Loaded mashed potatoes are a savory side dish for any dinner.

Number Of Ingredients 8

2 heads garlic
6 lbs peeled and quartered Idaho potatoes
2 teaspoons freshly ground black pepper
1/2 cup butter
1 (12 oz) carton sour cream
1 (8 oz) package grated sharp white cheddar cheese
1 1/2 lbs cooked julienned cooked bacon
salt

Steps:

  • Preheat oven to 350 °F.
  • Cut tops off 2 garlic heads. Wrap in foil and roast for 30 minutes. When cool enough to handle remove the flesh from the garlic heads and set aside.
  • In a large stockpot, cook potatoes in enough salted water to cover for 10 to 15 minutes or until tender.
  • Drain and return to stockpot. Beat with an electric mixer until smooth; adding salt, pepper, butter, garlic and sour cream. With a spatula stir in cheese and bacon. Add more salt and pepper, if necessary. Serve immediately.

MASHED POTATO BAKE

Makes 8 to 10 servings

Number Of Ingredients 8

5 pounds Yukon gold potatoes, peeled and cut into 2-inch pieces
1½ cups half-and-half
4 ounces cream cheese, softened
4 ounces shredded Gruyère cheese
¼ cup plus 3 tablespoons salted butter, cut into ½-inch pieces and divided
1½ teaspoons kosher salt
¼ teaspoon ground black pepper
Garnish: fresh rosemary

Steps:

  • Preheat oven to 350°. Spray a 13x9-inch baking dish with cooking spray.
  • In a large Dutch oven, bring potatoes and water to cover to a boil over medium-high heat. Reduce heat, and simmer until tender, about 15 minutes; drain.
  • In a large bowl, mash potatoes with a potato masher until coarsely mashed. Stir in half-and-half, cream cheese, Gruyère, ¼ cup butter, salt, and pepper until well combined. Pour into prepared pan.
  • Bake until hot and bubbly and edges are golden brown, 35 to 40 minutes. Dot with remaining 3 tablespoons butter before serving. Garnish with rosemary, if desired.

2 cups French-fried onion rings
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic salt
1/2 cup sour cream
1 (7.6 oz) package butter & herbed mashed potato mix
1 cup Monterey Jack cheese
4 cups frozen hash browns
4 oz cream cheese
1 stick butter
2 cups water

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.

7 5/8 ounces instant mashed potatoes with butter and herbs
1/2 cup butter, softened
4 ounces cream cheese, softened
1 cup monterey jack cheese, shredded
1/2 cup sour cream

2 cups boiling water
2 cups French fried onion rings

2 packages (24-ounce) refrigerated Simply Potatoes Traditional Mashed Potatoes
1/2 package (8-ounce) Philadelphia Cream Cheese
3/4 teaspoon ground black pepper
3 1/2 cups shredded rotisserie chicken breast, divided
2 cups shredded Cheddar cheese, divided
1 cup chopped green onion, divided
1 package (12 ounce) fresh broccoli florets, divided
6 slices Smithfield Naturally Hickory Smoked Bacon, cooked, crumbled, and divided

Steps:

  • Preheat oven to 375º. Grease a 13×9-inch baking dish. Peel back film at corner of each package of potatoes to vent. Microwave on HIGH for 3 minutes. In a large bowl, combine potatoes, cream cheese, and pepper; beat at medium speed with a mixer until combined. Stir in 1¾ cups chicken, 1 cup cheese, 2/3 cup green onion, half of broccoli, and half of crumbled bacon. Spread mixture in prepared dish. Sprinkle with remaining 1¾ cups chicken, remaining broccoli, remaining bacon, and remaining 1 cup cheese. Cover and bake for 45 minutes or until cheese melts and casserole is heated through. Top with remaining 1/3 cup green onion.

2 cups mashed potatoes
1/2 cup sour cream
1 small onion, sliced thin
1 small bell pepper, sliced thin
8 tablespoons butter
1 1/2 cups grated cheddar cheese
4 medium potatoes, cooked
6 slices bacon, cooked crisp
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Preheat oven to 350 degrees F.
  • Spread mashed potatoes evenly on bottom of casserole dish.
  • Layer sour cream evenly over top.
  • Sprinkle House Seasoning, to taste.
  • Saute onion and bell pepper in butter; evenly layer over top of sour cream.
  • Slice potatoes and layer over onions and bell peppers.
  • Add butter.
  • Sprinkle House seasoning.
  • Finally top with cheese.
  • Bake for 25 to 30 minutes.
  • Remove from oven and crumble bacon over top.
  • Cook's Note: Leftover mashed potatoes work wonderfully in this recipe.
  • House Seasoning:
  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
  • Mix ingredients together and store in an airtight container for up to 6 months.
