1 cup onion, diced
1/2 cup green pepper, diced
2 tablespoons butter or 2 tablespoons margarine
2 cups cooked chicken or 2 cups cooked turkey
1 (4 ounce) can green chili peppers, chopped
3 tablespoons butter or 3 tablespoons margarine
1/4-1/2 cup flour (I use 1/2 cup)
1 teaspoon ground coriander
3/4 teaspoon salt
2 1/2 cups chicken broth
1 cup sour cream
1 1/2 cups monterey jack cheese
12 (8 inch) flour tortillas

Steps:

  • In a large saucepan cook onion and green pepper in the 2 tablespoons of butter until tender.
  • Combine onion mixture in a bowl with chopped chicken and green chili peppers.
  • Set aside.
  • For sauce, in the same pan melt 3 tablespoons butter.
  • Stir in flour, coriander and salt.
  • Stir in chicken broth all at once.
  • Cook and stir till thickened and bubbly.
  • Remove from heat.
  • Stir in sour cream and 1/2 cup of the cheese.
  • Stir 1/2 cup of the sauce into the chicken mixture.
  • Fill each tortilla with about 1/4 cup of the chicken mixture.
  • Roll up and arrange in a 13x19x2 baking dish.
  • Pour remaining sauce over and sprinkle with remaining cheese.
  • Bake, uncovered in a 350 oven about 25 minutes or until bubbly.
  • Can be made ahead of time and frozen. Place a large sheet of heavy duty foil in your baking dish with enough foil over the end to fold up and over the frozen casserole. Make the casserole up until you are ready to bake it. Freeze it solid. Remove frozen casserole from your dish and encase in the excess foil for storage. This frees up the dish for other meals. When you wish to heat it, remove foil from the still frozen casserole, and place back into the dish that you froze it in initially to thaw; bake as directed.

2 lbs cooked chicken, diced (I use 1/2 bag grilled chkn strips from Costco)
1 cup sour cream
1 (10 1/2 ounce) can cream of chicken soup
32 Ritz crackers, crushed (1 sleeve)
1/2 cup butter, melted
2 teaspoons poppy seeds

Steps:

  • Put the chicken in a 9x13 pan. Mix sour cream and soup. Pour over the chicken. Mix crackers with the melted butter and poppy seeds. Sprinkle on top of soup mixture. Bake at 350 for 40 minutes.

I HAD A NEW YEARS EVE GET TOGETHER N MADE SOOOO MUCH FOOD NO ONE TOUCHD THE ONION DIP....N I JUST COULDNT THROW IT OUT ;) SO I THRU TOGETHER THIS CASSEROLE N IT CAME OUT GREAT....MY HUBBY LOVD IT N TOOK LEFTOVERS TO WORK FOR HIS LUNCH :)

1 Tbsp butter
1 Tbsp olive oil
8 oz mushrooms, sliced
1/8 c flour
1/4 c sherry or white wine (i had a drop of white wine in bottle so i used it in addition to sherry :)
2 1/2 c chicken broth
2 c left over onion dip...prepared
2 c cookd chicken, large pieces 2"
2 c partially cookd broccoli
12 oz egg noodles, al dente
1/4 c parmesean cheese
1 1/2 c havarti cheese, sliced (this is wat i had in fridge...u could use mozzerella, swiss, provalone. watever u hve on hand ;)
1-1 1/2 c french fried onions

Steps:

  • 1. PREHEAT OVEN TO 350 n PREPARE BAKN PAN WITH COOKN SPRAY...SET ASIDE.
  • 2. IN A LARGE PAN HEAT BUTTER WITH OLIVE OIL N SAUTÉ MUSHROOMS UNTIL SLIGHTLY BROWND.
  • 3. SPRINKLE IN FLOUR N COOK FOR A MINUTE
  • 4. ADD SHERRY (N WHITE WINE IF USING) COOK FOR A MINUTE THEN ADD CHICKEN BROTH...BRING TO FULL BOIL UNTIL THICKEND n REMOVE FROM HEAT
  • 5. STIR IN ONION DIP (PREPARED...MINE WASNT TOUCHD FROM NEW YEARS EVE...I HAD TOO MUCH FOOD ;) THEN STIR IN PIECES OF CHICKEN. S n P TO TASTE
  • 6. NOW TO START THE LAYERN...FIRST PUT IN HALF OF THE COOKED NOODLES NEXT HALF OF THE BROCCOLI THEN SPOON ON HALF OF CHICKEN ONION DIP MIXTURE N SPRINKLE ON SOME PARMESEAN CHEESE. THEN REPEAT ONCE AGAIN.
  • 7. TOP WITH HAVARTI CHEESE (OR WATEVER CHEESE U HAVE). COVER WITH FOIL N COOK FOR 20 MINUTES.
  • 8. REMOVE FOIL N SCATTER FRENCH FRIED ONIONS OVER TOP N BAKE FOR ADDITIONAL 15-20 MINUTES OR UNTIL BROWND....ENJOY :)

3 cups chicken breasts cubed cooked
2 cups chicken broth or bouillon
2 cups white rice cooked
2 cups bread crumbs soft
1/4 pound mushrooms quartered (about 1 1/2 cups)
1 cup celery sliced
4 eggs lightly beaten
1/2 cup green onion sliced
1/4 cup pimiento diced
2 tablespoons parsley minced
1/2 teaspoon salt
1/4 teaspoon paprika
black pepper
1/2 cup almonds slivered
1/4 cup butter or margarine
2 cups croutons
Light Cream Sauce (see below)

Steps:

  • Preheat oven to 350°. Generously grease a 3-quart oblong baking dish.In a large bowl, mix chicken, broth or bouillon, rice, bread crumbs, mushrooms, celery, eggs, green onions, pimiento, parsley, salt, paprika and pepper. Pour into baking dish.In a large skillet over medium-high heat, saute almonds in butter or margarine until lightly browned. Add croutons and stir until well coated. Sprinkle over top of chicken mixture.Bake for 30 to 40 minutes or until hot.Serve sauce separately.
