BABY BACK RIBS WITH SPICY PEACH BBQ SAUCE

Steps:
- For the ribs: Preheat the oven to 300 degrees F.
- In a small bowl, mix together the sugar, salt and paprika. Place the ribs on 2 sheets of aluminum foil large enough to wrap around them and seal. Rub the ribs evenly on all sides with the sugar mixture. Bring the foil up and around the ribs and crimp closed. Place on a rimmed baking sheet. Bake until tender but not falling apart, about 3 1/2 hours. Allow to cool slightly, about 30 minutes.
- For the sauce: Heat a medium saucepan over medium heat. Add the oil, onion, garlic and ginger to the pan and cook, stirring often with a wooden spoon, until the onions are soft and fragrant, about 4 minutes. Add the peaches and stir to coat with the flavors. Add the vinegar, sugar, salt and Calabrian chili and stir to combine. Bring to a simmer, then reduce the heat to low to maintain a gentle simmer. Add any dripping that may have accumulated on the baking sheet from the pork. Simmer until the peaches are very soft, about 30 minutes. Using an immersion blender, puree the sauce until it is as smooth or as chunky as you like.
- Preheat the broiler to high heat. Spoon one-quarter of the sauce all over the ribs. Broil for 4 minutes. Remove and repeat the process another 2 times, until the sauce is thick, sticky and golden brown. Serve with more sauce on the side if desired.
PEACH CHIPOTLE BBQ SAUCE
Don't know if it's 'correct' or authentic but it's good. Hubby had me make a batch to can. Of course, you can add as much or little chipotle as your palate desires. Next time, I plan to use prepared chili sauce instead of the ketchup.

ROASTED PORK LOIN WITH PEACH BBQ SAUCE

- For the pork and peach bbq sauce: Preheat the oven to 400 degrees F. Combine the peaches, brown sugar, ketchup, vinegar, soy sauce, garlic and ginger in a food processor or blender. Pat the pork dry with paper towels and sprinkle liberally with salt and pepper. Reserve half (about 2 cups) of the peach BBQ sauce and set aside. Transfer the pork, fat-side up, to a rack over a heavy-bottomed roasting pan and brush the rest of the sauce all over the pork. Add the stock to the bottom of the roasting pan. Roast the pork until a meat thermometer inserted into the thickest part reads 140 degrees F, about 1 hour. For the smashed potatoes: Meanwhile, place the potatoes in large pot and cover with salted cold water. The potatoes will soak up that salt like pasta and it will make a big difference in flavor. Cover and bring to a boil and cook until fork-tender, 20 to 30 minutes. Drain the potatoes, and return them to the same pot, allowing them to dry. Heat the half-and-half and butter in a small saucepot over low heat. Add the mixture to the potatoes along with the cream cheese and sprinkle with salt and pepper. Smash the potatoes with a potato masher and set aside, keeping warm until ready to serve. For serving the pork: Transfer the pork to a baking sheet to rest for 10 minutes, and then thinly slice half of the loin. Store and reserve the other half for leftovers. Remove the rack from the roasting pan and place on the stove over medium-high heat. Whisk in the reserved BBQ sauce and scrape the bottom of the pan to incorporate the browned sauce. Cook until slightly reduced and thickened, about 10 minutes. Serve the sliced pork with the reduced peach BBQ sauce and the smashed potatoes.
SMOKED PORK CHOPS WITH PEACH BOURBON BBQ SAUCE
Steps:
- Once the brine has cooled completely, add the chops and allow to soak for at least 6 but no more than 12 hours. Remove chops from brine just before smoking.
- Smoke pork until internal temperature reaches 140 degrees F, or about 1 to 2 hours
- Keep grill temperature at approximately 200 to 250 degrees F or pork will overcook. Smoke chops until internal temperature reaches 140 degrees F. After desired internal temperature is reached, brush chops lightly with oil and grill over hot coals for 1 1/2 minutes; rotate 1/4 turn clockwise and grill 1 minute more to create attractive grill marks. Flip chop and repeat grilling method; the prettier side is the top.
- Chops should ultimately reach an internal temperature of 150 to 160 degrees F. If necessary, place chops in 375 degree F oven after grilling to finish cooking. For an extra fancy presentation, pull the pork off the bone, slice into 1/4-inch strips and fan out on the plate.
- Brush grilled chops with melted butter and let rest 2 minutes before serving. Place each chop on the plate on a serving plate. Serve with peach bourbon bbq sauce.
- Serving suggestion: Try adding a starch as an accompaniment: mashed potatoes, stewed white beans, or even steamed brown rice.
- In a nonreactive, stainless steel 8-quart saucepan, bring all brine ingredients to a boil and stir until sugar and salt are completely dissolved. Transfer to a 1-gallon plastic or stainless steel container and refrigerate until completely cooled.
- In a medium saucepan melt butter over medium-high heat. Add shallots and sweat for several minutes until soft. Add peaches, bring to simmer and cook for 5 minutes. Add lemon juice, cider vinegar, brown sugar, Worcestershire sauce, and chicken stock. Simmer for 15 to 20 minutes until thick. Add whiskey, return to simmer, cook for 5 more minutes and remove from the heat. Adjust seasoning and sweetness. Puree mixture with immersion blender or food processor until smooth and thick.
PAT'S RIBS WITH PEACH BBQ SAUCE

- For the dry rub: Add the salt, paprika, chile powder, garlic powder and brown sugar to a bowl and stir until thoroughly incorporated. Keep the rub in an airtight container for up to 6 months.
- For the ribs: Rinse and dry the ribs. Put them on a clean cutting board and pull off the thin fatty skin that lines the underside of the ribs. Trim the ribs of all excess fat. Reserve 2 tablespoons peach rub (1 for ribs and 1 for sauce), then liberally sprinkle each side with the remaining rub and wrap the ribs in plastic. Refrigerate for at least 8 hours so the flavors can permeate the meat.
- Fill a grill with the chips and briquettes and preheat them to 250 degrees F. Put the ribs, meatier-side down, over indirect heat and cook for 3 hours with the grill cover down. Turn the slabs and cook until the ribs bend easily, about 1 hour. At this point, remove them from the grill. Sprinkle the slabs with 1 tablespoon reserved peach rub and slice it into portions. Cut each slab into individual ribs and coat with Gina's Peach BBQ Sauce. Arrange on a serving platter and serve.
- Melt the butter in a large saucepan over medium heat. Add the garlic and shallots and saute until tender, about 3 minutes. Season with salt, pepper and peach rub. Stir with a wooden spoon until fragrant. Stir in the ketchup, peach nectar, apple cider vinegar, mustard, Worcestershire and lemon juice. Bring the ingredients to a boil, and then reduce the heat to a simmer. Let cook until thickened, about 30 minutes, stirring occasionally. Adjust the seasonings if necessary, and enjoy.
PEACH BBQ SAUCE
Our daughter brought us yellow peaches she cooked in simple syrup, peeled, and jarred. I used them to make this homemade BBQ sauce. It's great for basting, topping, and dipping chicken, pork, beef, etc. I used mine to baste and top chicken drumsticks cooked in an air fryer. It reheats nicely on the stovetop or in the microwave.

HABANERO PEACH BBQ SAUCE
While trying out a recipe for a hot sauce (Garry's Habanero Hot Sauce). I quickly realized that the result was going to be far too hot for my personal tastes. So I fiddled with the ingredients and combined with an old family recipe for BBQ sauce. The end result turned out fantastic, and I have made this numerous times since. We are into canning, and this recipe works well in 1 pint jars, if you're into that sort of thing. Otherwise, just keep it in the fridge. The heat level can be adjusted by altering the number of peppers or peaches. I find that 7-8 normal sized habaneros and 2 full cans of peaches gives a good balance of heat and sweet.

- *** Wearing gloves*** Remove stems and seeds from peppers (reserve the seeds from one pepper). Do not touch the cut peppers with your bare skin and don't touch your eyes or skin with the gloves after handeling the cut peppers. Trust me, I made this mistake once.
- Put peppers and peaches (including the juice/syrup) into a blender and blend until evenly mixed.
- Pour blended mixture into a large pot.
- Add all other ingredients and the seeds from 1 pepper.
- Stir to mix and cook over medium heat.

- Place a medium saute pan over medium heat and add the oil. Add the onion and cook until translucent, about 2 minutes. Add the garlic and ginger and cook until fragrant, 45 to 60 seconds.
- Add the ketchup, peach jam and peaches. Reduce heat to low and simmer until the sauce thickens, about 30 minutes, stirring occasionally. Add the vinegar and season with salt and pepper. Remove from the heat and set aside to cool.
- Meanwhile, in a medium heatproof bowl, dissolve the brown sugar and kosher salt in boiling water, then stir in the ice cubes to cool. Add the pork chops, cover the bowl with plastic wrap and refrigerate about 30 minutes. Remove the pork chops from the brine, rinse them well and dry thoroughly with paper towels.
- Pour half the barbecue sauce into a shallow baking dish; reserve remaining sauce. Add the pork chops, turning to coat both sides.

- 1. Heat the butter and oil over medium heat in a 4-quart or larger sauce pan.
- 2. Add the onions and cook, stirring often, until the onion are translucent, about five minutes.
- 3. Add the garlic and cook one minute longer.
- 4. Add the peaches, bourbon and chipotle peppers and cook, stirring often, until the bourbon has almost completely cooked out, about ten minutes.

(You may want to have a lid handy to protect yourself and your kitchen from any sputtering.) Reduce the heat and simmer for 25 minutes, stirring occasionally. With a whisk, blend in the butter cubes, a couple at a time, until incorporated. This is the sweetest of the three sauces for barbecued chicken. You can add a tablespoon or so of peach liqueur for more peach flavor.
CAROLINA PORK TENDERLOIN WITH PEACH BBQ SAUCE AND SWEET POTATO HASH BROWNS

- Preheat oven to 375 degrees F. Spray a large ovenproof skillet with nonstick cooking spray. Sprinkle the barbecue seasoning blend over the pork tenderloin. Quickly sear the meat on all sides over medium heat.
- Meanwhile, while meat is searing, start the hash browns by adding the vegetable oil and butter to another large skillet. Add the shredded sweet potatoes, onion and bell pepper blend, and celery leaves in a single layer. Cook over medium heat for 3 to 4 minutes without stirring. Stir in the salt and pepper, to taste, and continue to cook until potatoes are tender, about 10 to 12 minutes.
- Once the tenderloin has been seared, remove to a platter and to the same skillet whisk in the Bloody Mary mix, peach nectar, Worcestershire sauce, apple cider vinegar, brown sugar, garlic, hot sauce, cracked black pepper, and chopped peaches; simmer over medium heat for 8 to 10 minutes. Remove sauce from heat, place the seared pork in skillet and spoon sauce over top. Place the skillet in oven and cook until pork reaches an internal temperature of 155 degrees F on an instant-read thermometer. Remove meat from oven and allow to sit for a few minutes before slicing. To plate, arrange sweet potato hash browns and the sliced pork on individual dishes and top with some of the sauce. Garnish with fresh peach slices and a sprinkling of parsley.

PEACH MANGO BBQ SAUCE
Peaches are in season. I have an over abundance of peaches that I need to use up. This is a barbecue sauce I came up with. It is sweet tangy and a little spicy. We really enjoyed this on chicken. It is sweet, tangy, and little spicy. The sauce works really well on chicken, and I believe it would work really well on pork too.

- 1. Take a half cup of chopped peaches and set them aside. Place remaing peaches in a food processor. add the mango juice and pulse until it is smooth .
- 2. set stove to medium-high heat. in a large sauce pan add the peach mango mixture. add in the half cup of reserve peaches.
- 3. Add in all of the ingredients except for the garlic onion and jalapeño. pepper. Stir while it is cooking. Reduce heat to medium.
- 4. Sauté the onion in a pan with about a tablespoon of olive oil. Cook until translucent. add the onion into the sauce. Into the pan add some more olive oil and cooked chopped garlic just until lightly golden. about 1 min. Add the garlic to the sauce.
- 5. Add the chopped pepper directly to the sauce and stir well to combine.
- 6. Bring sauce back up to a boil. Continue to cook reducing heat to medium low. stir occasionally until it mixture boils down and is thickened. This step should take about 30 to 40 minutes. Remove from heat and let cool. It will thicken even more after it cools. Keep refrigerated 1-2 weeks. Use it to baste grilled chicken or you may use it it to baste pork ribs.
- 7. Bake chicken , or Grill chicken. Baste with sauce while cooking. coating each side of chicken twice. I grilled mine. I like the nice char on my chicken.
- 8. Each cut of chicken differs in cooking time. Cook chicken Until meat is not pink is in the center before serving. Grill time approximately 30 minutes for thighs. Picture shown served with grilled peaches. Simply cut peaches in half remove pit. Cook on grill until slightly tender.
PEACH-MUSTARD BBQ SAUCE

GRILLED CHICKEN WITH PEACH PICKLE BBQ SAUCE
Peach preserves and dill pickles are the backbone of this sweet-tangy barbecue sauce. Grilling big pieces of chicken (or any cut of meat) over gentle indirect heat ensures the inside gets perfectly cooked before the outside has a chance to burn.

- SET UP: Prepare an outdoor grill so that you have a medium-hot fire for both direct and indirect grilling (move hot coals to just one side of the grill, or turn on only half the burners on a gas grill). Once hot, brush the grill grates with oil.
- GRILL THE CHICKEN: Pat the chicken dry and sprinkle with 1 teaspoon salt and a couple turns of pepper. Grill the chicken, skin-side up, over direct heat (the hotter side) until lightly charred, about 4 minutes. Flip and cook until faint grill marks appear on the skin, 3 to 5 minutes more. Flip again and move the chicken to the indirect side of the grill (the cooler side). Cover and cook until an instant-read thermometer inserted into the thigh registers 165 degrees F, about 40 minutes.
- MAKE THE BBQ SAUCE: Meanwhile, heat the 2 tablespoons oil in a medium saucepan over medium-high heat. Add the onion and cook, stirring occasionally, until softened, about 8 minutes. Add the chile powder and cook, stirring, for about 1 minute. Add the ketchup, peach preserves, and 1/2 cup water and bring to a simmer. Simmer until slightly thickened, about 8 minutes. Add the pickles. Puree with an immersion blender or transfer to a blender. Set aside 1 cup of the sauce for serving.
- BASTE AND SERVE: When the chicken is just fully cooked, begin basting it with some of the remaining BBQ sauce and move it back to direct heat. Continue to baste it, gently flipping often, until glazed and lightly charred, about 5 minutes. Serve with the reserved BBQ sauce on the side.

- 1. PREP/PREPARE
- 2. If you want to, you can use frozen peaches and mangos; just make sure they are defrosted before starting.
- 3. My favorite green chilies are Hatch brand, and they come in 4-ounce cans. For this recipe you will only need 1 - 2 tablespoons; however, the remainder can be frozen and saved for another recipe.
- 4. The savory is controlled by the onions. The sweet is controlled by the fruit, and the coconut sugar. The sour is controlled by the vinegar. The kick is controlled by the green chilies. You can control the taste of this sauce by varying one or all of the ingredients. For example, I would start by adding half the apple-cider vinegar, and then tasting and adding a tablespoon more at a time, until you reach the desired results.
- 5. Gather your ingredients (mise en place).
- 6. Add the oil to a saucepan, or pot, over medium heat, then add the onions.
- 7. Allow them to sauté until soft, about 10 minutes, and then add the peaches, and mangos.
- 8. Simmer the ingredients for 10 minutes, and then add the vinegar and coconut sugar.
- 9. Simmer for an additional 10 minutes, and then add the chilies.
- 10. Simmer, covered for 10 minutes.
- 11. Remove from heat, allow to cool for 15 minutes, and then then add to a blender, and blend until smooth.
- 12. Place in a non-reactive jar with a tight-fitting lid, and place in the refrigerator until ready to use.
- 13. PLATE/PRESENT
- 14. I love this stuff on chicken, and I have even used it with shrimp. Enjoy.

GRILLED TILAPIA WITH PEACH BBQ SAUCE
This recipe is from Paula Deen's show on the Food Network. It hasn't been tested in my kitchen, but it will be. It just sounds so light and refreshing.

- 1. Mix all the ingredients together in a saucepan, excluding the peaches and house seasoning; simmer over medium heat for 15 to 20 minutes.
- 2. While the sauce is simmering, puree 2 cups of canned peaches or fresh peaches. Once the sauce is cooked, add the pureed peaches to the sauce and stir together.
- 3. Preheat the grill to medium heat, season the tilapia with the house seasoning. cook the fish on each side for 3 to 4 minutes. During the last few minutes of cooking, brush the fish with barbeque sauce.
- 4. Once cooked and plated, spoon some of the peach barbeque sauce on top of the fish.
GRILLED TILAPIA WITH PEACH BBQ SAUCE BY PAULA DEEN
There are many Paula Deen fans on Recipezaar. This is her recipe that was on foodnetwork.com. The recipe makes alot of BBQ sauce. Way more than you'll need unless you plan to drench the fish in the sauce. I cut the sauce recipe down to 1/4th of the printed amounts and still came up with close to 1 cup of sauce, which gave me alot of leftover sauce. Season the fillet in step 3 using recipe #57340 The recipe calls for 1 lime, juiced but the instructions never mention it. Since it is the last ingredient on the list, I am assuming that the lime juice is sprinkled on the finished fish fillet. I think the BBQ sauce benefits from being made at least earlier in the day or maybe even the day before. I didn't particularly care for the flavor of the sauce when I finished making it but after it had set all day and was put on the fish, it was good.

Steps:
- For the pork and peach bbq sauce:.
- Preheat the oven to 400 degrees F. Combine the peaches, brown sugar, ketchup, vinegar, soy sauce, garlic and ginger in a food processor or blender.
- Pat the pork dry with paper towels and sprinkle liberally with salt and pepper. Reserve half (about 2 cups) of the peach BBQ sauce and set aside. Transfer the pork, fat-side up, to a rack over a heavy-bottomed roasting pan and brush the rest of the sauce all over the pork. Add the stock to the bottom of the roasting pan.
- Roast the pork until a meat thermometer inserted into the thickest part reads 140 degrees F, about 1 hour.
- For the smashed potatoes:.
- Meanwhile, place the potatoes in large pot and cover with salted cold water. The potatoes will soak up that salt like pasta and it will make a big difference in flavor. Cover and bring to a boil and cook until fork-tender, 20 to 30 minutes. Drain the potatoes, and return them to the same pot, allowing them to dry. Heat the half-and-half and butter in a small saucepot over low heat. Add the mixture to the potatoes along with the cream cheese and sprinkle with salt and pepper. Smash the potatoes with a potato masher and set aside, keeping warm until ready to serve.
- For serving the pork:.
- Transfer the pork to a baking sheet to rest for 10 minutes, and then thinly slice half of the loin. Store and reserve the other half for leftovers.
- Remove the rack from the roasting pan and place on the stove over medium-high heat. Whisk in the reserved BBQ sauce and scrape the bottom of the pan to incorporate the browned sauce. Cook until slightly reduced and thickened, about 10 minutes.
- Serve the sliced pork with the reduced peach BBQ sauce and the smashed potatoes.
