PEACHY BLUEBERRY FRITTERS
These wonderful fritters were shared with our friends in town, only after I had 2 for myself. They are perfect for breakfast with a cup of coffee. I think they could qualify as a desserts as well. Hope you enjoy!

Steps:
- 1. Heat oil in deep fryer or deep frying pan to 375 degrees F.
- 2. Whisk milk, eggs and vanilla together. Combine flour, baking powder, sugar, salt and nutmeg. Fold in peaches; add melted butter.
- 3. With cookie scoop, scoop batter into hot oil. The batter will sink and then rise. Cook for about 2 - 3 minutes until golden brown, depending on size of fritters. Remove fritters from oil; drain on paper; glaze.
- 4. GLAZE: Mix together and drizzle over fritters.
- 5. NOTE: you can also just roll cooled fritters in powdered sugar if you don't want to glaze.

Crispy, fruity, and sweet, these delicious blueberry fritters (aka blueberry beignets) are simply divine! Left plain, sprinkled with icing sugar, or tossed in cinnamon sugar, these dreamy berry fritters make a perfect snack or dessert.

- in a medium bowl, whisk together sifted flour, sugar, baking powder, salt, ground nutmeg, and ground cinnamon with a hand whisk, and place aside. In another mixing bowl, combine eggs, milk, vanilla extract, and melted butter cooled to room temperature. Add the egg mixture to the flour mixture, stirring until combined with a rubber spatula. Add blueberries and gently mix.
- heat the frying oil in a large heavy-bottomed pot over medium heat until it reaches 355 F/180 C with a cooking thermometer. Slowly drop a small cookie scoop of batter into the oil and fry until golden or slightly dark brown, about 2 to 4 minutes on each side.
- Flip fritters using a fork or metal tongs and fry until they are golden brown. To test for doneness, insert a small knife in the center (be careful of oil splashes!). If there is still raw dough in the knife, fry a bit longer. Using a slotted metal spoon or metal spatula, transfer to a wire rack lined with a paper towel and let cool. Repeat with the remaining batter while checking the temperature of the oil throughout the process.
- Dust with icing (powdered) sugar and serve.

- In a large bowl, whisk the first 5 ingredients. In another bowl, whisk egg, egg white, milk and honey until blended. Add to dry ingredients, stirring just until moistened. Fold in onion and cheese; let stand 10 minutes., In an electric skillet or deep fryer, heat oil to 375°. Stir batter. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, 2-3 minutes on each side. Drain on paper towels. (Keep cooked fritters warm on a baking sheet in a 200° oven until all fritters are made,), Serve fritters with chopped peach and prosciutto; sprinkle with additional pepper.
