1 pound mixed small Yukon Gold and red new potatoes, scrubbed
Kosher salt and freshly ground black pepper
3 tablespoons good olive oil
1/2 cup freshly grated Parmesan cheese
2 tablespoons minced fresh chives
Fleur de sel or sea salt

Steps:

  • Preheat the oven to 400 degrees.
  • Place the potatoes and 1 tablespoon salt in a large saucepan and add enough water to cover the potatoes. Bring to a boil, reduce the heat, and simmer for 17 to 20 minutes, until the potatoes are tender when pierced with a skewer. Drain the potatoes and place on a sheet pan. With a potato masher or metal measuring cup, press each potato until it's about 1/2 inch thick (they will be messy). Toss the potatoes with the olive oil, 1 teaspoon salt, and 3/4 teaspoon pepper.
  • Roast the potatoes for 25 to 30 minutes, turning once, until the skins have become nicely browned. Sprinkle the potatoes with the Parmesan cheese and roast for another 2 to 3 minutes, just until the cheese melts. Sprinkle the potatoes with the chives and fleur de sel and serve hot.

4 Medium Sweet Potatoes
1 splash Olive Oil Spray
3 tablespoons Melted Butter
4 cloves Garlic, crushed
1 tablespoon Parsley, chopped
1 Kosher Salt & Black Pepper to taste
2 tablespoons Parmesan Cheese

Steps:

  • Pre-heat your oven to broil (or grill) settings to high heat. Trim off the ends of the sweet potatoes. Cut each sweet potato into quarters (or 1 1/2 - inch pieces).
  • Boil Method: Place sweet potatoes in a large pot of salted water. Bring to the boil; cook, covered for 20 -25 minutes or until just fork-tender. Drain well.
  • Roast Method: Bake sweet potato pieces for 25-30 minutes, or until they are fork tender. Allow to cool for about 5 minted, or until you can handle them without burning your hands
  • Lightly grease a large baking sheet or tray with cooking oil spray. Arrange sweet potatoes onto the sheet and use a fork to LIGHTLY flatten each piece (they will be soft, so try not to press too hard or they will end up breaking and mashed).
  • Mix together the butter, garlic and parsley. Pour the mixture over each sweet potato. Sprinkle with salt and pepper and lightly spray with olive oil spray.
  • Broil (or grill) until they are golden and crispy (about 15 minutes). Remove from oven, sprinkle over the parmesan cheese and return to the oven until the cheese is melted.
  • Season with a little extra salt and parsley, and serve immediately.

4 ounces unsalted butter
3 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 375 degrees.
  • To a mixing bowl, add red potatoes, olive oil, salt and pepper. Toss to coat potatoes.
  • Place on a baking sheet.
  • Cook potatoes until largest potatoes are soft, about 25-30 minutes.
  • While potatoes are cooking use a mixer to whip the butter, shredded parmesan, chopped garlic, chopped basil and salt and pepper.
  • Add the roasted potatoes to bowl and smash potatoes to a coarse mash.

3 pounds red potatoes, unpeeled
1 tablespoon kosher salt plus 2 teaspoons
1 1/2 cups half-and-half
1/4 pound (1 stick) unsalted butter
1/2 cup sour cream
1/2 cup freshly grated Parmesan
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the potatoes and 1 tablespoon of salt in a 4-quart saucepan with cold water to cover. Bring to a boil, lower the heat, and simmer covered for 25 to 35 minutes, until the potatoes are completely tender. Drain.
  • In a small saucepan, heat the half-and-half and butter. Transfer the potatoes to an electric mixer fitted with the paddle attachment and mix them for a few seconds on low speed to break them up. Slowly add the hot cream and butter to the potatoes, mixing on the lowest speed (the last quarter of cream and butter should be folded in by hand). Fold in the sour cream, Parmesan, the remaining salt, and pepper; season, to taste, and serve immediately. If the potatoes are too thick, add more hot cream and butter.
  • Keep the smashed potatoes hot in a heat-proof bowl set over simmering water.

1/2-1 cup fresh parsley, chopped
1/4-1/2 cup butter
1/2 cup parmesan cheese

  • Wash potatoes and cut in chunks. Load into a large pot, add the garlic, and just barely cover with water.
  • Bring to a boil and simmer 10-15 minutes or until tender. Drain.
  • Put half the butter, half the parsley, and half the Parmesan onto the potatoes along with salt and pepper as desired. Smash and stir.
  • Add the rest of the butter, parsley, and Parmesan. Smash and stir again until the potatoes are well broken up and the cheese is well mixed inches.

2 pounds new potatoes (or small red or golden potatoes)
2 tablespoons butter, melted
1 teaspoon garlic powder
1 teaspoon dill weed
1/4 cup Parmesan cheese, grated
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
olive oil (spray or just a drizzle)
fresh parsley, optional garnish

Steps:

  • Preheat oven to 450° F. Line a sheet pan with parchment and set aside.
  • Place potatoes in a large pot of salted water. Boil potatoes just until fork-tender and the skin is just beginning to split, about 10 minutes. Drain the potatoes and let them dry in a colander for 5 minutes.
  • In a small bowl combine melted butter, garlic powder, and dill weed.
  • Spread the potatoes evenly on the prepared sheet pan, use a potato masher or heavy-bottom glass to gently smash each potato to about 1/2-inch thickness.
  • Drizzle each potato with butter mixture. Sprinkle with salt and pepper and spray with a little spray or drizzle of olive oil. Place the pan of potatoes in the preheated oven for about 10-15 minutes.
