This is the perfect way to use up all that summer squash! With cheddar, garlic, green onions and dill mixed into the batter this loaf is hard one to resist.

Number Of Ingredients 12

3 cups all-purpose flour
4 tsp baking powder
1 tsp salt
1/2 tsp baking soda
2 tsp garlic powder
1 1/2 cups shredded summer squash ((zucchini, magdam pattypan, etc))
3/4 cup shredded cheddar cheese
1 tbsp chopped green onion
3 tbsp chopped fresh dill
2 eggs
1 cup buttermilk
1/4 cup unsalted butter (, melted)

Steps:

  • Preheat oven to 350°F. Grease a regular size loaf pan and set aside.
  • In a large bowl stir together the flour, baking powder, salt, baking soda and garlic powder. Add in the shredded squash, cheddar cheese, green onions and dill, stirring to fully combine.
  • In a separate, smaller bowl, mix together the eggs, buttermilk and butter.
  • Pour the wet ingredients into the dry mix in the large bowl and stir together until just combined.
  • Spoon batter into loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.

You could also sprinkle a bit of finely shaved Parmesan cheese on them for additional flavor and saltiness.

2 pounds patty pan squash
1 small red onion
2 tablespoons olive oil
2 teaspoons ground coriander
1 teaspoon kosher salt
½ teaspoon ground black pepper
3 tablespoons unsalted butter, melted
2 tablespoons lemon juice
2 tablespoons chopped fresh chives
1 tablespoon lemon zest

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with parchment paper.
  • Cut squash into 1/2-inch wedges. Slice onion vertically into thin slices. Combine squash, onion, olive oil, coriander, salt, and pepper in a large bowl; toss to coat vegetables evenly in oil and seasonings. Spread out vegetables in an even layer on the prepared baking sheet.
  • Bake in the preheated oven until squash is tender and slightly browned, 20 to 25 minutes.
  • Combine melted butter, lemon juice, chives, and lemon zest in the same large bowl; toss cooked squash in butter mixture and serve hot.

3 cups whole wheat flour (or use 1 1/2 cups white flour and 1 1/2 cups whole wheat for a lighter bread)
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
3 eggs
1 cup vegetable oil
3 teaspoons vanilla
2 1/3 cups sugar
3 cups grated Patty Pan Squash
1 1/2 cup chopped pecans

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8-by-4-inch pans. Combine flour, salt, baking powder, soda, cinnamon and nutmeg together in a bowl. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the wet mixture; beat well. Stir in squash and nuts until well combined. Pour batter into prepared pans. Bake for 50 to 70 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove loaves from pan, and completely cool.

4 cups thinly sliced yellow summer squash (3 medium)
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
3/4 cup panko bread crumbs
3/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 450°. Place squash in a large bowl. Add oil and seasonings; toss to coat., In a shallow bowl, mix bread crumbs and cheese. Dip squash in crumb mixture to coat both sides, patting to help coating adhere. Place on parchment-lined baking sheets. Bake 20-25 minutes or until golden brown, rotating pans halfway through baking.
