  • Whisk 1/4 cup each buttermilk and sour cream with 1/2 teaspoon lemon zest and 1 teaspoon lemon juice; season with salt and pepper. Drizzle over 4 cups shredded iceberg lettuce tossed with 2 large quartered peaches. Season with salt and pepper; top with crumbled cooked bacon and finely chopped chives.

2 medium peaches, sliced
2 bananas, sliced
lemon juice or pineapple juice
2 cups fresh pineapple, cubed
2 -3 kiwi fruits, peeled and sliced
2 large strawberries, hulled and sliced
lettuce
2 medium peaches, unpeeled with seed removed
1/4 cup vegetable oil
2 tablespoons orange juice
2 tablespoons flaked coconut
1 1/2 teaspoons lime juice
1 teaspoon fresh ginger, grated

Steps:

  • Dip 2 peaches and banans in pineapple or lemon juice.
  • Arrange dipped peaches and other fruit on lettuce.
  • To make dressing, mix 2 unpeeled peaches, oil, orange juice, coconut, lime juice, and ginger in electric blender until smooth.
  • Top fruit and lettuce with dressing.

In case you couldn't tell, our farmer's market has had some seriously amazing peaches the last few weeks, so I've been doing a lot of experimenting with them. I made a quick salad dressing for my husband and myself the other day that I really loved. On the flip side, he wasn't a huge fan, but he doesn't like peaches too much so I count my opinion for more and I posted it anyway. (just don't tell him I said that!)

1 peach
1 tablespoon extra virgin olive oil (I have some basil olive oil that worked well for this)
1/2 tablespoon basil (fresh chopped works best but dried will do)
2 tablespoons apple cider vinegar
1 teaspoon celery salt (to taste)
1 teaspoon honey (depending on how sweet the peach is you may not need this. I didn't use it when I made mine, but I k)

Steps:

  • Mix together all of the ingredients except the peach.
  • Peel the skin off the peach by putting it in boiling water for about 30 seconds, then dunk it in cool water.
  • Slice the fruit, and mash it together to make a kind of paste. If you want a less chunky texture you can do this in a food processor or blender. I just squished it with a fork.
  • Mix the vinaigrette mixture into the peach until well combined and use as a salad dressing. :).

4 medium ripe peaches, peeled
2 tablespoons sugar
2 tablespoons lemon juice
2 tablespoons cider vinegar
1 tablespoon rice vinegar
1/4 teaspoon salt
1/3 cup canola oil
6 cups spring mix salad greens
4 cups torn romaine
1 small red onion, halved and thinly sliced
1/2 cup thinly sliced cucumber
6 bacon strips, cooked and crumbled
1/3 cup chopped pecans, toasted

Steps:

  • Slice three peaches; set aside. Cut the remaining peach in half; place in a blender. Add the sugar, lemon juice, vinegars and salt; cover and process until blended. While processing, gradually add oil in a steady stream. , In a large bowl, combine the salad greens, romaine, onion and cucumber. Pour about 2/3 cup dressing over salad and toss to coat. , Transfer to a serving platter; top with sliced peaches and bacon. Drizzle with remaining dressing; sprinkle with pecans.

This is a wonderful and easy fruit salad that is also pretty for special occasions or holidays.

1 (20 ounce) can pineapple chunks, juice reserved
2 apples, peeled and cored
1 (21 ounce) can peach pie filling
2 bananas, peeled and diced
3 kiwis
1 pint strawberries

Steps:

  • In a small bowl, toss the chopped apples in reserved pineapple juice. Allow to sit for 5 to 10 minutes.
  • In a large salad bowl, combine the peach pie filling and pineapple chunks.
  • Remove apples from pineapple juice and add to pie filling and pineapple mixture. Add chopped bananas to reserved pineapple juice and let sit for 5 to 10 minutes.
  • Peel and slice kiwi and 1/2 of strawberries. Chop the other 1/2 of strawberries and set aside.
  • Remove bananas from pineapple juice and add to pie filling mixture. Add chopped strawberries; toss together.
  • Arrange kiwi slices around the edge of the serving bowl and alternate with strawberry slices. Chill and serve.
