Steps:
- In a large metal or glass bowl, cream the butter and sugar together. Add the eggs and beat until well mixed.
- In a seperate bowl, sift the flour with the baking powder and salt.
- Add the flour mixture to the egg mixture along with the milk, lemon juice and vanila. Mix well. Fold in the peach pieces.
- Bake in a well-greased waffle iron according to manufacturer's instructions.

Perfect for when peaches are in season. This is not "no cook"! My only choice was no cook or other....no choice for a waffle iron!

- 1. Cream shortening with an electric mixer. Gradually add 1/2 cup sugar, beating well at low speed Add eggs, one at a time, beating well after each addition.
- 2. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition. Stir in peaches, lemon juice, and vanilla.
- 3. Bake in preheated oiled waffle iron until done. Sprinkle with powdered sugar. Serve with sliced fresh fruit and/or whipping cream.
