1/3 cup all-purpose flour
1/2 tsp paprika
1/4 tsp garlic powder
pinch of salt and pepper
3-4 large tilapia fillets
1/2 cup unsalted butter, divided
1/4 cup fresh lemon juice (~1 large lemon)
optional: parsley, roasted potatoes to serve

Steps:

  • In a shallow dish, combine the flour, paprika, garlic powder, salt and pepper. One side at a time, coat the tilapia fillets in the flour. Set aside.
  • In a large cast iron skillet over medium-high heat, melt 1/4 cup of the butter. Once the butter is melted and beginning to sizzle, add the tilapia fillets side by side in the skillet. Cook the fish for about 5-6 minutes before flipping and cooking for another 5-6 minutes on the other side, or until it flakes easily with a fork*.
  • When the fish is cooked, remove it to a plate and keep warm in the oven. Add the remaining butter to the skillet, and once the butter starts sizzling use a spatula to scrape up any brown bits, and squeeze the lemon juice into the pan. Let the sauce simmer for a couple of minutes, then remove from heat. Plate the fish (and any potatoes or rice you may have cooked) and drizzle the lemon butter sauce all over the dish. Sprinkle with parsley and serve immediately!

2 tilapia fillets
1 tablespoon olive oil
2 tablespoons butter
Flour (for dredging (1/4 cup or more if needed))
5 ounces chicken broth or water
Juice of 1/2 lemon
1 tablespoon fresh dill (chopped)
1 tablespoon fresh parsley (chopped)
1 tablespoon fresh oregano (chopped)
Salt & pepper (to taste)

Steps:

  • Chop herbs.
  • Add salt and pepper to both sides of each tilapia fillet.
  • Add flour to a plate.
  • Heat olive oil and butter in a skillet on medium-high heat.
  • When the skillet is hot, dredge each tilapia fillet in flour and add to the skillet. Cook for three minutes on each side.
  • Add chicken broth, lemon juice, and herbs to the skillet. Cook for five minutes until the sauce reduces and thickens.
  • Serve immediately.

2 talapia fillets
1 tbsp olive oil
salt & pepper
couscous - cooked
Sauce:
1 tbsp butter
1 tbsp fresh squeezed lemon juice
1 garlic clove, minced
1 tsp shallots, minced
1 tbsp chives, finely chopped
1 tbsp dill, finely chopped
salt & pepper

Steps:

  • Heat a medium sized saute pan on medium heat until hot. A hot pan will give you the golden color you want on the fish. While pan is heating up, salt and pepper both sides of the fish. When pan is ready, pour in the olive oil just to coat the pan. Lay the fillets in the pan and saute until you see golden-crisp edges (about 3-4 minutes) and flip the fish to cook the other side (3-4 minutes). When done, remove the fish from the pan and place on a paper towel lined plate. Turn the heat down to low and let the pan cool off a little before starting the sauce. With the pan drippings still in the pan and heat on low, melt the butter and add shallots and garlic. Stir. Sautee for 30 seconds - 1 minute. Take off the heat. Stir in the lemon juice and herbs, adding salt and pepper to taste. Makes just enough sauce to drizzle over two servings. Place fish over couscous and drizzle with the sauce. Serves 2. 2 tablespoons light olive oil
2 tilapia fillets
1 tablespoon lemon juice
⅛ teaspoon dried oregano
1 pinch dried basil

¼ cup freshly grated Parmesan cheese
1 teaspoon lemon juice

Steps:

  • Bring a saucepan of lightly salted water to a boil over medium heat, stir in the macaroni, and return to a boil. Cook the macaroni uncovered, stirring occasionally, until it is cooked through but still firm to the bite, about 8 minutes. Drain well.

2 tomatoes, seeded and chopped (about 2 cups)
1 small onion, chopped (about 1/2 cup)
2 tablespoons chopped fresh cilantro leaves
1 lime, juiced
1 tablespoon olive oil
Minced fresh chile of choice, see Cook's Note*
Canola oil, for frying
6 fillets of tilapia (about 6 ounces each)
Sea salt and freshly ground black pepper
Flour, for dusting

Steps:

  • To make the salsa: Stir the tomatoes, onion, and cilantro together in a small bowl. Stir in the lime juice, olive oil and chile. Season with salt and pepper, to taste. Place in the refrigerator to chill while preparing the fish.
  • Preheat the oven to 200 degrees F.
  • Pour enough canola oil into a large frying pan to generously coat the bottom. Heat over medium-high heat until hot but not smoking.
  • While the oil is heating, season as many of the fillets as will fit in the pan comfortably with salt and pepper. Dredge the seasoned fillets in flour to coat both sides and shake off the excess flour. Carefully slip the coated snapper into the hot oil and give the pan a little shake to prevent sticking. Cook until lightly golden on the underside side, about 3 minutes. Flip the fillets over and cook until the thickest part of the fillets are opaque at the center, 2 to 3 minutes. Transfer to a baking sheet and keep warm in the oven. Repeat with the remaining fillets, adding more oil to the pan, if necessary.

1/2 cup dry white wine or chicken broth
1/4 cup fresh lemon juice
3 tablespoons finely chopped shallots
3/4 cup whipping (heavy) cream
1 teaspoon grated lemon peel
1/4 cup cold firm butter, cut into 4 pieces
1/4 teaspoon salt
1/8 teaspoon white pepper
4 skinless tilapia fillets or other medium-firm fish fillets (6 oz each)
1/4 teaspoon salt
1 tablespoon vegetable oil
1/4 cup chopped toasted hazelnuts (filberts) or almonds

Steps:

  • In 2-quart saucepan, heat wine, lemon juice and shallots to boiling over medium-high heat. Boil uncovered 4 minutes, stirring occasionally, until liquid is reduced by half.
  • Add whipping cream to pan and heat to boiling, stirring occasionally. Boil uncovered 6 minutes, stirring occasionally, until sauce is thickened and reduced to about 1/2 cup. Remove from heat and add lemon peel. Beat in butter, 1 piece at a time, with wire whisk, adding the next piece only after the first has been completely beaten in and melted. When all of the butter has been beaten in, add 1/4 teaspoon salt and the white pepper. Cover to keep warm.
  • Sprinkle fish with 1/4 teaspoon salt; set aside.
  • In 12-inch skillet (preferably nonstick), heat oil over medium-high heat until shimmering and hot. Add fish and cook 3 minutes. Flip and cook 3 minutes longer or until edges begin to brown and fish flakes easily with fork.
