1/2 cup chunky peanut butter
1/3 cup water
2 tablespoons unseasoned rice vinegar
2 tablespoons fish sauce (such as nam pla or nuoc nam)*
2 teaspoons hot chili paste (such as sambal oelek)*
24 6-inch-diameter rice paper rounds**
24 large fresh basil leaves
48 large fresh mint leaves
1 1/2 large firm but ripe papayas, halved lengthwise then crosswise, seeded, peeled, cut crosswise into 1/2-inch-thick strips
1 unpeeled English hothouse cucumber, cut into 1/4-inch-thick 2 1/2-inch-long strips
48 small fresh cilantro sprigs

Steps:

  • Whisk first 5 ingredients in bowl. (Peanut sauce can be made 3 days ahead. Cover and chill. Rewhisk before serving.)
  • Fill large bowl with warm water. Working in batches, soak 3 rice paper rounds in water until softened, about 2 minutes. Remove rounds from water and arrange in single layer on work surface. Place 1 basil leaf in center of each round. Place 2 mint leaves atop each basil leaf. Place 2 papaya strips, then 2 cucumber strips atop mint. Arrange 2 cilantro sprigs atop cucumber. Fold 1 edge of each round over filling. Fold in ends. Roll up rice paper rounds tightly, enclosing filling. Transfer to platter. Repeat with remaining rice paper rounds. Cover with moist paper towel, then plastic wrap; chill. (Can be made 8 hours ahead. Keep chilled.) Serve rolls with peanut sauce.

2 tablespoons minced fresh ginger
1/4 cup hot water
1/2 cup peanut butter
2 tablespoons soy sauce
4 tablespoons rice vinegar
2 tablespoons sweet white miso
1/4 teaspoon red pepper flakes
3 ounces bean thread noodles, cooked and drained
1 cup finely shredded cabbage
1/3 cup grated carrot
1/4 cup sliced green onion
1/4 cup sesame seeds, toasted
16 cilantro leaves, whole
16 mint leaves, whole
1 pound shrimp, cooked, peeled and split in half lengthwise
16 (6-inch) round sheets rice paper

Steps:

  • To make the dipping sauce: combine the first 6ingredients in a small bowl and season, to taste, with red pepper flakes. Set aside.
  • To make the rolls: in a large bowl combine the bean thread noodles, cabbage, carrots, green onion, and sesame seeds. Place the cilantro, mint and shrimp in separate work bowls nearby.
  • To soften the rice paper, fill a pie plate or shallow baking dish with tepid water. Place 2 or 3 rice paper sheets in the water and allow to soak about 45 seconds to 1 minute. Remove 1 at a time and carefully stack between sheets of paper towels. Continue soaking and draining until you have softened 16 rice sheets.
  • Turn over the stack and begin working from the bottom of the stack first. Place a softened rice paper sheet on a clean work surface. On the bottom third of the sheet, pile 1/4 cup of the noodle mixture. Just above the noodles, place a shrimp half, skin side down, and top with a cilantro leaf and mint leaf. Fold the bottom of the paper up and over the noodle mixture, then fold each side toward the center, rolling gently and as tightly as possible from the bottom until completely rolled. Place rolls seam side down on a plate and continue until all ingredients have been used.
  • Keep assembled rolls under wet paper towels covered with plastic wrap. Store at room temperature up to 3 hours, do not refrigerate.

8 rice paper wrappers
1 cup white mushroom, sliced
2 medium carrots, sliced
½ english cucumber, sliced
1 cup red cabbage, sliced
½ yellow bell pepper, sliced
¼ cup natural peanut butter
½ teaspoon ginger, minced, optional
2 tablespoons sesame oil
2 tablespoons rice wine vinegar
1 tablespoon soy sauce
2 teaspoons maple syrup
1 pinch red pepper flakes

Steps:

  • Fill a medium shallow bowl with warm water and set near your work station.
  • Dip a rice paper wrapper in the warm water for a few seconds, submerging completely. Remove and lay flat on a smooth, clean surface, such as a plate.
  • Add your desired combination of sliced mushrooms, sliced carrots, sliced cucumber, sliced cabbage, and sliced bell pepper to the middle of the wrapper. Be careful not to overfill, or rolling it will become difficult.
  • Working quickly, before the rice paper dries out, fold both sides of the rice paper over the vegetables to secure.
  • Lift the bottom edge of the rice paper and carefully fold it over the top of the vegetables, tucking it under on the other side, then gently roll until the vegetables are completely covered and the top edge of the wrapper adheres to the spring roll.
  • Set the spring roll aside and cover with a damp paper towel to keep fresh while you repeat with the remaining ingredients. Once you've finished making the spring rolls, chill in the fridge while you make the sauce.
  • Make the Peanut Sauce: Add the peanut butter, ginger (if using), sesame oil, rice wine vinegar, soy sauce, and maple syrup to a small bowl. Whisk until combined.
  • Transfer the sauce to a small serving bowl and sprinkle with red pepper flakes.
  • Serve the chilled spring rolls with the sauce.

GREEN PAPAYA SALAD:
1 small green papaya
1/2 cup peanuts, roughly chopped, can use salted or unsalted
1 to 2 cups bean sprouts
1 to 2 tomatoes, cut into long thin strips
1 red chili, minced, plus more to taste
3 green onions cut into ribbons
1/2 cup fresh Vietnamese basil, torn
1/2 cup fresh cilantro, chopped
1/2 teaspoon fish sauce or soy sauce
2 tablespoon oil
2 tablespoon fish sauce
3 tablespoon lime juice
1/2 to 1 tablespoons honey or agave
SPRING ROLLS:
12 square rice paper sheets
3 ounces rice vermicelli
1/2 head of green, red, or romaine lettuce, about 12 leaves
1 large carrot julienne or shredded
1/4 cup each Vietnamese basil, mint or coriander
2 to 3 cups Green Papaya Salad
SPICY PEANUT SAUCE:
1/4 cup peanut butter, smooth or crunchy
3/4 cup of water
1 teaspoon Sriracha sauce
1 tablespoon Hoisin sauce
1 tablespoon peanuts, chopped
VIETNAMESE FISH SAUCE:
1/3 cup fish sauce
3 tablespoons water
1/2 cup lime juice
6 tablespoons sugar
1 large garlic clove, crushed, peeled, and minced
1 medium shallot, crushed peeled, and minced
1 Thai chili pepper, seeded, and minced

Steps:

  • PAPAYA SALAD: Mix all the liquid ingredients together in a bowl, make sure the honey/agave is fully dissolved. Set aside. Peel the outer skin of the papaya, halve it lengthwise and remove the seeds. Julienne the papaya, if you do not own a mandolin or the famous titan, you can use a potato peeler to create thin ribbons which you can then cut into strips. Place the papaya in a large bowl and add the sliced tomato, spring onion, chili peppers, and basil. Toss with the dressing until thoroughly incorporated and then add the chopped peanuts. Taste the salad and add any sweet, salt, or spice you think is missing. Place in refrigerator and allow to marinate for at least 30 minutes. SPRING ROLLS: Soak the vermicelli in hot water for 10 minutes until softened. Take a large pan big enough to fit the rice wrapper and fill with warm water. You do not want your water to be extremely hot or the paper will become too soft and tear. Soak the wrapper for about 30 seconds and lay out on a clean, flat surface. Place your ingredients towards the bottom half of the wrapper-do not add too much or the roll will be too big. Begin with a small handful of lettuce then add the same amount of vermicelli on top. Place the carrots then the green papaya salad and top with herb mixture. Fold the bottom up, then the 2 side corners and continue rolling up, making sure the wrapper is kept firmly around the ingredients. With practice, you will be able to predict more precisely as to how much ingredients you should put in each roll without making it too big or small. PEANUT SAUCE: Mix all ingredients together in a bowl until incorporated. If the sauce is too thick, add more water, if it is too thin, add more peanut butter. Garnish with chopped peanuts. VIETNAMESE FISH SAUCE: Whisk together the fish sauce, water, lime juice and sugar in a bowl until sugar is dissolved. Add the remaining ingredients and allow to marinate for 30 minutes before serving.
