CUCUMBER PICKLE SALAD



Cucumber Pickle Salad image

Number Of Ingredients 9

1/4 cup sliced red onion
2 tablespoons red wine vinegar
2 medium English cucumbers, peeled and cut into rounds 1/4 to 1/2 inch thick
2 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar
1 large pickle, diced, plus 1 tablespoon pickle juice
1 teaspoon garlic powder
1 teaspoon dried dill or dill seed (see Cook's Note)
Kosher salt and freshly ground black pepper

Steps:

  • Put the onion and red wine vinegar in a small pot, bring to a simmer and simmer for about 3 minutes. Allow to cool completely. Refrigerate until ready to use.
  • Arrange the cucumber rounds in pinwheels in a single layer on a serving platter. Refrigerate.
  • In a medium bowl, whisk together the olive oil, apple cider vinegar, pickle juice, garlic powder, dill and a pinch of salt. Refrigerate.
  • When ready to serve, season the cucumbers with salt and pepper. Spoon the dressing all over the cucumbers. Top with the diced pickle and pickled red onion. Serve cold.

1 cup macaroni
3 eggs
¼ cup Ranch-style salad dressing
1 teaspoon white sugar
2 teaspoons white wine vinegar
salt to taste
¼ teaspoon ground black pepper
2 cups frozen green peas, thawed
3 green onions, chopped
2 medium sweet pickles, chopped
2 stalks celery, chopped
1 cup shredded Cheddar cheese

Steps:

  • In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
  • Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Whisk together the salad dressing, sugar, vinegar, salt and pepper.
  • In a large bowl, combine the pasta, eggs, peas, green onion, pickles, celery and cheese. Pour dressing over salad; mix well and chill before serving.

BEET AND PEA SALAD

I got the idea for this recipe from my daughter-in-law who had tried a beet and pea salad at an organic food co-op. She was sure the beets had been pickled and the dressing was made with mayonnaise. She thought the salad included cabbage, but I decided to keep the recipe very simple. It was a major hit with my husband who hates beets.

1 pound frozen petite peas
½ cup finely chopped red onion
1 cup vegan mayonnaise (such as Vegenaise®)
1 teaspoon onion powder

Steps:

  • Dice or julienne pickled beets. Toss with peas and onion in a bowl.
  • Combine vegan mayonnaise and onion powder in a separate bowl. Stir into beet mixture.
  • Chill to let flavors blend, about 1 hour. Serve.

1 (15 ounce) can sweet peas
3 -4 small sweet gherkins
1 tablespoon sweet pickle juice
1/2-3/4 cup unsalted peanuts
1 tablespoon mustard
1 tablespoon sugar
1/2 cup cream (or half n'half)

Steps:

  • Drain peas and place in bowl.
  • Put peanuts and pickles in food processor and grind until gravel-like. Add to bowl.
  • Mix in the pickle juice.
  • Combine mustard, sugar, and cream together.
  • Allow to sit 10-15 minutes for the sugar to dissolve.
  • Mix in with the 3 P's.
  • Serve at room temperature.

1 cup chopped celery
2 hard-boiled eggs, chopped

1 1/2 cups cubed cheddar cheese
1 cup mayonnaise
3 tablespoons sweet pickle relish
1 teaspoon sugar
1 teaspoon seasoning salt
1 teaspoon mustard

  • In large bowl, combine mayo, relish, sugar, seas. salt and mustard. Gently fold in rest of ingredients adding peas last so they don't get broken up and mushy. (Add more mayo if needed.) Chill.
