LEMON COCONUT PARTY SQUARES

I love these no bake Lemon Coconut Squares, as I love anything with lemon in it. They are really popular in Australia and you often get them at morning and afternoon teas.

Number Of Ingredients 9

1/2 cup sweetened condensed milk
4 ounces butter
8 ounces milk arrowroot biscuits, finely crushed (a plain sweet cookie)
1 teaspoon grated fresh lemon rind
1 cup coconut
1 3/4 cups icing sugar
3 tablespoons lemon juice
1/2 ounce butter
2 tablespoons coconut

Steps:

  • Put condensed milk and butter in a small pan, stir over gentle heat until butter has melted and mixture is combined.
  • Add lemon rind and coconut to biscuit crumbs, mix well.
  • Add butter and milk mixture to crumb mixture, mix together well with your hands.
  • Press into a greased lamington tray (11in x 7in).
  • Refrigerate 1 hour.
  • Ice with lemon icing, sprinkle with coconut.
  • When the icing has set, cut into squares.
  • Lemon Icing: Combine sifted icing sugar, lemon juice and soft butter in a bowl.
  • Mix well to make a smooth icing.

Velveeta cheese
1 1/2 lbs pork sausage
2 tablespoons grape jelly
rye cocktail bread, slices

Steps:

  • Brown sausage and drain well.
  • Return cooked sausage to pan and add jelly.
  • Cut velveeta in pieces and add to sausage mixture.
  • Heat on low until cheese is melted.
  • Top each bread slice with heaping teaspoonful of sausage mixture.
  • Place under broiler until edges of bread are toasty.
  • Serve warm.

This recipe was given to my Mother in law and it is one of those special always-at-the-holidays sweets. They are very sweet, so cutting them in very small squares is usually how we do it. I just guessed at the servings because it really depends on how you cut it.

1/2 cup butter
1 cup brown sugar
1 egg
2 cups graham cracker crumbs
1 (14 ounce) can sweetened condensed milk
8 ounces sweetened flaked coconut
1/4 cup butter
2 cups icing sugar
1 tablespoon milk
red food coloring

Steps:

  • Layer 1:.
  • In a double boiler (or a metal bowl over a pot of boiling water, as I do) add; 1/2 cup butter, 1 cup brown sugar and 1 egg (well beaten). Stir constantly until smooth and shiny. Remove from heat and add 2 cups graham crumbs. Pack into 9x9 pan.
  • Layer 2:.
  • Stir together 3/4 of a can of sweetened condensed milk and 8 ounces coconut. Spread on graham layer.
  • Icing:.
  • Combine 1/4 cup butter with 2 cups icing sugar and 1 tbsp milk. Add a few drops of red food coloring, until a nice pink shade is reached, and stir until smooth. Spread on top of coconut layer.
  • Refrigerate at least 3 hours.

2 pkg (8 ounce each) refrigerated crescent rolls
1/2 c mayonnaise
1/2 c sour cream
1 envelope (.9 ounce) dry vegetable soup and dip mix (lipton)
1 pkg (10 ounce) frozen chopped spinach, thawed and well drained
1 can(s) (14 ounce) artichoke hearts in water, drained and chopped
1 can(s) (8 ounce) sliced water chestnuts, drained and chopped
1 pkg (4 ounce) crumbled feta cheese
1 glove garlic (pressed)
1/4 c (1 ounce) grated parmesan cheese (i used canned parmesan romano)

Steps:

  • 1. Preheat oven to 375. Unroll both packages of crescent rolls and lay in the bottom of a 9 x 13 baking pan lining the bottom, squeeze it all in..you may have some left over. Bake 10-12 minutes...or until light golden brown; remove from oven.
  • 2. Meanwhile combine mayonnaise, sour cream and soup mix; mix well. Drain spinach in small colander, squeezing out as much moisture as possible; add to mixture. Drain artichokes and water chestnuts..chop with knife or food chopper. Add artichokes, water chestnuts, feta cheese and garlic..mix well with all the other ingredients.
  • 3. Spread spinach mixture evenly over crust. Sprinkle Parmesan cheese over entire pan. Bake 10-12 minutes or until heated through. Remove from oven; cut into squares.

2 (8 ounce) cans crescent rolls
0.5 (1 ounce) envelope dry vegetable soup mix
1/2 cup mayonnaise
1/2 cup sour cream
1 (10 ounce) package chopped spinach, thawed and squeezed dry
1 (14 ounce) can artichoke hearts, drained and chopped
1 (8 ounce) can water chestnuts, drained and chopped
1 garlic clove, pressed
4 ounces feta cheese, crumbled
1/4 ounce parmesan cheese, fresh grated

Steps:

  • Preheat oven to 375 degrees. Flatten crescent rolls onto a baking sheet and press seams together. Bake 10-12 minutes; set aside. Combine soup mix, mayonnaise, and sour cream. Add spinach, artichoke hearts, water chestnuts, garlic, and feta cheese. Spread mixture over crescent roll dough. Top with parmesan cheese. Bake 10-12 minutes. Cut into squares with a pizza cutter and serve hot.

These snack squares are a huge hit at work and parties - they are very easy to make, and easy to enjoy!

5 cups mini marshmallows
1/2 cup butter
1/3 cup creamy peanut butter
2 cups pretzel sticks, halved
1 1/2 cups M&M's plain chocolate candy
2 cups Corn Chex

Steps:

  • Melt butter and peanut butter in a microwave-safe dish.
  • Add the mini-mallows and microwave until smooth, stirring frequently.
  • In a separate, large mixing bowl, combine the M&M's, Chex, and pretzels.
  • Pour the mallow mixture over the Chex mixture, and stir to coat (will be a little messy and gooey!) Pour (or rather, plop) entire works into a 9x13 pan and spread it so it is even.
  • I spray the pan with Pam so they're easier to remove later.
  • Let cool, cut into squares, and enjoy!
