NECTARINE AND PEACH COBBLER
Had nectarines and peaches left over and didn't know what to do with them, so I decided to take a leap of faith and try something new. So I made this recipe, and it was a HUGE hit!!!!!! Hope you enjoy too!

Steps:
- 1. Mix sliced peaches and sliced nectarines with 1 cup of the sugar, cinnamon, and nutmeg, then set this bowl aside.
- 2. Preheat oven to 350. Put the oleo/butter in a 13x9 inch baking dish and melt it in the oven.
- 3. Stir up remaining cup of sugar, flour, baking powder, salt, and milk and pour this batter over the melted oleo/butter, but DO NOT STIR.
- 4. Put the 1st bowl of sugared sliced peaches and nectarines on the top of the batter, but DO NOT STIR!
- 5. Bake for an 1 hour 10 min at 350. The batter will rise to the top and the top will be CRISP and BROWN.
- 6. Serve with vanilla ice cream and enjoy!!!
VEGAN BOURBON COBBLER (PEACH, NECTARINE, STRAWBERRY, BLACKBERRY)
This is a vegan variation of my recipe: Recipe #295437 Southern Bourbon Peach Cobbler. This tastes slightly different because I use coconut, but very tasty, and you wouldn't think it was vegan if someone hadn't told you. I've found nectarines are very nice (and inexpensive) in my area during the summer, but any fruit or combination could be used. Some possibilities include: peaches, nectarines, strawberries, blackberries, cherries, raspberries, plums, blueberries, mango, apricots, rhubarb, and other berries and stone fruit. The recipe would have to be varied if you wanted to use a less juicy fruit like apples or an acidic fruit like pineapple.

Steps:
- Preheat oven to 400°F.
- Combine all ingredients up to lemon juice in a large bowl and let sit.
- Pour apple sauce on bottom of an 8 1/2" by 11" baking pan.
- Combine flour with remaining ingredients except sugar for topping.
- Drop tablespoon fulls of the dough onto the apple sauce on pan to cover. Leave some small gaps as this helps the dough rise through the fruit to get crisp on the top.
- Pour fruit mixture over dough.
- Bake for 45 minutes or until dough is cooked.
- Top with remaining sugar if desired and bake an additional 5-15 minutes until top is crisp. You can also try the broiler, or a kitchen torch to carmelize the sugar. It is easy to burn the top doing this, so be sure to check regularly if this is your chosen method.

PEACH-NECTARINE COBBLER
Peaches, nectarines and Betty Crocker™ cookie mix pair up in this tasty cobbler - a delectable baked dessert.

Steps:
- Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In large bowl, place peaches and nectarines. Sprinkle with sugar, cornstarch and lemon juice; mix lightly with spoon until fruit is coated. Spoon into baking dish.
- In large bowl, stir cookie mix, butter, vanilla and egg with spoon until soft dough forms. Spoon dough by heaping tablespoonfuls over fruit mixture, covering most of the top.
- Bake 35 to 40 minutes or until filling is bubbly and topping is golden brown. Cool 10 to 15 minutes. Serve warm.
