Steps:
- Simmer pastrami in broth until hot.
- Divide meat among bread, using 4 ounces for smaller sandwich, and 8 ounces for large.
- Add cheese, mustard, pickles, and onions to taste.
- Grill sandwich until toasty and crisp if desired.
- Serve warm with chips if desired.
PASTRAMI REUBEN SANDWICH
The sauce can be doubled if desired, start with 2 tablespoons of relish and keep adding in until you achieve the flavor you like.

Steps:
- Heat oil in a skillet.
- Add in onion; saute over medium heat until tender (about 7-8 minutes).
- Add in sauerkraut and caraway seeds; cover and cook over medium heat (stirring occasionally until sauerkraut is tender and lightly browned, about 20 minutes).
- Meanwhile in a bowl combine ketchup, mayo and relish (start with 2 tablespoons relish and add in more until you achieve the flavor you like).
- Split the bread rolls (careful not to cut all the way through).
- Place pastrami down the center, dividing evenly between buns.
- Top with sauerkraut/onion mixture, then the sauce, then top with cheese.
- Wrap in foil (leave top open).
- broil about 8 inches from heat.
- Heat through and until cheese has melted (about 3 minutes).
- Serve.

- Preheat a grill. Season onions with salt and pepper and brush with oil. In a small saucepan combine beer and mustard and bring to a boil. Add pastrami and simmer for 3 minutes. Grill onions on both sides and toast bread on a cooler part of the grill. When all ingredients are heated, prepare sandwich.

- In a saucepan, over medium heat, combine the broth, beer and Worcestershire sauce and bring to a boil, then reduce heat to low.
- Separate the slices of pastrami and drop each into the sauce, allowing the pastrami to heat through.

- In a mixing bowl, blend the mayonnaise, lemon juice, horseradish, garlic, caraway seeds, and salt and pepper.
- Add red cabbage and toss to coat cabbage.

- 1. Preheat oven to broil. Line a baking sheet with parchment paper or foil; set aside.
- 2. To assemble the sandwich, generously spread Apple Butter and mustard on each roll. Top with pastrami and cheese.
- 3. Place into oven and broil until the cheese has melted, about 2 minutes. Serve immediately, sprinkled with chives.
BREAKFAST PASTRAMI SANDWICH
If you time this so the eggs are cooked just as the toast is done, the cheese should melt, eliminating the need to microwave the whole sandwich. Do note that if you're watching your sodium, you might want to indulge in this sandwich only on occasion. It is on the higher side, but still has only a fraction of the sodium you'd find in a similar restaurant sandwich.

- Lightly mist a small microwave-safe bowl with spray. Add the egg whites and microwave for 30 seconds on low. Continue microwaving them in 30-second intervals until they are just barely runny on top. Then using a fork, stir to break them into large "scrambled" pieces. If they are still undercooked, cook them in 10-second intervals until just done.
- Place a piece of the toast on a serving plate and top it evenly with the cheese, followed by the eggs, then the pastrami. Top the sandwich with the remaining toast slice. Wrap it in a paper towel and microwave it on high for 10 seconds to warm it through. Serve immediately.
- Follow the directions above, but instead of microwaving the egg whites, simply scramble them in a nonstick skillet lightly misted with spray over medium heat.

HOT PASTRAMI SANDWICH

- Heat a flattop grill or pan on medium heat. Butter one side of each slice of bread. Set the buttered side of bread on the flattop. Add provolone to one slice and Swiss to the other slice. Grill until bread is toasted and cheese has melted, approximately 5 minutes, then remove from the flattop. Meanwhile, place pastrami on the flattop in a pile and the sauerkraut on the flattop in a separate pile. Grill both until warm, 1 1/2 to 2 minutes, then flip and warm the other side. Add mayonnaise to both pieces of bread, then add mustard to one half. Place half the pastrami on one slice and the other half on the other slice. Add sauerkraut to one half and flip the other slice on top. Cut sandwich in half and enjoy!
PASTRAMI SANDWICH
This really isn't a recipe it's just the method to my madness for a pastrami sandwich,which my husband and I love! Simple and delicious! I know most people would have three pastrami on rye,but we like it on sourdough.A lot of folks put coleslaw in the sandwich,Uhm,NO! we don't do that in CA! Coleslaw belongs on the side! We LOVE dill pickles so I put them in the sandwich AND a pickle spears on the side. My favorite pastrami is Boar's Head,I like to have it sliced at the deli counter.
