The perfect traditional Greek rice pilaf (pilafi) recipe! Fluffy, fragrant rice and crispy, tender, fall of the bone chicken legs with a delicious lemon kick!

8 chicken legs, bone-in and skin on
1 1/2 cup rice (long grain rice or basmati)
2 tbsps butter
1 small red onion, roughly chopped
3 cups chicken stock
juice of 1 lemon (or more if you prefer)
6-7 peppercorns
salt and freshly ground pepper
2-3 tbsps olive oil
150g/5 oz. feta cheese for garnish (optional)

Steps:

  • To prepare this Greek rice pilaf recipe with chicken legs, start by washing thoroughly the chicken legs and pat them dry with some kitchen paper. Drizzle the chicken legs with olive oil, season well with salt and pepper and rub using your hands.
  • Heat a large pan over medium high heat and place the chicken legs inside. Let them colour and cook for about 6 minutes on each side, until the skin is nicely coloured and crispy. Remove the chicken legs from the pan and set side.
  • Now it's time to prepare the Greek rice pilaf. In the same pan add 1-2 tbsps olive oil and the chopped onions and sauté until soft. Add the butter and rice and sauté the rice until translucent. Pour in the chicken stock and lemon juice and deglaze. Add the chicken legs (skin side up) and season well with salt and pepper.
  • Place the lid on, turn the heat down and simmer the Greek rice pilaf for about 15 minutes, until the chicken and rice are cooked and all the liquid has been absorbed.
  • Finish off the Greek rice pilaf with a last minute squeeze of lemon juice, crumbled feta cheese and freshly ground pepper. Enjoy!

2 cups long grain rice (uncooked)
Early Harvest Greek extra virgin olive oil
1 medium yellow onion, chopped (just over 1 cup chopped onions)
1 garlic clove, minced
1/2 cup orzo pasta
2 lemons, juice of (PLUS zest of 1 lemon)
2 cups low sodium broth (chicken or vegetable broth will work)
Pinch salt
Large handful chopped fresh parsley
1 tsp dill weed (dry dill)

Steps:

  • Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water (enough to cover the rice by 1 inch). You should be able to easily break a grain of rice by simply placing it between your thumb and index finger. Drain well.
  • Heat about 3 tbsp extra virgin olive oil in a large sauce pan with a lid (like this one) until oil is shimmering but not smoking. Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.
  • Now add lemon juice and broth. Bring liquid to a rolling boil (it should reduce a little), then turn heat to low. Cover and let cook for about 20 minutes or until rice is done (liquid should be fully absorbed and rice should be tender but not sticky.)
  • Remove rice from heat. For best results, leave it covered and do not disturb rice for about 10 minutes or so.
  • Uncover and stir in parsley, dill weed and lemon zest. If you like, add a few slices of lemon on top for garnish. Enjoy!

2 tablespoons olive oil
1 cup white rice, preferably Arborio or 1 cup other short-grain rice
1/2 medium onion, finely chopped
1 1/4 cups water, and
1 tablespoon tomato paste, heaping
salt & freshly ground black pepper
1 pinch ground nutmeg, preferably freshly grated (optional)
1 tablespoon finely chopped fresh parsley leaves (optional)

Steps:

  • Heat the oil in a medium size skillet over medium high heat. Add the rice and onion and sauté until both are translucent, about 5 minutes.
  • Stir in the water with 1 heaping tablespoon of tomato paste, bring to a boil, then reduce the heat to low and cover the pan. Simmer until the rice is just done, 20 minutes. Add salt and pepper to taste, and the nutmeg, if using. Sprinkle with the parsley, if desired. Fluff with a fork and serve.
  • NOTES: Not caring much for the flavor of plain water, a Greek cook who does not have stock on hand will usually flavor the water with tomato paste: about 1 tablespoon tomato paste to 1 cup water. This can be used for bulgur pilaf as well.
  • As with bulgur pilaf, the quantity can easily be doubled, tripled, or more: Use 1 1/4 times as much liquid as rice. Be sure to increase the amount of olive oil and onion as you increase the rice and liquid.

1 large onion, chopped (about 1 1/2 cups)
2 tablespoons olive oil
1 -2 garlic clove, minced
1 tablespoon dried mint
1/8 teaspoon ground black pepper
4 cups fresh spinach, chopped
3 tablespoons fresh lemon juice
4 cups cooked rice
1 cup green peas, fresh or frozen
2 tablespoons fresh dill, chopped
1 cup feta cheese, crumbled

Steps:

  • In a heavy skillet, saute the onions in oil on medium heat until they begin to soften.
  • Add the garlic, mint and pepper and saute for 2 more minutes.

1/4 lb butter
2 cups uncooked rice (Uncle Ben's long grain converted rice works well)
1/2 cup fresh lemon juice
5 cups hot chicken broth
salt & freshly ground black pepper

Steps:

  • Heat butter in a heavy skillet. When it's hot, add the rice and, stirring constantly, saute on medium heat until transparent but not brown.
  • Add the lemon juice, chicken broth, and salt.
  • Cover and simmer for 20 minutes.
  • Remove the pan from the heat and let pilaf stand uncovered for 5 minutes before serving.

3/4 cup butter
6 cups chicken broth
3 large lemons, juice of (add 1 more lemon if you like it extra lemony)

Steps:

  • Before you start have chicken broth cans opened and ready to pour.
  • Melt butter in large sauce pan.
  • Add rice and stir constantly until golden browned (Use Med-Hi Heat).
  • Quickly add chicken broth and lemon juice and cook uncovered until liquid is absorbed (about 25 minutes.).
