1 can (8 ounces) pizza sauce, divided
1/2 cup seasoned bread crumbs
1/2 cup finely chopped green pepper
1/4 cup finely chopped onion
2 large egg whites
1 garlic clove, minced
1 pound lean ground beef (90% lean)
6 slices Italian bread (1/2 inch thick)
2 teaspoons olive oil
1-1/2 teaspoons Italian seasoning
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • In a large bowl, combine 1/3 cup pizza sauce, bread crumbs, pepper, onion, egg whites and garlic. Add beef; mix lightly but thoroughly. Shape into 6 oval patties., In a large nonstick skillet, cook patties over medium heat 4-5 minutes on each side or until a thermometer reads 160°., Meanwhile, place bread on an ungreased baking sheet. Brush tops with oil; sprinkle with Italian seasoning. Broil 3-4 in. from heat 1-2 minutes or until golden brown., Place remaining pizza sauce in a microwave-safe bowl. Microwave, covered, on high for 10-20 seconds or until heated through. Place patties on toast; top with sauce and cheese. Freeze option: Place patties on waxed paper-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. Freeze remaining pizza sauce in an airtight container. To use, cook frozen patties and pizza sauce as directed, increasing time as necessary for a thermometer to read 160° for patties and for sauce to be heated through.

We are big fans of pizza burgers that some greasy spoons serve, but it is so hard to find a good one so I decided to come up with my own. Here is a real simple recipe that puts smiles on the faces of my family.

1 pound ground beef
1 tablespoon tomato paste
1 teaspoon salt
1 teaspoon white sugar
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon ground black pepper
¼ teaspoon dried oregano
4 slices mozzarella cheese
4 fresh hamburger buns

Steps:

  • Combine beef, tomato paste, salt, sugar, garlic powder, Italian seasoning, pepper, and oregano in a large bowl. Mix thoroughly. Cover and refrigerate to let flavors marry, about 4 hours.
  • Form beef mixture into 8 thin patties. Place 1 slice of mozzarella cheese on each of 4 patties; leave at least a 1/2-inch border, breaking up the cheese as needed. Place remaining patties on top and pinch edges to seal in the cheese.
  • Heat a skillet over medium-low heat. Fry burgers until browned and centers reach 165 degrees F (74 degrees C), 6 to 7 minutes per side. Serve on buns.

JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA

This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

3 cups all-purpose flour or 3 cups bread flour, more for dusting
1/4 teaspoon instant yeast
1 1/2 teaspoons salt
1 1/4 cups water
1 vine-ripened tomatoes (about 5 oz.) or 1 heirloom tomato (about 5 oz.)
1 pinch salt
1/4 teaspoon extra virgin olive oil
5 tablespoons tomato sauce
2 ounces buffalo mozzarella (about 1/4 ball)
basil leaves
1 tablespoon extra virgin olive oil
salt

Steps:

  • To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
  • Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
  • Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
  • To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
  • To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

I just love making my own pizza. I was using Boboli crust initially, but then I discovered Tiseo's frozen pizza dough, and found it to be superior, and less costly. I will sometimes use the Pillsbury pizza dough if the store doesn't have the Tiseo's, but for best results, I like to use Tiseo's. My son Marshall once called my...

1/2 lb ground italian sausage
1/2 jar(s) pizza sauce
8 oz shredded mozarella
1 pkg pepperoni slices
1 can(s) mushroom pieces
1 pkg frozen pizza dough

Steps:

  • 1. Follow directions for thawing pizza dough. I usually do this overnight. I use a brand called Tiseo's. It's really good, if you can find it.
  • 2. Brown Italian sausage until no longer pink. Placed on paper towel-lined plate
  • 3. Take pizza dough out of fridge. Place on a floured board. Roll out to a 12" circle.
  • 4. Spray pizza pan with cooking spray. Dust with cornmeal. Place dough on pizza pan.
  • 5. Cover dough with 1/2 jar pizza sauce, then Italian sausage, then mozzarella. Top with pepperoni and mushrooms. If you'd like, add any other toppings you wish.
  • 6. Bake at 450 for 15 minutes. Serves 4. (You can cut it into 8 slices. I figure 2 per person is a serving)

I love thin crust pizza so I like to make it myself because even when I request thin pizza at restaurants it's not quite what I want. I used LaWanda's 30 minute pizza for the crust.Made this pizza for lunch today and it was awesome! The crust came out thin and crispy,just like I love it! You can top it with anything but this is one of my favorites toppings and it was what I had on hand without having to go to the store today, I love that! Pesto made from basil in the garden,tomatoes from my garden,so good!!!

- 1 3/4 -2 1/4 c all-purpose flour
- 1 envelope fleischman's pizza yeast
- 1 1/2 teaspoons sugar
- 3/4 teaspoon salt
- 2/3 c warm water
- 3 tablespoon olive oil
- pesto
- parmesan cheese
- dried oregano
- salt and pepper,to taste
- tomatoes,sliced thin

Steps:

  • Preheat oven to 425 deg. Combine 1 c flour,yeast,sugar and salt in a large bowl.Add water and oil. Mix until well blended;about 1 minute. Add gradually,enough remaining flour until soft dough is formed. Dough will be sticky. Knead on a floured surface adding additional flour if needed,until smooth and elastic about 4 minutes. With floured hands ,pat dough out to fill greased pizza pan,or roll dough to a 12-inch circle and transfer to a greased pizza pan. Spread with pesto,sprinkle with Parmesan cheese,oregano,salt and pepper.top with tomatoes and additional cheese. Bake on bottom oven rack for 12 to 15 minutes until cheese is bubbly and crust is browned.
