrees (set oven rack to second-lowest position).
- Grease an 11 x 7-inch baking dish.
- In a small bowl mix together flour with graham craker crumbs, baking soda and salt.
- In a another bowl combine butter, white and brown sugar, peanut butter, egg and vanilla; using an electic mixer at low speed mix until completely combined (batter will be thick).
- Mix in chopped nuts and chocolate chips (I use my hands to mix in as the batter is very thick).
- Press just over half of the mixture into the pan.
- Bake for 15 minutes.
- Remove from oven and spoon the jam by heaping teaspoonfuls all over the crust (this will take a few minutes).
- Using you hands crumble the remaining mixture over the top of the jam (it does not have to cover completely).
- Return to oven and bake for another 20 minutes (do not overbake!).
- Cool then cut into bars.

- Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
- In large bowl, stir all Cookie Base ingredients until soft dough forms. Press dough in bottom of pan using floured fingers. Bake 15 to 18 minutes or until edges are light golden brown. Cool completely, about 30 minutes.
