My grandmother used to make these for me as a child, and as strange as they may sound, they are wonderful!!! A good way to 'sneak' in a vegetable for kids!

2 slices white bread (okay, you can use 'healthy' whole wheat or multigrain, but I used to love it with good old white bre)
4 -5 slices of peeled cucumbers (thin slices)
creamy peanut butter

Steps:

  • Spread desired amount of peanut butter on bread.
  • Place thin slices of cucumber on peanut butter, and cover with second slice of bread.

  • Spread peanut butter on one side of a slice of bread, and sprinkle with chopped apple, raisins, and peanuts. Spread jam over the remaining slice of bread, and place on top of fruit and nuts to make a sandwich.

2 teaspoons ranch salad dressing mix
12 slices pumpernickel or rye bread
2 to 3 medium cucumbers

Steps:

  • In a large bowl, combine cream cheese and dressing mix. Spread on 1 side of each slice of bread. Peel cucumbers if desired; thinly slice and place on 6 slices of bread. Top with remaining bread. Serve immediately.

12 slices cinnamon-raisin bread, lightly toasted

  • Spread peanut butter over each of 6 bread slices. Spread cream cheese, then jelly, over remaining 6 bread slices. Top with peanut butter bread slices. Cut each sandwich into 4 triangles.

3 to 4 pounds boneless pork shoulder butt roast
1 teaspoon salt
1/2 teaspoon pepper
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 cup creamy peanut butter
3/4 cup apricot preserves
1/4 cup packed brown sugar
1/4 cup finely chopped onion
1/4 cup cider vinegar
3 tablespoons Dijon mustard
1 garlic clove, minced
2 tablespoons butter, melted
6 ciabatta rolls, split
Coleslaw, optional

Steps:

  • Sprinkle roast with salt and pepper; transfer to a 5-qt. slow cooker. In a large bowl, whisk broth, peanut butter, preserves, brown sugar, onion, vinegar, mustard and garlic; pour over meat. Cook, covered, on low 6-8 hours or until meat is tender., Preheat broiler. Remove roast; cool slightly. Shred pork with 2 forks. Return pork to slow cooker; heat through. Brush butter over cut sides of rolls. Place rolls, buttered side up, on an ungreased baking sheet. Broil 3-4 in. from heat 30-60 seconds or until golden brown. Using a slotted spoon, spoon pork mixture onto roll bottoms; top with coleslaw if desired. Replace tops.

This recipe idea came from a friend who was lucky enough to attend a Garden Party at Buckingham Palace - she swears this is how they made them! Cucumber sandwiches achieved literary notoriety in Oscar Wilde's play The Importance of Being Earnest (1895) when Algernon devours an entire plate full in the first act and there are none left for his aunt, Lady Bracknell. They are presented by Jack as being a delicacy: "Hallo! Why all these cups? Why cucumber sandwiches? Why such reckless extravagance in one so young? Who is coming to tea?"

1 thin cucumber
8 slices brown bread, sliced
8 slices white bread, sliced
4 ounces fresh unsalted butter
1 -2 teaspoon finely chopped of fresh mint
salt and pepper

Steps:

  • Peel cucumber and slice in paper-thin rounds. Salt rounds lightly and place in colander for 15 minutes to drain. Press to release water; pat dry with paper towels.
  • Spread sliced bread with softened butter. Put 2 layers of cucumber slices on bottom slice, sprinkle with finely chopped mint, salt and pepper to taste, and top with another buttered slice. Press lightly with palm of hand.
  • Cut all crusts off with a sharp knife. Cut sandwiches in half diagonally and then again into quarters.
  • Serve in alternate rows of brown and white bread sandwiches, points facing up!
