4 packages (10 ounces each) frozen raspberries, thawed and undrained
1 can (6 ounces) frozen lemonade concentrate, thawed
1 bottle (2 liters) ginger ale, chilled

Steps:

  • In 4-quart Dutch oven, cook raspberries over medium heat 10 minutes, stirring frequently; cool slightly. Push through strainer with large spoon to remove seeds. Refrigerate raspberry juice at least 2 hours.
  • In punch bowl or large pitcher, mix raspberry juice and lemonade concentrate. Stir in ginger ale. Serve immediately over ice.

This punch is perfect for parties. It's a showy punch and your guests will be intrigued by the fizz, colorful floating fruit and sherbet of course.

2 Liter Bottle Sierra Mist (Sprite or 7-up, chilled)
2 Liter Bottle Club Soda (chilled)
1 Fruit punch can (12oz, or pink lemonade, thawed in the fridge)
1 Pineapple juice can (12oz, thawed in the fridge)
6-8 scoops Raspberry Sherbet Ice cream (or any flavor you have available)
Fresh or frozen raspberries for garnish
Pineapple slices for garnish (canned or fresh)

Steps:

  • Pre-scoop ice cream and place on a baking dish lined with plastic wrap. Freeze and add ice cream just before serving so it remains frozen in the punch.
  • In a punch bowl, combine: 2 juice cans. Pour in Sierra Mist and Club Soda and gently stir until combined.
  • Add pineapple slices and raspberries if using and top with scooped sherbet just before serving. The ice cream will keep it chilled.

This is a delightful punch to serve guests in the summer, when mint and raspberries are fresh. But because I have lots of mint, I like to serve this year-round.

9 cups water, divided
1 to 1-1/2 cups coarsely chopped fresh mint
1/2 cup sugar
3 packages (10 ounces each) frozen sweetened raspberries
2-1/4 cups lemonade concentrate, undiluted (18 ounces)
Ice cubes

Steps:

  • In a large saucepan, bring 3 cups water, mint and sugar to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes. Stir in the raspberries, lemonade concentrate and remaining water. Refrigerate overnight., Strain raspberry mixture, reserving liquid. Press berries and mint through a sieve; discard seeds and mint. Combine raspberry juice with the reserved liquid. Serve over ice.

1 cup frozen raspberries, plus extra for garnish
1/2 cup fresh mint leaves, plus extra for garnish
1 tablespoon granulated sugar
3/4 cup white rum
1 tablespoon fresh lime juice
One 750-milliliter bottle Lillet
Ice
1 cup seltzer

Steps:

  • Mash the raspberries with the mint and sugar in a large bowl, using a potato masher or muddler, until the raspberries break down into very small pieces. Add the rum, lime juice and Lillet and stir to combine. Cover and refrigerate 1 to 4 hours.
  • Strain the mixture into a large pitcher with ice. Add some raspberries and mint for garnish and top off with the seltzer. Serve immediately.

Maraschino cherries, for garnish

Steps:

  • Mix the passion fruit juice, pineapple juice, light rum, orange juice, dark rum, grenadine and almond extract together in a 2-gallon container. Chill until ready to serve.
