This Mushroom & Garlic Pasta with Brussels Sprouts is a hearty and cozy Fall dinner! Dairy Free, Vegan, and Oil Free.

1 Medium Yellow Onion, sliced into quarter-rings
2 cups Vegetable broth, divided
3-5 cloves Garlic, minced
8 oz Baby Bella Mushrooms, sliced
½ tsp fresh Thyme
1 ½ cup Brussels Sprouts, shredded
¼ cup Tahini
1 tbsp Lemon Juice
8 oz dry Pasta, cooked according to package instructions
Pomegranate Seeds, for garnish (optional)

Steps:

  • First, add the Onions to the pan with a splash of Vegetable Broth. Sauté the Onions as you normally would in the pan, but let all of the Vegetable Broth evaporate. Let the Onions "sit" in the pan for 10-20 seconds without liquid, then "deglaze" the pan using a splash of Vegetable Broth. Repeat this process until you have used about 3/4 cup of Vegetable Broth, and the Onions are soft and Golden. (This process took me about 10-12 minutes in total)
  • Cook the pasta according to the package instructions. Add the Mushrooms, Garlic, a large pinch of Black Pepper, and Thyme to the pan along with a splash of Vegetable Broth. Reduce the heat to medium and Sauté for an additional 5 minutes. Add the Brussels Sprouts to the pan and reduce the heat to Medium-Low.
  • Add the Tahini to the base of a small bowl, then gradually whisk in the remaining Vegetable Broth until smooth and creamy. Pour this mixture into the pan with the vegetables and let simmer for 3-5 minutes.
  • Finally, add the Lemon Juice and cooked Pasta to the pot, stirring well to combine. Divide equally into bowls and garnish with Pomegranate Seeds and more Black Pepper to taste.

Whole Grain Spaghetti With Brussels Sprouts and Mushrooms image

Kosher salt
1 pound whole-grain or whole wheat spaghetti
1 cup grated Pecorino Romano
1/4 cup extra-virgin olive oil
1 pound Brussels sprouts, trimmed, halved and thinly sliced
1 medium onion, finely chopped
1 pound mushrooms, such as cremini, button or shiitake, cleaned and chopped
3 cloves garlic, minced
3 teaspoons kosher salt
Freshly ground black pepper
1 cup creme fraiche, at room temperature (about 8 ounces)
1/2 cup vegetable broth
2 tablespoons fresh lemon juice (from 1/2 large lemon)
Zest of 1 large lemon
1/2 cup slivered almonds, toasted*

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and place in a large serving bowl. Toss with 1/2 cup cheese.
  • In a large skillet, heat the oil over medium-high heat. Add the Brussels sprouts, onions, mushrooms, garlic, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring occasionally, until the onions are soft, 6 to 8 minutes. Add the creme fraiche, vegetable broth, lemon juice and lemon zest. Bring to a simmer and stir until the mixture forms a creamy sauce, about 2 minutes. Stir in 2 teaspoons salt and 1 teaspoon pepper.
  • Pour the sauce over the pasta, add the almonds and toss until coated. Sprinkle with the remaining cheese and serve.

Caramelized Brussels Sprouts Pasta With Toasted Chickpeas image

This fast and satisfying vegetarian weeknight pasta packs in a whole pound of brussels sprouts. The mountain of shredded sprouts may seem like a lot, but like spinach, it will cook down. As the sprouts soften, they caramelize and naturally sweeten, losing any hints of bitterness. Chickpeas are toasted in olive oil until deep golden brown, crispy in spots and super toasty. They bring a nutty, earthy flavor to the dish, complementing the tangy capers and lemony sauce. Leftovers are tasty enjoyed cold like pasta salad, added to a frittata, or sautéed in olive oil until golden and topped with a fried egg.

6 tablespoons extra-virgin olive oil
1 (15-ounce) can chickpeas, rinsed and patted dry
2 tablespoons unsalted butter
3 garlic cloves, thinly sliced
1 pound brussels sprouts, trimmed and very thinly sliced (about 5 tightly packed cups)
8 ounces dried tagliatelle pasta
1/2 cup freshly grated Parmesan (about 1 1/2 ounces), plus more for serving
2 tablespoons drained capers
2 tablespoons lemon juice
1/2 teaspoon red-pepper flakes
1/4 cup chopped fresh chives

Steps:

  • Bring a pot of salted water to a boil.
  • Meanwhile, in a Dutch oven or a large, deep skillet, heat 2 tablespoons of the oil over medium. Add chickpeas, season with salt and pepper and cook, stirring occasionally, until deep golden and well toasted, about 5 minutes. Transfer the chickpeas to a paper towel-lined plate.
  • Add the butter, garlic and 2 tablespoons of the oil to the Dutch oven and cook, stirring, until fragrant, about 1 minute. Add brussels sprouts, season with salt and pepper, and cook, stirring occasionally, until tender and lightly caramelized, about 10 minutes.
  • Meanwhile, cook pasta according to package directions in the boiling water until al dente. Drain, reserving 2 cups of the pasta water.
  • Add the pasta, 1 cup reserved pasta water, about 3/4 of the toasted chickpeas and the remaining 2 tablespoons oil to the Dutch oven. Stir in the Parmesan, capers, lemon juice, red-pepper flakes and half the chives until well incorporated and saucy, 1 to 2 minutes. Season with salt and pepper. Add more pasta water if a thinner sauce is desired.
  • Divide pasta among bowls. Top with remaining toasted chickpeas and chives. Garnish with more black pepper and Parmesan.

1 pound linguine or other long pasta
Coarse salt and ground pepper
2 tablespoons olive oil
2 pounds assorted fresh mushrooms, cleaned and sliced 1/2 inch thick
6 garlic cloves, thinly sliced
1 cup finely grated Parmesan cheese, plus more for serving

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1 cup cooking water; drain pasta, and return to pot.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add mushrooms and garlic; season with salt and pepper. Cover skillet (it will be full); cook, tossing occasionally, until mushrooms have softened and released their liquid, 7 to 10 minutes. Uncover skillet, and reduce heat to medium; cook, tossing occasionally, until mushrooms are tender and browned, 10 to 12 minutes.
  • Add mushroom mixture and Parmesan cheese to pasta; toss to combine. Add as much reserved pasta water as necessary to create a light sauce. Serve immediately, topped with more Parmesan cheese.

1/2 pound egg pappardelle pasta
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons unsalted butter
2 shallots, thinly sliced
1 cup small brussels sprouts, thinly sliced lengthwise
1 cup fresh maitake mushrooms, trimmed and cut into 2-inch pieces
1 1/2 cups fresh chanterelle mushrooms, trimmed and sliced
1 teaspoon finely chopped oregano

Steps:

  • Bring a large pot of water to a boil. Add a large pinch of salt and pasta. Cook according to package instructions.
  • In a large straight-sided skillet, heat oil and 1 tablespoon butter over medium-high heat. Add shallots, and cook until softened, about 3 minutes. Add brussels sprouts and 2 tablespoons water. Season with salt. Cook until brussels sprouts are tender, about 2 minutes. Add mushrooms and oregano. Season with pepper. Cook until mushrooms have softened. Remove skillet from heat, and stir in remaining 1/2 tablespoon butter.
  • Drain pasta, and transfer to a platter. Top with mushroom and brussels sprouts mixture. Serve immediately.

1/2 pound short whole-wheat pasta, such as rigatoni
2 tablespoons extra-virgin olive oil
1/2 pound cremini or button mushrooms, thinly sliced
1/2 pound brussels sprouts, trimmed and shredded
2 garlic cloves, minced
1 teaspoon finely grated lemon zest, plus 2 teaspoons lemon juice

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions. Reserve 1/4 cup pasta water; drain pasta and return to pot.
  • Meanwhile, in a large skillet, heat half the oil over medium-high heat. Add mushrooms and season with salt. Cook, stirring occasionally, until browned, about 6 minutes. Add mushrooms to pasta. Reduce skillet heat to medium and add remaining oil, brussels sprouts, and garlic and season with salt and pepper. Cook, stirring often, until brussels sprouts are soft, 4 to 6 minutes.
  • Add brussels sprouts mixture and lemon zest to pasta. Stir in enough reserved water to create a thin sauce that coats pasta. Add lemon juice; season to taste with salt and pepper.
