Stephen's Chocolate Peanut Butter Marble Fudge image

After hunting for the 'perfect' recipe, I decided to experiment on my own. This received rave reviews. We now just refer to it as "Stephen's Fudge". This has been adapted from an Eagle Brand recipe. Cooking time is chilling time. UPDATE Aug 18/08: I'm very happy to say that this recipe won Second Place in the Eagle Brand Category at our local fair.

2 cups milk chocolate chips
1 cup peanut butter chips
1 (300 ml) can sweetened condensed milk (not evaporated)
2 teaspoons vanilla extract
4 -5 tablespoons peanut butter (I use extra creamy)

Steps:

  • Lightly spray an 8 x 8 pan with oil. Lining it with parchment paper also works well.
  • In a medium saucepan, mix together chocolate chips, peanut butter chips and sweetened condensed milk. Heat at medium temperature until chips have melted and mixture is smooth.
  • Remove from heat and add the vanilla.
  • Spread in the prepared pan.
  • While still warm, add dollops of the peanut butter, and swirl with a knife to create the marble effect.
  • Chill for at least 3 hours or until firm before cutting.

Unsalted butter, softened, for brushing
1 14-ounce can sweetened condensed milk
2 cups bittersweet chocolate chips
2 pinches salt
2 cups peanut butter chips

Steps:

  • Line an 8-inch-square baking pan with foil, pressing it into the corners and up the sides; leave an overhang on 2 sides. Brush the foil with butter.
  • Combine 3/4 cup condensed milk, the chocolate chips and a pinch of salt in a medium saucepan. Combine the remaining condensed milk, the peanut butter chips and a pinch of salt in a separate saucepan. Put both pans over low heat and cook, stirring occasionally, until the chips are melted and smooth.
  • Spoon the chocolate mixture into the prepared pan, leaving spaces between the spoonfuls. Spoon the peanut butter mixture into the gaps. Brush an 8-inch square of parchment paper with butter and lay it directly on top of the fudge; press to flatten evenly and fill any gaps. Refrigerate until firm, about 45 minutes. Lift the foil to remove the fudge from the pan and cut into 1-inch squares. Store up to 1 week in an airtight container.

3 cups white sugar
1 cup evaporated milk
¼ cup cocoa
½ cup peanut butter
1 tablespoon margarine
1 tablespoon butter

Steps:

  • Butter one 9x9 inch pan.
  • Combine the sugar, evaporated milk and cocoa in saucepan. Stir over high heat until mixture comes to a rolling boil. Lower heat to medium and continue cooking to a soft ball stage.
  • Remove from heat, add peanut butter and margarine. Beat by hand until creamy; pour into prepared pan. Allow to cool and cut into squares.

2 cups milk chocolate chips
⅔ cup semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
1 pinch salt
½ cup peanut butter
1 tablespoon vanilla extract
½ cup peanut butter chips
¼ cup milk

Steps:

  • Line an 8- or 9-inch square baking pan with parchment paper, leaving 2 to 3 inches overhang on the sides.
  • Combine milk chocolate chips, semisweet chocolate chips, condensed milk, and salt in a large microwave-safe bowl. Microwave on high until mostly melted, about 2 minutes. Stir with a soft spatula until creamy. Mix in peanut butter and microwave for 1 minute. Add vanilla extract and stir until smooth. Transfer to the prepared baking pan and smooth top with a spatula.
  • Combine peanut butter chips and milk in a small microwave-safe bowl. Microwave on high for 1 minute. Stir, and continue to microwave in 30 second increments, stirring in between, until mixture is smooth. Pour on top of the fudge mixture and smooth top with a spatula. Place in the refrigerator until firm, about 2 hours.

6 cups sugar
1 can (12 ounces) evaporated milk
1 cup butter or margarine
1 package (8 ounces) cream cheese, softened
2 jars (7 ounces each) marshmallow creme or 1 package (10 1/2 ounces) miniature marshmallows
1 tablespoon vanilla
1 package (12 ounces) white baking chips (2 cups)
1 cup milk chocolate chips
1 package (6 ounces) semisweet chocolate chips (1 cup)
2 tablespoons baking cocoa
1/2 cup chopped nuts, if desired

Steps:

  • Butter rectangular pan, 13x9x2 inches, or line with aluminum foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan. Heat sugar, milk, butter and cream cheese to boiling in 6-quart Dutch oven over medium-high heat and cook 6 to 8 minutes, stirring constantly. Reduce heat to medium. Cook about 10 minutes, stirring occasionally, to 225° on candy thermometer; remove from heat.
  • Quickly stir in marshmallow creme and vanilla. Pour 4 cups hot marshmallow mixture over white baking chips in large bowl; stir to mix. Stir milk chocolate chips, semisweet chocolate chips, cocoa and nuts into remaining marshmallow mixture.
  • Pour one-third of the white mixture into pan, spreading evenly. Quickly pour one-third of the chocolate mixture over top, spreading evenly. Repeat twice. Swirl knife greased with butter through mixtures for marbled design. Cool until set.
  • Refrigerate uncovered about 3 hours or until set. Cut into 12 rows by 8 rows with knife greased with butter. Store covered in refrigerator.

Simple and Amazing Peanut Butter-Chocolate Fudge image

This is such an easy recipe to throw together with a few ingredients. It always gets rave reviews. The recipe uses peanut butter, but you can substitute any nut butter or sunflower seed butter. A favorite of mine is to use hazelnut butter. Slice into triangles and top with some whipped cream (I use chilled coconut milk) and orange zest.

1 (300 ml) can eagle brand sweetened condensed milk
8 (1 ounce) semi-sweet chocolate baking squares or 8 (1 ounce) dark chocolate squares, chopped
baking soda, divided
1/2 teaspoon vanilla
6 (1 ounce) white chocolate baking squares, chopped
1/4 cup peanut butter

Steps:

  • In one small saucepan, heat half a can of sweetened condensed milk with semi-sweet chocolate and 1/4 teaspoons baking soda. Stir frequently until chocolate is melted. Stir in vanilla.
  • In another small saucepan, heat remaining sweetened condensed milk with white chocolate, 1/4 teaspoons baking soda and peanut butter, stirring until melted.
  • Pour dark chocolate mixture in parchment paper-lined 8-inch square pan. Pour peanut butter mixture on top and swirl with a spoon or knife. Cool. Chill 4 hours or until firm.
  • Remove from pan and cut into 1-inch squares.
