This is very quick, very healthy, and very easy. I served this with a quick and easy saute (see: "Quick Sauteed Curry Style Vegetables" in my recipes).

6 -8 ounces salmon fillets
2 tablespoons mediterranean olive oil
1/2 lemon
1/2 teaspoon fresh thyme leave
1/4 teaspoon garlic powder
1/4 cup freshly grated parmesan cheese
salt
black pepper

Steps:

  • Cooks tip: don't worry about the skin before cooking. It helps to keep the fish moist and flavorful, and comes away easily when the fish is cooked.
  • Preheat oven to 425 F./broil.
  • In a small rectangular baking dish, pour oil and the juice from the lemon.
  • Coat both sides of the fish in the oil/juice; season fish with salt, pepper, thyme leaves, and garlic powder; place Parmesan on a plate and press fish side down into the Parmesan (not the skin side) and place fish fish side up (skin side down) in the baking dish. Sprinkle any escaped cheese onto top of the fish.
  • Broil about 4-6 inches from element (top rack) for 10-12 minutes, or until fish flakes easily.

Flaky, perfectly baked lemon parmesan salmon & asparagus in foil is an easy and healthy 30 minute meal with fantastic flavor.

Number Of Ingredients 9

1 large salmon fillet (or 4-6 single portion fillets)
1 pound asparagus spears, ends trimmed
salt and pepper to taste
1/2 cup butter
juice of 1 medium lemon, plus additional lemon slices for garnish (optional)
3 teaspoons minced garlic
1 1/2 teaspoons Italian seasoning
1/2 cup grated parmesan cheese
optional: fresh herbs for topping

Steps:

  • Preheat oven to 400 degrees. Line a large baking sheet with foil and lightly grease with cooking spray.
  • Arrange salmon in the center of the pan and arrange asparagus around the sides of the pan. Arrange lemon slices under the edges of the salmon. Season salmon and asparagus with salt and pepper.
  • In a small sauce pan, melt butter over medium high heat. Once melted stir in garlic and Italian seasoning. Pour mixture over salmon and asparagus. Sprinkle parmesan over salmon and asparagus.
  • Bake for 10 minutes, then change oven to broil and cook another 5-7 minutes. Top with fresh herbs if desired and serve.

1 salmon fillet, about 2 pounds, left whole, skin on
3 garlic cloves, finely minced
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1/2 cup parmesan cheese, chopped (not powdered)
salt and pepper, to taste

Steps:

  • Preheat oven to 425º F. Line rimmed baking sheet with parchment paper which serves to keep the fish moist and make for easy cleanup.
  • Wash the salmon filet and pat dry with paper towels. Sprinkle both sides of the fish with salt and pepper. Place salmon, skin side down, onto lined baking sheet. Cover salmon with another piece of parchment paper.
  • Bake salmon for 10 minutes. While it bakes, stir all remaining ingredients together in a small bowl.
  • Remove salmon from oven and discard top piece of parchment paper. Top the salmon with herb and cheese mixture. Return to oven uncovered and bake until the internal temp registers 135º F. The Parmesan cheese should be melted and golden brown.
  • Remove the fish and let it rest for 5 minutes before serving.

1/2 cup mayonnaise
2 tablespoons grated parmesan cheese
1/8 teaspoon ground red pepper
4 salmon fillets
1 lemon
10 crushed butter flavored crackers (I use Ritz)

Steps:

  • Preheat oven to 400 degrees.
  • Combine mayo, cheese, and red pepper; set aside. note: I often add a bit more red pepper after a small taste test.
  • Lay salmon fillets on a foil-lined baking pan. Squeeze fresh lemon juice over each fillet.
  • Spread each fillet evenly with mayo mixture. Cover mayo with cracker crumbs.
  • Bake 12 to 15 minutes or until salmon flakes easily with a fork.

This recipe is very easy to make, low calorie and bursting with flavor. I found it in one of my favorite cookbooks, Easy Dinners: Healthy Recipes. I used Miracle Whip instead of the light mayo to shave off a few extra calores.

4 skinless salmon fillets, 3/4 to 1 inch thick
nonstick cooking spray
1/4 cup light mayonnaise
2 tablespoons grated parmesan cheese
1 tablespoon sliced green onion
1 teaspoon Worcestershire sauce

Steps:

  • Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Coat a 2-quart square or rectangular baking dish with nonstick cooking spray. Set aside.
  • In a small bowl stir together mayonnaise dressing, Parmesan cheese, the green onions, and the Worcestershire sauce. Spread mayonnaise mixture over fish fillets evenly, about 1/4 inch thick.
  • Bake, uncovered, in a 450 degree oven just until fish flakes easily with a fork (allow 4 to 6 minutes per 1/2inch thickness of fish).
