1 Tbsp butter
3 Tbsp white cake mix ((I used Betty Crocker))
1 - 2 pinches of cinnamon ((can also add a small pinch nutmeg too))
2 1/2 Tbsp milk
1 (4 oz) pkg. diced peaches in light syrup

Steps:

  • Place butter in a mug and melt in microwave.
  • Meanwhile, in a small bowl whisk together cake mix and cinnamon then whisk in milk and stir until well blended.
  • Pour mixture over melted butter in mug (don't stir). Drain off 2 Tbsp liquid from peaches (about 2/3 of the liquid), then pour peaches over top of cake mix (don't stir).
  • Microwave on 50% power for about 3 - 4 minutes, until desired doneness (time may vary depending on each microwave oven and wattage).
  • Allow to cool slightly (it will be ridiculously hot) then optionally top with vanilla ice cream and a light dusting of cinnamon.

1/2 cup fruit (blueberries, strawberries, peaches, etc.), chopped if necessary
2 tablespoons sugar
1/4 cup Original Bisquick™ mix
1/8 teaspoon ground cinnamon, if desired
1/2 teaspoon fresh grated lemon or orange peel, if desired
1 tablespoon nuts (pecans, almonds, walnuts, etc.), chopped, if desired
1 tablespoon old-fashioned oats, if desired
Coarse sugar, for sprinkling, if desired
1 tablespoon milk

Steps:

  • In microwavable mug, mix fruit and 1 tablespoon of the sugar.
  • In small bowl, mix Bisquick™ mix, remaining 1 tablespoon sugar, and any of the "if desired" ingredients. Add milk, and stir until a thick dough forms. Drop dough in clumps over fruit in mug.
  • Microwave uncovered on High 90 seconds to 2 minutes or until fruit bubbles to top of mug. Cobbler will be very hot; wait 5 minutes before serving. Top with whipped cream or ice cream, if desired.

1 Tbsp butter
2 Tbsp sugar
2 Tbsp flour
1 Tbsp instant non-fat dry powdered milk
1/8 tsp baking powder
1/8 tsp cinnamon
dash of salt
2 Tbsp water
1 4 oz. snack-size diced peaches, well drained

Steps:

  • 1. Microwave 1 Tbsp. butter in mug until melted, about 20 seconds.
  • 2. Combine sugar, flour, instant dry milk, baking powder, cinnamon, salt and water, add to mug. Stir with a fork till well blended. Add well drained peaches on top of batter and do not stir.
  • 3. Microwave on medium-high for 2 minutes. Let stand in microwave for 1 minute. Use an oven mitt to remove the mug from the microwave and let it cool off enough so that you can eat.

This recipe was inspired by one from Renee Erickson's in cookbook, 'A Boat, a Whale, and a Walrus.' It's a lot crispier than a regular cobbler, and you can use the technique for other fruit cobblers. Serve warm with vanilla ice cream.

6 large fresh peaches, pitted and cut into eighths
1 lemon, zested and juiced
½ cup unsalted butter, at room temperature
1 ¼ cups white sugar
1 ⅓ cups self-rising flour
⅓ cup rolled oats
⅔ cup whole milk
¼ cup white sugar
2 tablespoons cold water, or as needed to wet topping sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place a baking sheet on the rack under the middle rack to catch drips. Generously butter a 2-inch deep (2-quart) baking dish.
  • Place peach sections into prepared baking dish. Sprinkle with lemon juice and zest.
  • Stir butter and sugar together in a mixing bowl. Mix until creamed and resembles a sugary, buttery paste, 4 to 5 minutes. Add oats and flour; stir until flour and oats are incorporated into the butter-sugar mixture and mixture resembles coarse crumbs, 4 to 5 minutes. Pour in milk; stir until mixture is wet and creamy, like a thick spreadable batter, 3 to 4 minutes.
  • Drop batter by spoonful on top of the peaches. Spread batter evenly over the surface of the peaches. Sprinkle 1/4 cup sugar on the batter. Spritz with water until sugar is wet and surface glistens.
  • Bake in preheated oven on middle rack until browned and crispy, about 45 minutes. Let cool at least 30 minutes before serving.

2 x 410g cans sliced peaches , drained
120g golden caster sugar , plus extra for sprinkling
1 tsp ground ginger
150g plain flour
1 tsp baking powder
½ tsp ground cinnamon
150g butter , chilled and cubed, plus extra for greasing
1 small egg
vanilla ice cream , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
  • Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.
  • Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.
