PALMETTO CHICKEN

The ingredients are reminiscent of gumbo, but this is a knife-and-fork meal. Serve with rice or a good, crusty bread. Adapted from Paul Prudhomme's Louisiana Tastes. If you can't get andouille, any good-quality smoked sausage can be substituted.

1 3/4 teaspoons paprika
1 3/4 teaspoons salt
1 1/4 teaspoons dry mustard
3/4 teaspoon cayenne
3/4 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1 (3 lb) chicken, cut into 8 pieces
2 tablespoons olive oil
1 cup chopped onion
3/4 cup chopped celery
1/2 cup chopped bell pepper
1/2 lb andouille sausage, quartered lengthwise and cut into 1/2 inch pieces
6 ounces okra, trimmed and cut into 1/2 inch rounds
2 tablespoons all-purpose flour
1 cup chicken stock

Steps:

  • Combine paprika, salt, mustard, cayenne, garlic powder, cumin, black pepper and white pepper.
  • Sprinkle 4 teaspoons of seasoning mixture evenly over chicken, and rub in well.
  • In a heavy 4-quart pot (preferably nonstick), heat oil over high heat just until it begins to smoke, 3-4 minutes.
  • Add chicken, skin side down, and cook until browned, about 4 minutes.
  • Turn chicken over and brown on other side, about 4 minutes.
  • Remove chicken from pot and set aside.
  • Add onions, celery, bell peppers, and 5 teaspoons of seasoning mixture.
  • Stir well and scrape bottom of pan to loosen all the browned bits. Add a little bit of stock if necessary.
  • Add andouille and okra and cook, stirring frequently, for 4 minutes.
  • Sprinkle flour evenly over mixture in pot, and stir until no white is visible, about 1 minute.
  • Add stock and scrape pan well.
  • Return chicken and juices to pot, and bring just to a boil.
  • Reduce heat to medium, cover, and simmer until chicken is cooked, about 15-20 minutes.

Nonstick cooking spray
187 grams (6 2/3 ounces) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
94 grams (3 1/4 ounces) coarse blue cornmeal
283 grams (10 ounces) zucchini
100 grams (3 1/2 ounces) unsalted butter
100 grams (3 1/2 ounces) sugar
2 eggs
121 grams (4 1/4 ounces) buttermilk

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick cooking spray and line with parchment paper.
  • Sift the flour, baking powder, baking soda and salt into a medium bowl. Add the cornmeal to the dry mix, and whisk together.
  • In a separate bowl, use a cheese grater to shred the zucchini.
  • In a large bowl, microwave the butter until melted. Whisk in the sugar, eggs and buttermilk (in that order), until evenly mixed. Use a rubber spatula to fold in the zucchini.
  • Sift the dry ingredients into the wet ingredients. Some larger pieces of cornmeal won't fit through the sifter; add those larger pieces after sifting, and fold into the batter.
  • Pour the batter in the prepared pan and bake until a bamboo skewer inserted in the center comes out clean, about 30 minutes.
  • Cool the bread for about 15 minutes, then turn out of the loaf pan and set on a wire cooling rack to avoid a soggy bottom. Cool the bread completely, then cut and serve.

2 tbs olive oil
1 cp chopped onions
3/4 cup cholled celery
1/4 cup seeded chopped red bell pepper
1/4 cup seeded and chopped yellow bell pepper
1/2 lb andouille quartered and cut in 1/2 inch pieces
2 tbs flour
1 cup chicken stock
seasoning mix:
1.75 tsp paprika
1.75 tsp salt
1.25 tsp dry mustard
1.25 tsp onion powder
.75 tsp cayenne
.75 tsp garlic powder
0.5 tsp cumin
0.5 tsp black pepper
0.5 tsp white pepper

Steps:

  • combine seasonings sprinkle chicken with 1tbs plus 1 tsp seasoning mix and rub it in well heat olive oli over high heat, add chicken large pieces first, skin down, cook until skin is brown, about 4 min turn over and cook until brown remove from pot and set aside ad onions, celery, bell pepper and 1 bts plus 2 tsp seasoning. mix wel and scrape the bottom of the pan if necessary, deglaze pot with a little stock add andouille cook for 4 min sprinlke flour evenly over top of mixture and stir until no white is visible stirin the stock and scrape the bottom of the pot again to loosen brown bits. return chicke na dnjuices to the pot, when it begins to boil, reduce heat to medium, cover and simmer until chx is fully cooked 15-20 min serve hot w rice

1 1/2 ounces light rum
1 1/2 ounces sweet vermouth
2 dashes orange bitters
3 or 4 ice cubes
Twist lemon peel

Steps:

  • Combine all ingredients except the lemon peel in a mixing glass and stir well. Strain into a cocktail glass, drop in the peel.
