This low-carb keto cream of chicken soup recipe will satisfy all your cravings for a hearty, cold-weather meal. Plus, it takes less than 30 minutes to make.

4 cups chicken broth or bone broth
4 chicken breasts or organic rotisserie chicken (boneless, cooked, and shredded)
1/2 teaspoon black pepper
1 teaspoon salt
1/4 teaspoon xanthan gum
3 tablespoons butter
2 carrots (roughly chopped)
1 cup celery (roughly chopped)
1 onion (roughly chopped)
2 cups heavy whipping cream or coconut cream

Steps:

  • Melt butter in a large saucepan set to medium heat.
  • Add carrots, celery, onion, salt, and pepper. Saute for 5-6 minutes until vegetables are slightly softened.
  • Stir in shredded chicken, then pour in the chicken stock or broth and cream.
  • Cook for 12-15 minutes under low-medium heat.
  • Sprinkle in xanthan gum while continually stirring. Simmer soup for an additional 5-6 minutes.
  • Add more xanthan gum for a thicker consistency if you want. Serve and enjoy.

6 slices no sugar bacon
2 tablespoons butter
2 cloves garlic
3.5 ounces shiitake mushrooms (sliced)
1/3 cup white cooking wine (or water)
1/2 cup coconut milk (or almond milk)
1/2 cup heavy cream
3 cups chicken bone broth
4 ribs celery (chopped)
4 pieces deboned skinless chicken thighs (cooked and chopped)
salt
pepper
2 tablespoons fresh parsley (chopped)

Steps:

  • Cook bacon in 1 tablespoon butter over medium heat in large soup pot until crispy. Remove bacon from pot and set aside.
  • Add 1 tablespoon butter to pot, add garlic and cook until golden. Add mushrooms and cook until they are softened.
  • Add wine or water and cook until liquid is reduced by half.
  • Stir in coconut milk, heavy cream, and chicken broth. Add celery and chicken. Simmer until heated throughout. Season with salt and pepper to taste. Garnish with parsley and bacon.

3 ounces chicken breasts
3 cups water
1 cup heavy cream
4 teaspoons chicken bouillon powder
2 teaspoons parsley
1/3 cup diced onion
1/3 cup diced celery
2 tablespoons butter
2 teaspoons white pepper
2 tablespoons ground flax seeds

Steps:

  • Dice Onions, Celery & Chicken (dice chicken separately).
  • in a 4 quart pan Sautee Onion & Celery in butter for approximately 5 minutes.
  • In non stick frying pan cook 3 ounce chicken breast submerged in water until cooked (approximately 5 minutes)
  • Add all ingredients (except chicken) into a the 4 quart pot. Stir ingredients & bring contents of pot to a simmer. Once Pot is at a simmer let simmer for eight minutes.
  • Once soup is finished simmering remove from heat & let cool enough so that it can be placed in Blender. Blend for 1 minute. Add Chicken to soup & serve.

1/3 cup diced onion
2 tablespoons unsalted butter
1 cup fresh mushrooms, sliced
2 tablespoons ground flax seeds
1 teaspoon parsley
1/4 teaspoon mace
1/4 teaspoon nutmeg
1/4 teaspoon white pepper
1/4 teaspoon black pepper
2 1/2 teaspoons chicken bouillon powder
3 cups water
1 cup heavy cream

Steps:

  • Place the onions, mushrooms and butter in a 4 quart pot and sautee for five minutes or until mushrooms brown & cooked.
  • Add all remaining ingredients into the pot and bring to a simmer and stir well.
  • Once ingredients are at a simmer let pot simmer for eight minutes.
  • After eight minutes have lapsed let soup cool enough to place into blender and blend until soup is smooth, then serve.
